The unmistakable allure of a deep-fried Jalebi, with its perfectly crispy exterior and tender interior, proved hard to replicate in the oven. For that authentic taste and texture, frying truly reigns supreme, making it a treat worth indulging in, especially for festive occasions. We believe some treats are simply meant to be enjoyed in their traditional, delicious form.

Apple Jalebi with Rabri/Rabdi – Apple Fritters in Saffron Syrup with Sweet Cream

Ingredients:

For the Dairy-Free Rabri (Gluten-free, can be made corn-free):

  • 1/4 cup ground raw cashews
  • 1/2 cup almond milk (or your preferred plant-based milk)
  • 3 Tablespoons raw sugar (or to taste, adjust for desired sweetness)
  • 1/4 teaspoon saffron strands
  • Pinch of cardamom powder
  • Pinch of salt
  • 1-2 teaspoons cornstarch (for thickening, adjust as needed)

For the Apple Jalebi:

  • 1 large apple – Cored and sliced into roughly 9 even slices (we recommend firm apples like Honeycrisp or Fuji)
  • Organic canola oil for deep frying (ensure sufficient depth for frying)

For the Batter:

  • 1/2 cup whole wheat flour
  • 1/3 cup warm water (may need slight adjustment)
  • 1 Tablespoon almond milk (or coconut milk or additional water)
  • 1/2 teaspoon active dry yeast
  • 1 Tablespoon ground raw sugar

For the Sugar Syrup:

  • 1/2 cup raw sugar
  • 3/4 cup water
  • A generous pinch of cardamom powder (you can also add a few saffron strands here)

Method:

Preparing the Dairy-Free Rabri:

  1. In a blender, combine all Rabri ingredients except the cornstarch. Blend until completely smooth and creamy.
  2. Pour the blended mixture into a small saucepan. Taste and adjust the sweetness and flavorings as desired.
  3. Heat the mixture over low heat for 2-3 minutes, stirring occasionally, until it is warm.
  4. In a separate small bowl, whisk 2 teaspoons of cornstarch (or more, if you prefer a thicker Rabri) with 1 tablespoon of almond milk until a smooth slurry forms.
  5. Add the cornstarch slurry to the warm Rabri mixture in the saucepan. Whisk continuously and continue to heat on low until the Rabri just begins to boil and visibly thickens.
  6. Remove from heat, allow it to cool to room temperature, then transfer to the refrigerator to chill for at least an hour before serving. For best flavor and consistency, prepare the Rabri a day in advance.

Step 1: The Batter
  1. In a mixing bowl, combine all the ingredients for the batter: whole wheat flour, warm water, almond milk, yeast, and ground raw sugar.
  2. Mix until a smooth, thick batter is formed, similar to pancake batter but slightly thicker.
  3. Cover the bowl and let the batter sit in a warm place for at least 30 minutes to ferment. This fermentation adds a subtle tang and lightness to the Jalebis.
Step 2: The Sugar Syrup
  1. While the batter ferments, prepare the sugar syrup. In a separate saucepan, combine 1/2 cup raw sugar, 3/4 cup water, and a generous pinch of cardamom powder.
  2. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves completely.
  3. Reduce the flame to low and continue to simmer until the syrup reaches a “half thread” consistency (when you take a drop between your thumb and forefinger, it forms a half-thread before breaking). Keep the syrup warm on a very low flame or reheat as needed.
Step 3: Frying the Apple Fritters
  1. Heat at least 1 inch of organic canola oil in a shallow pan or kadai over medium heat until hot. To test the oil, drop a small bit of batter; it should sizzle and rise immediately.
  2. Dip each apple slice thoroughly into the prepared batter, ensuring it’s evenly coated on both sides. If the batter is too thick, add a few teaspoons of water to reach the desired consistency.
  3. Carefully place the coated apple slices into the hot oil, ensuring not to overcrowd the pan.
  4. Fry for 2-3 minutes on each side, or until they turn a beautiful golden brown and are crispy.
Step 4: Soaking and Serving
  1. Once golden brown, remove the apple fritters from the oil and drain any excess oil on a paper towel.
  2. Immediately transfer the warm fritters into the warm sugar syrup. Let them soak for about half a minute on one side, then gently flip them to soak the other side for another half minute. The quick soak ensures they absorb flavor without becoming soggy.
  3. Remove the Jalebis from the syrup and place them on a serving plate. If the syrup cools down during this process, briefly reheat it on low heat for about 30 seconds before continuing with the next batch.
