While I can’t claim to replicate her exact perfection, this vegan flan comes remarkably close, evoking that same sense of nostalgic delight.
In my quest, I stumbled upon various vegan adaptations, including a “Cafe con leche flan” in the “Viva Vegan” cookbook and other online versions that incorporated tofu. However, I was keen to create a soy-free option. After much experimentation, I landed on this recipe, which focuses on delivering that classic silky texture and rich caramel flavor without any soy.

The secret to a perfectly set, yet incredibly smooth and creamy vegan flan lies in the remarkable properties of agar powder. This gelatinous substance, derived from algae, is an excellent plant-based alternative to traditional gelatin, offering a firm but delicate set. Unlike gelatin, which requires careful temperature control, agar sets at room temperature and remains stable, making it a reliable choice for desserts like this flan.
Finding agar powder is easier than ever; it’s typically available in health food stores or the international aisles of larger supermarkets. For a more economical option, consider purchasing it online from retailers like iHerb, Swanson, or Amazon. A little goes a long way, and its versatility extends to various vegan jellies, puddings, and even cheeses.

Ingredients
Caramel:
- 5 Tbsps raw sugar, (brown sugar or sucanat also works)
- 1 Tbps water
Pudding:
- 2 Tbsps raw sugar or other sweetener to taste
- 1/2 teaspoon agar powder
- 1 Tbsp cornstarch
- Vanilla extract if using regular coconut milk (omit if using vanilla-flavored milk)
- 1.75 cups + 2 Tbsps So Delicious vanilla coconut milk (or any rich plant-based milk)
Instructions
Preparing the Caramel:

In a medium saucepan, combine the sugar and water for the caramel. Place over medium heat and stir gently until the sugar dissolves. Bring the mixture to a boil, then reduce the heat to low. Continue to stir occasionally, allowing the mixture to darken and thicken. For a classic flan, aim for a deep amber color; I personally enjoy my caramel dark, slightly burnt, and with a pleasant bitterness.

Once the caramel has reached your desired color and consistency, immediately pour it into two 3.5-inch ramekins. Carefully swirl the ramekins to coat the bottom and slightly up the sides with the hot caramel. Set aside and reserve the saucepan for the pudding.
Crafting the Pudding:
