Discover the Ultimate Vegan Carnitas: A Flavorful Mushroom Journey
The journey to creating these irresistible vegan mushroom carnitas began with a simple revelation: the magic of baking plant-based ingredients with a rich, savory sauce. Much like the technique used for our popular Pulled Jackfruit Sandwiches, this method yields a uniquely crisp, caramelized, and deeply flavorful result that’s incredibly easy to achieve. Forget the mess and lengthy active cooking times often associated with traditional methods. With this recipe, you simply mix your ingredients, spread them on a baking dish, and let your oven do most of the work.
Our vegan carnitas recipe relies on thinly sliced mushrooms and onions, infused with a powerful blend of spices, herbs, and a zesty marinade. The preparation couldn’t be simpler: combine everything in a bowl, allow it to marinate briefly to absorb all the wonderful flavors, then spread it out on a baking sheet and bake. The result? Caramelized, sweet, and spicy onions mingling with perfectly cooked, tender-crisp mushrooms. You can customize the baking time to achieve your preferred level of crispiness. Once done, pile your flavorful mushroom carnitas into warm tortillas or wraps, add your favorite fresh toppings like creamy mashed avocado or guacamole, a dollop of vegan sour cream, or a vibrant salsa, and you have a truly satisfying meal ready in minutes. For an even heartier dish, consider adding some smoky black beans or refried beans to your tacos. This versatile method also works beautifully with other plant-based alternatives like jackfruit, shredded oyster mushrooms, hearts of palm, or seitan, offering endless possibilities for delicious variations.

What Are Carnitas? (And How We Make Them Vegan)
Traditionally, carnitas are a beloved Mexican dish featuring shredded meats, typically pork, that are braised or simmered in fat and various marinades or spice blends until fork-tender. After this slow-cooking process, the meat is often pulled apart or shredded and then cooked over high heat until delightfully crispy, creating a rich contrast of textures and flavors. The name “carnitas” itself literally translates to “little meats,” referencing the small, crispy pieces that are a hallmark of the dish.
For a vegan rendition of carnitas, the goal is to replicate that satisfying texture and deep flavor profile without using any animal products. Instead of meat, we turn to plant-based ingredients that can absorb rich marinades and achieve a similar tender-crisp quality. Common vegan substitutes include hearty mushrooms, young jackfruit, shredded oyster mushrooms, or even seitan. What makes these vegan alternatives particularly appealing is that they often don’t require the extensive cooking times or the large amounts of fat found in traditional recipes. In this specific recipe, we use mushrooms as our star ingredient, combined with thinly sliced onions, and a vibrant marinade featuring a blend of classic carnitas spices, citrus juices (orange and lime), and a touch of soy sauce (or a soy-free alternative).
The magic happens in the oven: baking caramelizes the onions, bringing out their natural sweetness, while the mushrooms brown and become beautifully tender yet crisp around the edges. The marinade reduces and concentrates, infusing every bite with fabulous, complex flavors. While this recipe is designed to be oil-free for a healthier option, you can certainly spray the mixture generously with oil before baking if you desire a more decadent and even crispier result. This plant-based approach allows us to enjoy all the smoky, spicy, and zesty flavors of traditional carnitas in a light, fresh, and ethically conscious way.
The Irresistible Marinade: Smoky, Spicy, and Zesty!
The secret to truly outstanding vegan carnitas lies in a thoughtfully crafted marinade that penetrates every slice of mushroom and onion. Our marinade is a harmonious blend designed to deliver that quintessential carnitas flavor profile: smoky, spicy, and refreshingly zesty. It starts with a base of citrus, utilizing both orange juice and lime juice. The orange juice adds a subtle sweetness and bright acidity, mirroring the use of citrus in traditional carnitas, which helps tenderize and flavor the meat. Lime juice further enhances the zesty notes, cutting through the richness of the spices and adding a vibrant tang that awakens the palate.
To this citrus base, we add soy sauce (or tamari for a gluten-free option, or coconut aminos for a soy-free version), which contributes umami depth and a touch of saltiness, ensuring the mushrooms are seasoned from within. The heart of the marinade, however, lies in its carefully selected spice blend. Ground cumin brings earthy warmth, while ground coriander adds a bright, citrusy-floral note. Smoked paprika is crucial for imparting that distinct smoky flavor that is so characteristic of carnitas, while oregano contributes a classic herbaceous aroma. A touch of black pepper provides a gentle kick, and chipotle pepper is added for a deeper, smoky heat that truly elevates the dish. Finally, a chili powder blend rounds out the spice profile, adding complexity and warmth. This combination ensures that every bite of our mushroom carnitas is packed with layers of authentic Mexican-inspired flavor, making them utterly irresistible.
Simple & Quick: One-Bowl Mushroom Carnitas
One of the many reasons you’ll fall in love with these vegan mushroom carnitas is their incredible simplicity. This isn’t a recipe that demands multiple pots and pans or hours of meticulous attention. In fact, it’s largely a one-bowl wonder, making cleanup a breeze and active cooking time minimal. The beauty of baking these carnitas lies in its hands-off approach. Once your ingredients are mixed and spread, the oven does the hard work of caramelizing the onions and browning the mushrooms, infusing them with the rich, aromatic marinade.
The convenience factor makes this recipe an ideal choice for busy weeknights when you crave something flavorful and satisfying but don’t have hours to spare. From start to finish, including prep and bake time, you’re looking at approximately 45 minutes to get these delicious carnitas on your table. This speed doesn’t come at the expense of flavor; rather, the baking process concentrates the marinade, yielding intensely flavored mushrooms and onions with beautifully varied textures. This simple, efficient method means you can enjoy restaurant-quality vegan carnitas in the comfort of your own home, any day of the week, with minimal effort.

Vegan Carnitas. Mushrooms marinated in Spicy Smoky Zesty Marinade, Baked and served with toppings in tacos, wraps, burritos. Use Jackfruit for variation. Vegan Gluten-free Nut-free Oil-free Recipe. Soy-free option. Makes filling for 4-5 tacos, serves 2.
Ingredients
Main Components:
- 1 onion, thinly sliced (small to medium onion)
- 4 cloves garlic, finely chopped
- 1 jalapeno, thinly sliced (optional, for extra heat)
- 12 oz mushrooms, sliced (white, cremini, portobello, or a combination)
- 1/4 cup orange juice or plain cider (not vinegar), or half of both
- 2 tsp lime juice
- 1 tbsp soy sauce (or tamari for gluten-free, or coconut aminos for soy-free)
- 1/4-1/2 tsp salt (adjust to taste)
Carnitas Spices:
- 1 tsp ground cumin
- 2 tsp ground coriander
- 1.5 tsp smoked paprika (or use 1 tsp sweet paprika and 1/2 tsp smoked for less heat)
- 1.5 tsp oregano
- 1/4 tsp black pepper
- 1/2 tsp or more chipotle pepper (for smoky heat)
- 1 to 2 tsp chili powder blend (or use more of the above spices and herbs)
Optional Flavors:
- Add 1/2 tsp poultry seasoning
- Add 2 tbsp beer
Instructions
- Preheat your oven to 400°F (205°C). Line a baking dish with parchment paper for easy cleanup and to prevent sticking.
- In a large mixing bowl, combine the thinly sliced onion, finely chopped garlic, and sliced jalapeno (if using). Add the sliced mushrooms. Pour in the orange juice/cider, lime juice, and soy sauce (or alternative). Toss everything together thoroughly until well mixed. Allow the mixture to marinate for at least 10 minutes; for deeper flavor, you can chill it for up to an hour.
- In a small separate bowl, mix together all the ground spices for the carnitas. Sprinkle this spice blend evenly over the mushroom and onion mixture. Add salt if desired, and toss again until all the mushrooms and onions are well coated with the spices.
- Transfer the marinated mushroom mixture onto the parchment-lined baking dish. Spread the mixture out as much as possible to form a mostly single layer. This ensures even cooking and promotes crispiness. If you are not making this oil-free, you may spray generously with oil at this stage for a more decadent flavor and crispier texture.
- Bake for 30 minutes. After 30 minutes, gently move the mushrooms and onions around with a spatula to prevent the edges from burning and to promote even browning. If you notice the marinade or mushrooms browning too quickly, you can reduce the oven temperature to 350°F (175°C). Continue baking for another 5 to 15 minutes, or until the mushrooms reach your preferred level of browning and crispiness. Baking time may vary depending on your oven and the thickness of your mushroom slices.
- Serve your delicious vegan carnitas immediately in warm tacos, wraps, or as a flavorful topping for grain bowls. Garnish with your favorite toppings such as creamy mashed avocado or guacamole, fresh cilantro, thinly sliced jalapeno, a dollop of vegan sour cream, or a vibrant salsa. For an added protein boost and a heartier meal, include some cooked black beans or refried beans.
- Store any leftover mushroom carnitas in an airtight container in the refrigerator for up to 4 days. They reheat beautifully in a skillet or microwave. Pictured with mashed avocado, fresh lime, jalapeno slices, and vegan sour cream.
Notes
Skillet Method: If you prefer stovetop cooking, you can prepare these carnitas in a large skillet. Combine all ingredients in a skillet over medium heat. Cook, stirring occasionally, until the mushrooms are tender and start to crisp on some edges, and the liquid has evaporated. This method can also yield wonderfully flavorful results, though the texture might be slightly less uniform than baked.
Jackfruit Variation: To make this recipe with jackfruit, drain one 20 oz can of young jackfruit (packed in brine or water), rinse it thoroughly, then squeeze it firmly in a clean towel to remove excess brine. Shred the jackfruit using a fork or knife until it resembles pulled pork. Add the shredded jackfruit to the bowl with the other ingredients and proceed with the recipe as directed. You might want to add a little more of the carnitas spices to ensure full flavor. Check for doneness after about 20 minutes of baking and stir around for even crisping.
Soycurls Alternative: For a soycurl version, soak the soycurls in warm vegetable or chicken-flavored broth for about 10 minutes until rehydrated. Squeeze out excess liquid, then shred them with a knife if desired. Add the prepared soycurls to the mixing bowl and continue with the recipe instructions. Adjust the carnitas spices as needed to taste. Soycurls will absorb flavor beautifully and offer a different textural experience.
