The Journey to Whole Grain Naan Perfection
Ever since our original Vegan Naan recipe captivated so many hearts and kitchens back in 2011, the desire for a truly exceptional 100% whole grain version has been a constant quest. Whole grain flours, while incredibly nutritious, present unique challenges in baking. They absorb liquid differently, can result in drier textures, and often produce denser breads compared to their refined counterparts. Our goal was to create a whole wheat naan that not only retained the goodness of whole grains but also matched the signature softness, airiness, and delightful chewiness of traditional naan. And after extensive experimentation, we are thrilled to share this perfected recipe with you.
This whole wheat naan recipe stands apart due to a clever technique: the use of a “sponge.” This initial mixture of some flour, yeast, and wet ingredients is allowed to hydrate for about 25 minutes before the rest of the ingredients are added. This crucial step is a game-changer. It gives the whole wheat flour ample time to absorb moisture fully, activating the gluten more effectively and resulting in a dough that holds more hydration. The outcome is a noticeably softer, more pliable, and less dense bread – exactly what you want in a perfect naan.
For those eager to master this art, we highly recommend reading our original Naan post for a comprehensive look at various cooking methods and additional tips. Combined with the specific advice for whole grain baking provided below, you’ll be well-equipped to achieve the best whole wheat naan you’ve ever tasted. Let’s get baking!

Why Choose Whole Wheat Vegan Naan?
Opting for whole wheat naan brings a multitude of benefits, both for your health and your palate. Unlike refined flours, whole wheat flour retains the bran, germ, and endosperm, packing in more fiber, vitamins, and minerals. This translates to a bread that’s not only more nutritious but also offers a richer, nuttier flavor profile that beautifully complements a wide array of dishes.
For those following a vegan lifestyle, this recipe offers a delicious alternative to traditional naan, which often uses dairy yogurt and butter. By utilizing plant-based ingredients, we ensure everyone can enjoy this staple bread without compromise. Plus, our recipe is specifically designed to be soy-free and nut-free, catering to common dietary restrictions without sacrificing flavor or texture. It’s a testament to how wholesome ingredients can create truly extraordinary results.

Expert Tips for Crafting the Best Whole Grain Naan
Achieving a truly soft and flavorful whole wheat naan requires attention to detail. Here are our top tips to ensure your baking success:
- Choose Your Flour Wisely: The quality and type of whole wheat flour significantly impact the final product. Some brands can have a stronger, sometimes bitter, flavor, especially if they are old or have gone rancid. We highly recommend using a fresh, high-quality whole wheat flour. For an even more delicious and nutty flavor, consider using a mix of spelt flour and whole wheat flour. Spelt is an ancient grain known for its excellent taste and baking properties in whole grain recipes.
- Maintain a Moist Dough: This is perhaps the most critical tip for whole grain breads. Whole wheat flour absorbs more liquid than all-purpose flour, but it also tends to yield a drier product if not adequately hydrated. Aim for a dough that feels slightly sticky, rather than dry and stiff. A dryer dough will result in a dryer bread, as moisture is lost during cooking. If your dough feels too dry, you can mist the dough balls with a little water and let them rest a bit longer.
- Embrace Trial and Error: Baking, especially with whole grains, is a nuanced process influenced by many variables – your specific brand of flour, the humidity in your kitchen, ambient temperature, and even your pan type. Don’t be discouraged if your first batch isn’t perfect. Start by making smaller breads to test the texture. You can always adjust your dough: add a touch more water if it’s too dry, or a sprinkle of flour if it’s too sticky. A little extra kneading can also help develop gluten for a chewier texture if desired.
- Preserve Freshness: Whole grain breads tend to lose moisture faster than those made with refined flours. To keep your naan soft and fresh, immediately after cooking, spray or brush them generously with a little oil or melted vegan butter. Then, stack them and cover them with a clean kitchen towel. This traps the steam and moisture, keeping them pliable. If you’re new to whole wheat baking, you can start with a 50/50 mix of whole wheat and unbleached all-purpose flour to ease into the process.

Whole Wheat Naan Bread. Soft, Amazing 100% Whole Grain Naan flatbread. Vegan Indian Butter Naan Recipe. Vegan Soy-free Nut-free Recipe.
Ingredients
Sponge:
- 1/2 cup warm-hot water
- 1/4 cup whole wheat or spelt flour
- 1.5 tsp Active dry yeast
- 1/2 tsp sugar or maple syrup (optional)
- 1/4 cup non-dairy yogurt (plain unsweetened, at room temp, or use 1/4 cup thick non-dairy milk mixed with 1/2 tsp vinegar, or use mashed very ripe avocado)
Naan:
- 1 to 1.5 cups whole wheat flour (or a mix of wheat and spelt)
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 tbsp oil (plus more for greasing)
- Flavor additions: garam masala, garlic powder, nutritional yeast, cumin, fresh herbs, etc. (optional)
- Toppings: minced garlic, cilantro or fresh herbs, nigella seeds, black sesame seeds, vegan butter, etc. (optional)
Instructions
- Mix all the ingredients listed under “Sponge” in order. Combine well and cover with a towel. Allow the sponge to sit for 25-30 minutes in a warm place until frothy and active.
- Next, add 3/4 cup flour, baking powder, and salt to the sponge mixture. Incorporate the oil and mix thoroughly. Gradually add more flour as needed to form a dough that is somewhat sticky but cohesive. Knead for 2-3 minutes until the dough becomes reasonably smooth. Cover the bowl with a thick towel and let it rise until it has almost doubled in size, typically 1 to 1.5 hours, depending on your ambient room temperature.
- Drizzle a few drops of oil onto the risen dough and spread it gently. If necessary, use about a tablespoon of flour to bring the dough together into a smooth ball. Divide the dough into 3 or 4 equal portions and shape each into a smooth ball. Place the dough balls on parchment paper, cover them with a towel, and let them rest for another 10-15 minutes. During this time, prepare your skillet, toppings, and any other necessary items.
- On a lightly floured surface, use a rolling pin or simply your hands to gently flatten and shape the dough balls into naan bread. Be careful not to press too hard, as you want to retain the air from the rising process. Lightly spritz water on top of each naan and press in any desired toppings, such as minced garlic, fresh cilantro, nigella seeds, or black sesame seeds.
- Heat a cast iron or heavy-bottom skillet over medium-high heat. Cook each naan for 1 to 3 minutes per side, or until golden brown spots appear and the naan puffs up. You can cover the naan for about half a minute during cooking to help it steam and cook through. Once cooked, brush liberally with melted vegan butter or oil. If not serving immediately, cover the cooked naan with a towel to keep it soft. Naan can be stored at room temperature for a few hours, refrigerated for up to a week, or frozen for up to a month. Refer to the “Tips” section above the recipe for more storage and cooking advice. Serve warm with your favorite Indian Curries/Entrées. Notes
For Gluten-free Naan: If you’re looking for gluten-free options, please refer to my Gluten-free Naan and Chickpea Flour Naan recipes available in my first Book, “Vegan Richa’s Indian Kitchen.”
To make this Oil-free: You can certainly make this naan without oil. Simply omit the oil from the recipe. You may find you need a bit less flour for the dough. The key here is to keep the dough on the stickier side to compensate for the lack of fat. After cooking, brush the warm bread with aquafaba (the liquid from a can of chickpeas) and immediately cover it with a towel. Oil-free naan tends to benefit greatly from using a blend of half unbleached white flour and half whole wheat flour for a softer texture.
