Dry Ingredients:

  • 1/2 cup all-purpose flour, (unbleached all-purpose recommended)
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp pumpkin pie spice, (adjust to preference)
  • 1/3 tsp salt, (or scant 1/2 tsp)
  • 3/4 cup fine or medium cornmeal

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease or line a 9 by 5-inch loaf pan with parchment paper.
  • In a large mixing bowl, combine all the wet ingredients (pumpkin puree, oil, maple syrup, almond milk, and vinegar). Whisk them together until thoroughly combined and smooth. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt directly into the wet ingredients.
  • Add the cornmeal to the bowl and mix everything until just combined. Be careful not to overmix; a few lumps are fine. Transfer the batter to your prepared loaf pan and use a spatula to gently spread it evenly.
  • Bake for 34 to 37 minutes, or until a toothpick inserted into the center comes out clean. Let the cornbread cool in the pan for 5 minutes before carefully removing it and transferring it to a wire rack to cool for another 10 minutes before slicing. If baking muffins, bake for 20-24 minutes.
