Ingredients

  • 2 teaspoons flaxmeal
  • 1 Tablespoon hot water
  • 1 Tablespoon almond milk
  • 1/2 tsp vanilla extract
  • 1 Tbsp agave/maple syrup
  • 1 Tbsp coconut oil, almost melted
  • 1 Tbsp organic canola oil
  • 2.5 Tablespoons ground raw sugar (use 3 Tbsp for sweeter cookies)
  • pinch of salt
  • 3/4 cup whole wheat flour (or 1/2 cup whole wheat flour and 1/4 cup almond flour for crumblier texture)
  • 1/2 teaspoon baking powder
  • 1/3 cup vegan semi-sweet chocolate chips

Instructions

  1. In a medium bowl, combine the hot water, almond milk, vanilla extract, flaxmeal, and agave or maple syrup.
  2. Whisk these wet ingredients vigorously until they are thoroughly combined and the flaxmeal has started to thicken slightly, forming a “flax egg.”
