  • 2 1/4 cup vegetable broth or water
  • 8 oz spaghetti noodles, (broken into halves)
  • 1/3 cup water
  • 1/4 cup thick cashew cream, (blend 1/4 cup cashews with 1/4 cup water until smooth)
  • 1/4 cup toasted breadcrumbs, (toast in 1 tsp olive oil until golden, for garnish)
  • Vegan parmesan, (as needed or nutritional yeast)
  • 1/4 cup chopped fresh parsley or basil

Instructions

  1. Press “Saute” on your Instant Pot. Once hot, add 2 tsp oil. Add sliced mushrooms, chopped onion, and a generous pinch of salt. Cook for 3 minutes, stirring occasionally, until softened.
  2. Deglaze the pot with 2 tbsp of water or white wine, scraping up any browned bits from the bottom. Continue to cook for another minute. Remove the cooked mushrooms and set aside.
  3. Add vegan butter (or olive oil) and flour to the pot. Cook for about a minute, stirring frequently, to create a roux. Be careful not to let it burn. (For a simpler, creamier pasta without the roux, you can skip this step and add more non-dairy cream at the end).
