Ingredients

Lentils:

  • 1 cup red lentils, masoor dal, or use split peas, or mung dal or chana dal
  • 3 to 3.5 cups water
  • 1 tbsp grated ginger
  • 1 fresh green chile, finely chopped or grated
  • 1/2 tsp turmeric
  • 3/4 tsp or more salt
  • 3 to 4 large chard leaves chopped, 2 cups loosely packed greens
  • 1/4 cup thin cashew cream , or coconut milk or other non-dairy cream or milk
  • 1 to 2 tsp lime juice

Tadka/Tempering:

  • 1 tsp oil
  • 1/2 tsp cumin seeds
  • 2 green cardamom pods, cracked open
  • 2 inch cinnamon stick
  • 2 cloves
  • 2 dried red chilies, broken for more heat
  • 3 cloves of garlic

Instructions

  • Cook the lentils in a saucepan or a pressure cooker (Instant Pot) until done to preference. For a saucepan: Cook the red lentils with water over medium heat for 20 to 25 minutes. (For split peas or split chickpeas (chana dal), cook for 30 to 40 minutes.)
  • For a pressure cooker/Instant Pot: Use manual setting for 1 to 2 minutes. Allow for natural release of pressure.
  • Once lentils are cooked, add grated ginger and chopped green chile, mixing them into the simmering lentils. You can also prepare a paste of ginger and chile before adding it. Stir in turmeric, salt, chopped chard, and cashew cream. Continue to cook for another 10 minutes over medium heat, allowing the chard to soften and flavors to meld. Add lime juice to taste. At this point, you can also include 1 chopped tomato for extra flavor and acidity. Keep the Dal simmering over low heat while you prepare the tempering.

Make the tempering:

  • Heat oil in a small skillet over medium heat. Add cumin seeds and let them splutter and begin to change color, about 2 minutes. Then, add the green cardamom, cloves, cinnamon stick, and dried red chilies. Cook for another minute, or until the spices become fragrant. Reduce the heat to low-medium. Add the minced garlic and cook until it turns golden brown, approximately 4 to 5 minutes, being careful not to burn it.
  • Pour this aromatic tempering directly into the simmering lentils and mix thoroughly. Allow the Dal to cook for an additional minute, then remove from heat and let it sit for a few minutes. This allows the spices from the tempering to fully infuse into the soup, enhancing its flavor profile. Taste and adjust salt and heat as needed. Garnish with fresh cilantro and red pepper flakes before serving. You may remove the cinnamon stick and cloves just before serving if desired, though leaving them in allows for continued infusion of flavor. Serve hot with cooked white or brown rice, quinoa, millet, or your favorite flatbread.
