  • Nonstick cooking spray
  • ¾ cup (90 g) whole wheat pastry flour
  • ½ cup (70 g) whole spelt flour
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • 1 teaspoon Sucanat
  • ½ teaspoon Smoked Paprika Salt (page 24) or fine sea salt
  • ½ teaspoon ground cumin
  • 3 tablespoons (45 ml) olive oil
  • ½ cup (152 g) jarred salsa, drained (reserve the liquid)
  • Unsweetened plain vegan milk, as needed
  • 1 tablespoon (9 g) finely minced jalapeño pepper, more if desired (optional)

Directions:

  1. Preheat the oven to 375°F (190°C, or gas mark 5). Lightly coat a mini muffin pan (about 14 cups) with cooking spray.
  2. Stir together the flours, baking powder, cornstarch, Sucanat, salt, and cumin in a medium-size bowl.
  3. Drizzle in the olive oil, and stir with a fork until the mixture resembles crumbs.
  4. Starting with the liquid from the salsa, add enough milk to make ½ cup (120 ml) total liquid.
  5. Add the salsa, jalapeño, and liquid to the bowl and stir to combine, but do not overstir.
  6. Spoon a heaping 1 ½ tablespoons (about 30 g) batter into each cup.
  7. Bake 20 to 24 minutes, until lightly browned. Serve hot or at room temperature.
