Welcome to a truly comforting and effortlessly delicious recipe: our Vegan Cauliflower Gratin. This dish reimagines the classic creamy, spiced casserole into an accessible, plant-based delight. Whether you choose to prepare it as a convenient no-bake skillet gratin or prefer a baked version crowned with a golden, garlicky breadcrumb topping, this recipe promises warmth, flavor, and satisfaction. It’s a versatile, wholesome meal that can be easily adapted to be soy-free, gluten-free, and nut-free, catering to a wide range of dietary needs without compromising on taste.

Embracing Comfort: The Perfect Skillet or Baked Gratin
There are days when the kitchen feels like a sauna, or perhaps you’re simply looking for a quick yet hearty meal without the fuss of turning on the oven. This vegan cauliflower gratin is your perfect answer. Developed with flexibility in mind, it can be prepared entirely in a skillet for those warmer days or when you’re short on time. However, if you crave that comforting oven-baked depth and a beautifully crisped topping, the recipe also includes instructions for baking. The magic lies in its incredibly versatile cream sauce, a luscious foundation that coats the cauliflower and greens in a symphony of flavors.
What truly elevates this gratin is the strategic use of aromatic spices. While simple herbs can certainly make this dish sing, experimenting with diverse spice blends transforms it into an exotic culinary journey. Imagine the rich, complex warmth of Kashmiri Garam Masala, offering a fragrant depth that hints at its Indian origins. Or perhaps the earthy, sweet, and slightly peppery notes of Baharat, a Middle Eastern blend that infuses the gratin with an irresistible aroma. For those who love a vibrant kick, the Ethiopian Berbere blend provides a bold, spicy, and savory profile, while a Jamaican Curry Blend brings a sunny, island-inspired warmth. Each spice choice creates a distinctly different, yet equally delicious, experience, allowing you to customize the dish to your preference or what you have on hand.
The Irresistible Crunchy Topping
No gratin is complete without a delightful contrasting texture, and this recipe delivers with a generous sprinkle of toasted breadcrumbs. These aren’t just any breadcrumbs; they’re lovingly pan-fried with garlic and a hint of red pepper flakes, creating a smoky, subtly spicy, and utterly addictive crunch. This garlicky, crispy layer is more than just a topping; it’s an essential element that balances the creamy cauliflower, adding depth and an exciting mouthfeel that will have you coming back for more.
Make it a Full Meal: Adding Protein & Greens
While wonderfully satisfying on its own, this gratin can easily be transformed into a complete, protein-packed meal. Consider folding in cooked chickpeas for a wholesome, fiber-rich addition, or incorporate your favorite vegan chicken substitutes for a heartier texture. Tempeh also works beautifully, offering a firm bite and excellent nutrient profile. For an extra layer of flavor and texture, try marinating tempeh or vegan chicken pieces in a bit more of your chosen spice blend (like the Jamaican curry), a pinch of salt, and some minced garlic. Sauté them separately until golden and crisp, then gently fold them into the gratin along with fresh greens like Swiss chard or spinach. These vibrant greens not only add a burst of color but also boost the nutritional value, making every spoonful a nutritious and delicious experience.
The beauty of this recipe lies in its speed and simplicity. Incredibly, this creamy and flavorful gratin can be ready to serve in just about 25 minutes when made on the stovetop! This makes it an ideal choice for busy weeknights when you crave a homemade, comforting meal without spending hours in the kitchen. Don’t hesitate to experiment with other vegetables too; broccoli, bell peppers, or even sweet potatoes can be fantastic additions, adding more complexity and nutrients to this already wonderful dish.

Vegan Cauliflower Gratin – No Bake

Ingredients
- 1 tsp olive oil
- 1 cup chopped onion
- 6 cloves of garlic, finely chopped
- 1/2 green chile, chopped (optional)
- 2 cups cauliflower, 2 to 3 cups small-medium florets
- 1/3 cup water
- 2 cups or more chopped greens, I use chard and spinach
- 1/4 cup cashews blended with 1 cup water (blend for a minute, then rest for 2 and blend again until smooth)
- 1/2 tsp or more salt
- 1 tsp sugar or maple (optional)
- 1 tsp spice blend of choice (e.g., 1/2 tsp ground cumin + Kashmiri Garam Masala or Baharat Spice blend, see notes below)
- 1 tsp herbs of choice (e.g., blend of oregano, thyme, sage)
Toasted Breadcrumbs:
- 1/3 cup breadcrumbs
- 2 tsp extra virgin olive oil
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp red pepper flakes
Instructions
-
Heat olive oil in a large skillet over medium heat. Add the chopped onion, finely minced garlic, and optional green chile along with a pinch of salt. Sauté the mixture until the onions become soft and translucent, typically for about 5-7 minutes. Once translucent, add the cauliflower florets, water, and 1/4 teaspoon of salt. Cover the skillet and allow it to cook for 6 to 7 minutes, or until the cauliflower starts to soften but is still slightly firm (al dente).
-
Stir in the chopped greens (such as chard and spinach). Cover the skillet again and cook for an additional 3 minutes, or until the greens have wilted down and the cauliflower is tender yet holds its shape.
-
Pour in the prepared cashew cream, along with the remaining salt, optional sugar or maple syrup, your chosen spice blend, and dried herbs. Mix all the ingredients thoroughly to ensure the cauliflower and greens are evenly coated in the rich, creamy sauce. If desired, enhance the flavor further by adding 1 tablespoon of nutritional yeast for a cheesy depth, 1 teaspoon of vegan Worcestershire sauce or soy sauce for umami, or 1/2 teaspoon of prepared mustard for an extra tang.
-
Bring the mixture to a gentle boil, then reduce the heat and simmer uncovered for another minute or until the sauce thickens to your desired consistency. Taste the gratin and adjust the seasoning as needed, adding more salt or spices if desired. If the sauce becomes too thick, a splash of water can thin it out to perfection.
-
While the gratin simmers, prepare the optional toasted breadcrumb topping. In a separate small skillet, combine the breadcrumbs, extra virgin olive oil, salt, garlic powder, and red pepper flakes. Heat over medium heat, stirring occasionally, until the breadcrumbs turn golden brown and become wonderfully toasted and fragrant. This usually takes about 3-4 minutes.
-
Once the gratin is ready, generously sprinkle the toasted breadcrumbs evenly over the cauliflower mixture in the skillet. Remove from heat immediately and serve piping hot.
Notes
The creamy sauce is incredibly adaptable to various spice profiles. For a deeply aromatic flavor, consider using Kashmiri Garam Masala or Baharat spice blend. If you prefer a bold and spicy dish, Berbere is an excellent choice. For a warmer, slightly sweeter profile, a Jamaican Curry Blend works wonderfully. For a milder, more subtle gratin, omit the stronger spice blends and instead focus on a blend of nutritional yeast, a splash of white wine or lemon juice, freshly ground black pepper, and 1 to 2 teaspoons of dried herbs such as thyme, basil, and sage. When incorporating the stronger spice blends, using about 1/2 teaspoon of dried herbs is often sufficient to complement rather than overpower the main spice notes.
To make it nut-free: For those with nut allergies, you can easily adapt this recipe. Replace the cashews with 1/4 cup of pumpkin seeds blended with 1 cup of water, adding 1 tablespoon of flour to help achieve a smooth, creamy consistency. Blend this mixture until completely smooth. Alternatively, you can use a pre-made nut-free creamy sauce from another trusted vegan recipe, such as the one from Vegan Richa’s acclaimed fettuccine alfredo recipe.
