The heart of this bowl lies in its aromatic spice blend, meticulously crafted for the roasted chickpeas and sweet potatoes. This fragrant mix includes garlic powder, onion powder, ground coriander, rich paprika, earthy cumin, pungent black pepper, exotic cardamom, a kick of cayenne (optional, for those who love extra heat), and a touch of ground mustard. This precise combination creates a deeply warming, smoky, spicy, and utterly cozy flavor profile that perfectly complements the natural sweetness of the potatoes and the robustness of the chickpeas.

Achieving Perfect Textures: Crispy, Pillowy, and Caramelized

The roasting process is key to the incredible textures in this salad. The chickpeas emerge from the oven beautifully crispy, providing a delightful crunch with every bite. The sweet potatoes are transformed into tender morsels, crisp on the outside with a wonderfully pillowy interior. Meanwhile, bell peppers are baked until they become soft and almost caramelized, adding an exquisite sweetness that balances the savory spices. We add the bell peppers to the baking sheet a bit later, as they require less cooking time to reach their optimal tenderness and sweetness, ensuring all vegetables are perfectly cooked without being overdone.

While your vegetables are busy baking to perfection, you’ll have ample time to whisk together the star of the show: a creamy, dreamy tahini dressing. This dressing is so exceptionally good, with its rich, nutty flavor and bright lemon notes, that we highly recommend preparing a double batch. You’ll find yourself wanting to put it on everything from other salads and grain bowls to roasted vegetables and sandwiches!

Ingredients

For the Chickpeas and Sweet Potatoes:

  • 15 oz Can of chickpeas, or 1.5 cups cooked
  • 2 cups cubed sweet potato
  • 1 tablespoon barbeque sauce
  • 1 teaspoon oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon cayenne, optional
  • 1/4 teaspoon ground mustard

For the Salad Bowl:

  • 1 cup sliced bell pepper
  • salt and black pepper for roasting the bell pepper
  • 3-5 cups baby greens, or mixed spring greens
  • 1 cup of juicy fruit such as apples or pear
  • 1/4 cup of nuts or seeds of choice , such as pecans or pumpkin seeds or hemp seeds

For the Tahini Dressing:

  • 3 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 to 1/3 cup warm water

Instructions

  • In a large bowl, combine the drained chickpeas and cubed sweet potatoes. Add the barbeque sauce and 1 teaspoon of oil, then toss everything thoroughly to ensure an even coating.
  • Next, sprinkle in all the prepared spices and herbs: salt, garlic powder, onion powder, ground coriander, paprika, ground cumin, black pepper, ground cardamom, and cayenne (if using). Mix well again until the chickpeas and sweet potatoes are uniformly coated with the aromatic spice blend.
  • Spread this spiced chickpea and sweet potato mixture in a single layer onto a baking sheet lined with parchment paper. Ensure there’s enough space between the pieces to allow them to roast evenly and become crispy.
  • In a separate bowl, toss the sliced bell pepper with salt, black pepper, and 1/2 teaspoon of oil. You can then spread the bell peppers on the same baking sheet, if space allows, or use a different baking sheet. If using the same sheet, consider placing them on a separate piece of parchment paper to make removal easier since they cook faster.
  • Preheat your oven to 400 degrees Fahrenheit (205°C). Bake the vegetables for 25-30 minutes. The bell peppers will likely be tender and slightly caramelized around the 20-minute mark, so you can remove them from the baking sheet at this point. Continue baking the sweet potatoes and chickpeas, gently stirring them around on the sheet to promote even roasting and crispiness.
  • Continue baking until the sweet potatoes are fork-tender and slightly caramelized, and the chickpeas have reached your desired level of crispiness. This usually takes an additional 5-10 minutes after removing the bell peppers.
  • While the vegetables are roasting, prepare the creamy tahini dressing. In a medium bowl, combine the tahini, fresh lemon juice, dried parsley, salt, and garlic powder. Add 1/4 cup of warm water and begin mixing vigorously. Tahini can sometimes seize up initially when liquid is added, so keep mixing for about a minute until it starts to smooth out.
  • Once the mixture is well combined and has emulsified, the tahini dressing will thicken to a lovely creamy consistency. You can adjust the thickness by adding more warm water, a tablespoon at a time, until it reaches your preferred pourable consistency. Taste the dressing and adjust seasonings (salt, lemon juice) if needed.
  • To assemble your vibrant salad bowls, start by adding a generous bed of your chosen salad greens to each bowl. Arrange a hearty serving of the roasted chickpeas, sweet potatoes, and bell peppers over the greens. Top with your desired fresh fruit, nuts, or seeds. Finally, drizzle a generous amount of the creamy tahini dressing over everything and serve immediately for the freshest taste and best texture. Enjoy!

Notes

  • Sweet Potato Alternatives: Feel free to substitute sweet potatoes with other root vegetables like butternut squash, acorn squash, or even carrots for a similar sweetness and texture profile. Adjust baking times as needed for different vegetables.
  • Spice Blend Customization: If you prefer a shortcut or a different flavor profile, you can use about 2 tablespoons of a pre-made Cajun spice blend instead of the individual spices. Be sure to check its salt content; if it’s already salty, you may need to reduce or omit the added salt in the recipe.
  • Colorful Additions: Roasted beets make a fantastic and visually appealing addition to this salad. Just remember to roast them separately, as their vibrant color will bleed and turn all other ingredients pink.
  • Seasonal Fruits: The juicy fruit element adds a refreshing contrast. Experiment with seasonal fruits such as crisp apples, ripe pears, sweet strawberries, juicy peaches, tangy nectarines, tart raspberries, or plump blueberries. Choose what’s freshest and most appealing to you.
  • Nut and Seed Enhancements: Boost the texture and nutritional value with a variety of nuts or seeds. Excellent choices include crunchy pepitas (pumpkin seeds), sunflower seeds, earthy hazelnuts, slivered almonds, or vibrant pistachios. For an extra layer of flavor and crunch, lightly toast the nuts or seeds in a dry pan before adding them to the salad. You can also elevate the experience further with candied or spiced nuts for a gourmet touch.
  • Meal Prep Tips: To prepare this salad for future meals, store the roasted vegetables and dressing separately in airtight containers in the refrigerator. Assemble the bowls just before serving to keep the greens fresh and crispy. The roasted components can be stored for up to 3-4 days.
  • Tahini Dressing Variations: For a slightly sweeter dressing, add a touch of maple syrup or agave nectar. You can also experiment with other herbs like fresh dill or chives, or a pinch of smoked paprika for an extra layer of flavor.

Key Ingredients for Crafting These Spicy Sweet Potato Chickpea Salad Bowls:

Creating this delightful vegan salad bowl is straightforward with a few key ingredients, each playing a crucial role in its flavor and nutritional profile:

  • Chickpeas: The protein-packed foundation of our bowl. You can use canned chickpeas for convenience (just drain and rinse thoroughly) or freshly cooked chickpeas for a slightly richer texture. They get wonderfully crispy when roasted.
  • Sweet Potatoes: Cubed into equal-sized chunks, these sweet potatoes become tender and caramelized during roasting, offering natural sweetness and a hearty base.
  • Bell Peppers: Any color bell pepper will work beautifully, but red bell peppers offer a fantastic vibrant contrast and extra sweetness when baked. They contribute a juicy, slightly smoky element to the salad.
  • Smoky BBQ Spice Blend: This is where the magic happens! We combine a fragrant mix of garlic powder, onion powder, ground coriander, rich paprika, earthy cumin, savory black pepper, a hint of warming cardamom, and a touch of ground mustard. For an optional spicy kick, don’t forget the cayenne pepper. This blend infuses our oven-baked veggies with that irresistible smoky BBQ flavor.
  • Creamy Tahini Dressing: Our luscious dressing is made by whisking together smooth tahini, bright fresh lemon juice, dried parsley for herbaceous notes, a pinch of garlic powder, and warm water to achieve the perfect pourable consistency. It’s rich, tangy, and ties all the flavors together.
  • Leafy Green Base: The canvas for our vibrant ingredients can be any store-bought spring mix, baby spinach, mixed greens, or your favorite blend of fresh leafy greens. Choose what you love for a fresh, crisp foundation.
  • Optional Seasonal Add-ons: Elevate your bowl with additional textures and flavors! Think crunchy nuts (like pecans, almonds, or hazelnuts), nutrient-dense seeds (such as pumpkin seeds, sunflower seeds, or hemp seeds), or juicy fresh/dried fruit (like apples, pears, berries, or dried cranberries). These optional additions allow for endless customization.

Pro Tips & Delicious Substitutions for Your Salad Bowl:

This Spicy Sweet Potato Chickpea Salad Bowl is already fantastic, but here are some tips and ideas to customize it further, making it uniquely yours or adapting it to what you have on hand:

  • Swap Your Root Veggies: Instead of sweet potatoes, you can easily use other starchy vegetables like butternut squash, acorn squash, or even parsnips. Ensure they are cut into similar-sized cubes for even cooking.
  • Cajun Spice Shortcut: If you’re short on time or prefer a different flavor profile, a pre-made Cajun spice blend can be a great substitute for the individual spice mix. Use about 2 tablespoons for the chickpeas and sweet potatoes. Remember to check if your Cajun blend already contains salt, and adjust the added salt accordingly to avoid over-seasoning.
  • Add Roasted Beets for Earthiness: For an additional layer of flavor and a beautiful deep color, consider adding roasted beets. Just a word of caution: roast them on a separate baking sheet, as their strong pigment will color everything else they touch pink!
  • Embrace Seasonal Fruits: The sweetness and acidity of fruit perfectly complement the smoky, savory elements. Beyond apples and pears, try seasonal options such as juicy mango chunks, ripe peaches, sweet nectarines, various berries (strawberries, raspberries, blueberries), or even dried cranberries for a chewy bite.
  • Variety in Nuts and Seeds: The crunch from nuts and seeds is essential! Besides pecans, pumpkin seeds (pepitas), and hemp seeds, explore sunflower seeds, sliced almonds, toasted walnuts, or even pine nuts. To truly elevate their flavor, lightly toast your chosen nuts or seeds in a dry pan over medium heat for a few minutes until fragrant before adding them to your salad.
  • Gourmet Nut Options: For an extra special touch, use candied nuts or spiced nuts. Their sweet or savory coating adds an incredible depth of flavor and texture that transforms the salad.
  • Greens Galore: While spring mix is a great base, feel free to use other leafy greens like sturdy kale (massaged with a little dressing), peppery arugula, chopped romaine, or butter lettuce.
  • Boost the Protein: For an even more protein-rich meal, consider adding some baked tofu or tempeh alongside your chickpeas and sweet potatoes.
  • Extra Freshness: A sprinkle of fresh herbs like cilantro or mint, especially with the tahini dressing, can add a refreshing zest to the bowl.

How to Prepare Your Spicy Sweet Potato Chickpea Salad Bowls:

Follow these simple steps to create your own delicious and wholesome salad bowl:

Cubed sweet potatoes and drained chickpeas in a bowl, coated with barbeque sauce and ready for seasoning.

Step 1: Prep the Chickpeas and Sweet Potatoes. In a large mixing bowl, combine the drained and rinsed chickpeas with the cubed sweet potatoes. Drizzle with barbeque sauce and a teaspoon of oil. Toss everything thoroughly until the vegetables are well coated. This initial layer of flavor is crucial for that smoky, sweet base.

Step 2: Season with the Spice Blend. Now, add the full array of spices and herbs to the bowl: salt, garlic powder, onion powder, ground coriander, paprika, ground cumin, black pepper, ground cardamom, and cayenne (if you desire extra heat). Mix vigorously to ensure every chickpea and sweet potato cube is evenly coated in this aromatic blend. This is where the signature “spicy” and “smoky” notes come from!

Step 3: Arrange for Roasting. Spread the spiced chickpea and sweet potato mixture out in a single layer on a parchment-lined baking sheet. Ensure there’s a little space between each piece for optimal air circulation, which helps them crisp up rather than steam.

Step 4: Prepare and Add Bell Peppers. In a separate smaller bowl, toss your sliced bell peppers with a pinch of salt, black pepper, and half a teaspoon of oil. You can then spread these seasoned bell peppers on the same baking sheet, but use a separate piece of parchment paper underneath them. This allows you to easily remove the bell peppers when they are cooked to perfection, as they typically require less roasting time than the chickpeas and sweet potatoes.

Step 5: Bake to Perfection. Preheat your oven to 400°F (205°C). Place the baking sheet in the oven and roast for a total of 25-30 minutes. Keep an eye on the bell peppers; they will likely be tender and slightly caramelized around the 20-minute mark. At this point, carefully remove the bell peppers from the baking sheet. Continue baking the sweet potatoes and chickpeas, stirring them gently, for the remaining 5-10 minutes until the sweet potatoes are tender inside and slightly crisp outside, and the chickpeas are perfectly crunchy to your liking.

Step 6: Prepare the Creamy Tahini Dressing. While your veggies are roasting, prepare the incredibly delicious tahini dressing. In a medium bowl, combine the tahini, fresh lemon juice, dried parsley, salt, and garlic powder. Add 1/4 cup of warm water and whisk vigorously. Tahini can initially seize and thicken when liquid is added, so keep whisking for about a minute until it transforms into a smooth, creamy consistency. If the dressing is too thick, gradually add another tablespoon or two of warm water until it reaches your desired pourable texture. Taste and adjust the seasoning (more salt or lemon juice) if needed.

Step 7: Assemble Your Salad Bowls. It’s time to bring everything together! Grab your favorite salad bowls and fill them with a generous helping of fresh salad greens. Layer a good amount of the warm, roasted chickpeas and sweet potatoes over the greens. Add the roasted bell peppers, fresh fruit, and your chosen nuts or seeds. Finally, drizzle generously with the creamy tahini dressing, ensuring every component gets a taste. Serve your vibrant Spicy Sweet Potato Chickpea Salad Bowl immediately and savor every comforting bite!
