Unlock Flavor with Za’atar Spice: The Secret Ingredient

The secret weapon behind the extraordinary flavor of these chickpea burgers is Za’atar Spice. This ancient and aromatic Middle Eastern blend is a game-changer in the kitchen, offering a unique combination of tangy, nutty, and herbal notes. Typically composed of ground dried thyme, oregano, marjoram, toasted sesame seeds, and sumac, Za’atar adds an unparalleled depth of flavor that transforms ordinary dishes into culinary masterpieces. The sumac, in particular, contributes a bright, zesty tang that beautifully complements the earthy chickpeas and rich caramelized onions.

Once you experience the magic of Za’atar, you’ll find countless ways to incorporate it into your cooking. It’s fantastic sprinkled over roasted vegetables, mixed into olive oil for dipping bread, or used as a seasoning for grilled meats and plant-based proteins. Consider trying it on homemade pizza or flavorful flatbread. For those who enjoy exploring new flavors, investing in a good quality Za’atar blend is highly recommended.

A Symphony of Flavors: Tangy, Sweet, and Savory

These chickpea burgers are designed to offer a delightful balance of tastes and textures. The tangy sumac from the Za’atar blend, coupled with the subtle umami of sun-dried tomatoes, creates a vibrant and slightly sour base for the patties. To counteract and enhance these bright notes, we pair the veggie burgers with sweet and savory caramelized onions. The slow-cooked onions develop a rich, deep sweetness that perfectly harmonizes with the burger’s tang and a hint of spice. A generous drizzle of our creamy Tahini Dill Sauce brings everything together, adding a luxurious creaminess and a fresh herbal finish. This combination of flavors makes for a truly unforgettable burger experience, much like the classic pairing of burgers and fries.

Ingredients

Patties:

  • 3/4 cup cauliflower florets, 1-1.5 inch size
  • 1/2 tsp coriander seeds
  • 15 oz can of chickpeas/garbanzo beans, or 1.5 cups cooked
  • 1.5 tsp Zaatar spice blend or use garam masala or Cajun spice
  • 1 Tbsp sundried tomato
  • 1/4 cup packed chopped cilantro, or parsley or greens of choice
  • 1/3 tsp salt
  • 2 cloves garlic
  • 1 Tablespoon minced ginger
  • 2 flax eggs, 2 tbsp flax seed meal mixed with 5 tbsp water
  • 1/4 cup finely chopped red onion
  • 1/4 tsp red pepper flakes
  • a generous dash of black pepper
  • 2 tsp extra virgin olive oil or use tahini
  • flour, oat, chickpea for Glutenfree or wheat or breadcrumbs if needed

Caramelized onions:

  • 1 medium red onion, thinly sliced
  • 2 tsp oil
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • 1/4 tsp cayenne
  • 1/2 tsp sweet paprika

Toppings:

  • Tahini dill dressing
  • tomato
  • lettuce/greens

Instructions

Patties:

  • Preheat the oven to 400 degrees F (205°C) if baking.
  • In a food processor, add cauliflower florets and coriander seeds. Process until a coarse mixture forms.
  • Next, add the chickpeas, Za’atar, sun-dried tomato, cilantro, salt, garlic, ginger, and flax eggs to the food processor. Pulse a few times (about 5-second pulses) until most of the chickpeas are disintegrated. The ideal consistency is where almost no whole chickpeas remain, and about half of them are pureed, giving the patty a good texture without being too dense.
  • Stir in the finely chopped red onion, red pepper flakes, and olive oil. Mix and mash the ingredients thoroughly. Taste the mixture and adjust salt and spice levels as desired.
  • If the mixture appears too wet to form patties, add a tablespoon or two of flour (oat, chickpea, or wheat) or breadcrumbs until the desired consistency is achieved. If the mixture is too dry and crumbly, add another flax egg or a splash of water.
  • Shape the mixture into uniform patties. You can use a 3-inch cookie cutter for perfectly round patties, packing about 1/3 cup of the mixture into each, or simply form them by hand. For pan-frying, slightly thinner patties work best. For firmer patties, freeze them for about 10 minutes before cooking. If pan-frying and they stick, lightly dust them with flour.
  • To cook, you have two excellent options: Pan-fry the patties with a little oil for 3 to 4 minutes per side until golden brown and crispy. Alternatively, brush the tops of the patties with oil and bake them in the preheated oven at 400 degrees F (205°C) for 20 minutes, then flip them and bake for an additional 5 minutes.
  • The key to preventing crumbly patties is proper blending of the chickpeas. If the pieces are too large, the patty might fall apart. However, over-blending can result in a pasty, mashed bean texture. Aim for a consistency that is somewhere in between, with some texture remaining. Serve your delicious chickpea burgers with spicy or plain caramelized onions, hummus, mayo, ranch, or any other favorite toppings.

Caramelized Onions:

  • In a heavy-bottomed pan, heat oil over medium heat. Add the thinly sliced red onions, salt, and sugar. Cook for 4 to 5 minutes, stirring occasionally, until the onions become translucent and begin to soften.
  • Stir in the cayenne pepper and sweet paprika. Continue to cook for another few minutes, stirring constantly, until the onions turn a beautiful golden brown and are fully caramelized. This process deepens their sweetness and adds a touch of savory spice.

Notes for Perfection

  • The secret to a less crumbly patty lies in thoroughly blending the chickpeas and other ingredients. Large chunks can lead to a delicate patty structure. Aim for a texture where chickpeas are mostly broken down but not completely pureed into a paste.
  • While these burgers are fantastic with our tahini dill sauce and caramelized onions, feel free to customize! Hummus, vegan mayo, or ranch dressing are always excellent additions.
  • For an interesting textural variation and added richness, consider adding a handful of chopped walnuts to the patty mixture.
  • Always taste and adjust the seasoning of your burger patty mix before cooking. Remember that flavors tend to intensify during the baking or frying process.
  • If Za’atar isn’t readily available or you prefer a different spice profile, garam masala makes a wonderful substitute, lending a warm, earthy flavor to the patties.

Essential Ingredients for Your Chickpea Burger Masterpiece

Crafting the perfect Za’atar Chickpea Burger requires a thoughtful selection of ingredients, each playing a crucial role in achieving the ideal flavor and texture. Here’s a breakdown of what you’ll need and why:

  • Za’atar: This is the star spice! As discussed, it’s a Middle Eastern condiment typically containing sumac (for tanginess), dried herbs like thyme and oregano, and toasted sesame seeds for nuttiness. The specific blend can vary, so feel free to experiment with different brands like Israeli Za’atar to find your favorite. If Za’atar isn’t your preferred flavor, garam masala or Cajun spice blend can be excellent alternatives.
  • Cauliflower Florets: These magical florets are included to lighten up the patty’s texture, preventing it from becoming too dense. They also add subtle moisture and fiber without overpowering the other flavors.
  • Seasonings & Spices: A fragrant combination of coriander seeds, fresh ginger, minced garlic, fresh cilantro (or parsley for a different herbal note), and a pinch of red pepper flakes creates a vibrant and complex flavor profile that perfectly complements the Za’atar. Don’t forget a generous dash of black pepper for an extra kick.
  • Chickpeas/Garbanzo Beans: The hearty base of our burgers. You can use a 15 oz can (drained and rinsed) or approximately 1.5 cups of home-cooked chickpeas. For a variation, white beans can be used as a substitute, offering a slightly milder flavor.
  • Sun-Dried Tomatoes: These concentrated flavor bombs add a deep, savory umami note to the burger patties, enhancing their overall richness and complexity.
  • Flax Eggs: Essential for binding the patties together without using traditional eggs, making this recipe perfectly vegan. Easily prepare them by mixing 2 tablespoons of finely ground flax seeds with 5 tablespoons of water and letting it sit for a few minutes to thicken. Store-bought flax eggs also work.
  • Finely Chopped Red Onions: A fundamental component in almost any savory patty, onions provide crucial umami and a subtle sweetness. When finely chopped, they integrate seamlessly into the burger mix.
  • Extra Virgin Olive Oil or Tahini: A small amount of olive oil adds moisture and helps bind the ingredients. For an even richer, nuttier flavor and added moisture, you can substitute tahini.
  • Flour or Breadcrumbs: These are used as a binder to adjust the consistency of the patty mixture. Depending on how moist your chickpeas and cauliflower are, you might need a little oat flour, chickpea flour (for a gluten-free option), wheat flour, or even plain breadcrumbs to ensure the patties hold their shape.

Crafting Your Za’atar Chickpea Burgers: A Step-by-Step Guide

Creating these flavorful vegan burgers is a straightforward process, broken down into two main parts: caramelizing the onions and preparing the patties. Let’s dive in!

Step 1: Master the Art of Caramelized Onions

Caramelized onions are a glorious addition to any burger, and they’re surprisingly easy to make. Their deep sweetness and savory notes perfectly complement the tangy Za’atar patties.

  1. In a sturdy, heavy-bottomed pan, heat 2 teaspoons of oil over medium heat.
  2. Add the thinly sliced medium red onion, along with 1/4 teaspoon of salt and 1/4 teaspoon of sugar. The sugar helps to accelerate the caramelization process and deepen the sweetness.
  3. Cook for 4 to 5 minutes, stirring occasionally, until the onions soften and become translucent. Don’t rush this step; patience is key to developing rich flavors.
  4. Stir in 1/4 teaspoon of cayenne pepper and 1/2 teaspoon of sweet paprika. Mix well and continue to cook for another minute or two, allowing the spices to toast and the onions to turn a beautiful golden-brown color. Once caramelized, set them aside.

Step 2: Preparing the Flavorful Chickpea Patties

ingredients for making vegan chickpea burger patties in a food processor

The core of our burger lies in these perfectly spiced chickpea patties. The food processor does most of the heavy lifting here.

  1. First, preheat your oven to 400°F (205°C) if you plan to bake your burgers.
  2. In a food processor, combine the cauliflower florets and coriander seeds. Process until you achieve a coarse, crumbly mixture.
  3. Next, add the drained chickpeas, Za’atar spice blend, sun-dried tomato, fresh cilantro, salt, garlic, ginger, and prepared flax eggs. Pulse the mixture a few times (short, 5-second pulses are ideal). The goal is to break down most of the chickpeas—you want very few whole chickpeas left, and about half of them should be pureed. This balanced texture is crucial for a patty that holds together without being too dense or crumbly.
  4. Add the finely chopped red onion, red pepper flakes, and extra virgin olive oil (or tahini) to the processor. Mix and mash the ingredients thoroughly. Taste the mixture and adjust the salt and spice levels to your preference. Remember that flavors will intensify slightly during cooking.
  5. Assess the consistency of your mixture. If it feels too wet to form patties easily, gradually add a tablespoon or two of oat, chickpea, or wheat flour (or breadcrumbs) until the mixture is firm enough to handle. If it’s too dry and doesn’t hold together, add another flax egg or a small amount of water.

Step 3: Shape and Cook Your Patties to Perfection

Now it’s time to bring your burgers to life and choose your preferred cooking method.

  1. Shape the patty mixture. You can use a 3-inch cookie cutter, packing about 1/3 cup of the mixture into each for consistent sizes, or simply form them by hand. For better handling and to prevent sticking, especially when pan-frying, freeze the formed patties on a tray for about 10 minutes.
  2. For Pan-Frying: If you opt for pan-frying, consider making the patties slightly thinner for a crispier result. Heat a little oil in a skillet over medium heat. Cook the chickpea burgers for 3 to 4 minutes per side, until golden brown and crispy. If the patties tend to stick, a light dusting of flour before pan-frying can help.
  3. For Baking: For a more hands-off approach, brush the tops of your formed patties with a little oil. Place them on a baking sheet and bake in the preheated 400°F (205°C) oven for 20 minutes. Then, carefully flip them and bake for an additional 5 minutes to ensure even cooking and a nice crust.

Step 4: Assemble Your Irresistible Chickpea Burger

With your perfectly cooked patties and caramelized onions ready, it’s time to build your dream burger!

Serve these fantastic chickpea burgers on your favorite burger buns with a generous spread of tahini dill sauce, crisp lettuce, juicy tomato slices, and, of course, a pile of your freshly made caramelized onions. The combination of textures and flavors is simply outstanding.
