After a bit of deliberation between pizza and classic veggie burgers with a pasta side, I landed on what turned out to be a brilliant solution: a “Make Your Own Panini” bar. This approach was a game-changer! Not only did it allow for endless customization, but it also freed me from being stuck in the kitchen heating things up right before lunch or spending the entire morning cooking. The beauty of a panini station is its interactive nature, empowering guests to build their perfect meal exactly how they like it. This innovative idea transformed potential dietary hurdles into a fun, engaging, and utterly delicious experience for everyone.

As summer approaches, my mind naturally turns to outdoor gatherings, barbecues, and, of course, the quintessential veggie burger. This season promises to be filled with exciting veggie burger experiments, aiming to perfect patties that are ideal for grilling, pan-frying, or any cooking method imaginable. My goal is to create plant-based burgers so incredibly delicious and satisfying that they’ll be chosen over traditional meat options every single time. There’s an undeniable joy in savoring a perfectly cooked veggie burger, especially when it’s packed with wholesome ingredients and bursting with flavor. Imagine the sizzle on the grill, the aroma of fresh ingredients, and the anticipation of that first bite – pure summer bliss!

Unfortunately, I didn’t get a chance to capture the full spread of our panini table with all its glorious options during the last gathering. The excitement of the moment took over! However, I’m already planning our next panini meetup, and rest assured, I’ll dedicate some time to snapping plenty of photos and sharing even more recipes in a follow-up post.   • 3/4 teaspoon salt, or to taste
  • 3/4 teaspoon Chana masala/chole masala spice blend, or to taste, for an authentic Indian flavor profile
  • 1/2 green chili, finely chopped, or chili flakes for a gentle warmth

Admittedly, our panini bar was a delightful mish-mash of flavors and cuisines! This approach was deliberate, as I wasn’t entirely sure about all our guests’ preferences. Some people might not take to tempeh as readily as others, or have specific veggie preferences. Offering multiple options ensured that everyone found something they loved, creating a truly inclusive dining experience.

Another incredible benefit of this “make-ahead” strategy was the significant reduction in stress on the day of the party. I prepared all the burger patties a day in advance, leaving only the sauces to be made just before lunch. This saved an immense amount of time and energy.
