The Inspiration Behind This Vegan Delight

This luscious 30-minute pasta dish is a vegan recreation of a beloved meal I used to enjoy at restaurants over a decade ago. That classic creamy, garlicky sauce, combined with the savory notes of sun-dried tomatoes and “grilled chicken,” has been brilliantly reimagined for a plant-based diet. The star of the show, beyond the irresistible sauce, is the clever use of soy curls. These humble, dehydrated soy protein pieces are first rehydrated in a flavorful garlic veggie broth, then pan-fried to achieve a beautifully toasted, slightly crispy texture, seasoned with more garlic and freshly ground black pepper. Once they join the creamy base, along with aromatic herbs like fresh thyme and your choice of pasta (farfalle or fettuccine work wonderfully), it transforms into pure bliss. This recipe proves that you don’t have to sacrifice flavor or texture when transitioning to a vegan lifestyle.

One of the many beauties of this recipe lies in its adaptability. The sauce and pasta base are incredibly flexible, allowing you to tailor them precisely to your taste and available ingredients. Need a gluten-free option? Simply swap in your favorite gluten-free pasta. Concerned about nuts? Choose a nut-free non-dairy cream or blend pumpkin seeds for a creamy base. For those avoiding soy, mushrooms or seitan make fantastic alternatives to soy curls, ensuring everyone can enjoy this incredibly satisfying meal.

Easy, quick, and undeniably delicious – let’s embark on making this magnificent meal!

  • Rich & Creamy Texture: The cashew-based sauce delivers an irresistibly smooth and luxurious creaminess that coats every strand of pasta and every savory soy curl.
  • Flavor Explosion: The combination of garlic, sun-dried tomatoes, and a blend of Italian herbs creates a deeply aromatic and savory profile that’s truly addictive.
  • Dietary Inclusivity: Easily adaptable to be gluten-free, soy-free, and nut-free, making it suitable for a wide range of dietary preferences and restrictions.
  • Nutrient-Dense: Packed with vegetables like spinach and flavorful spices, this meal is not only delicious but also provides essential nutrients.

Essential Ingredients and Smart Substitutions

To create this magnificent pasta, you’ll need a few key components. Let’s break them down and explore some flexible substitutions:

For the Pasta:

  • Farfalle or Fettuccine: These shapes are excellent for holding the creamy sauce. However, feel free to use any pasta shape you prefer – penne, rigatoni, spaghetti, or even rotini would work beautifully.
  • Gluten-Free Option: Simply use your preferred brand of gluten-free pasta to make this dish suitable for those avoiding gluten. The cooking instructions for gluten-free pasta often vary slightly, so always follow the package directions.

For the “Chicken” Element:

  • Soy Curls: These amazing dehydrated soy pieces are the star here. They absorb flavors wonderfully and provide a fantastic meaty texture. They are typically rehydrated in broth and then pan-fried until slightly crispy.
  • Soy-Free Alternatives: If you’re avoiding soy, there are excellent options:
    • Mushrooms: Sliced cremini or shiitake mushrooms can be sautéed until golden brown, adding an umami depth.
    • Seitan: Known for its robust, chewy texture, seitan can be chopped and pan-fried.
    • Firm or Extra-Firm Tofu: Press the tofu well to remove excess water, then cube and pan-fry until golden and firm.

For the Creamy Sauce:

  • Cashew Milk: This forms the base of our incredibly creamy sauce. It’s easily made by blending raw cashews with water until smooth. For a saucier pasta, use a slightly higher ratio of cashews to water. Soaking the cashews beforehand can lead to an even smoother consistency.
  • Nut-Free Alternative: For those with nut allergies, you have a few options:
    • Nut-Free Non-Dairy Cream: Many brands offer oat, soy, or coconut-based cooking creams that work well.
    • Homemade Seed-Based Cream: Blend 1/4 cup pumpkin seeds (or sunflower seeds), 1.5 tablespoons all-purpose flour (or a gluten-free blend), and 1.25 cups of water until perfectly smooth. This creates a rich, thick cream.
  • Sun-Dried Tomatoes: These are crucial for the signature Tuscan flavor. Use oil-packed sun-dried tomatoes for the best flavor and tenderness. Chop them finely to distribute their intense taste throughout the sauce.
  • Fresh Baby Spinach: Adds a lovely pop of color and a boost of nutrients, wilting down beautifully into the hot sauce.
  • Nutritional Yeast or Vegan Parmesan: These ingredients provide a cheesy, umami depth that is essential for a truly decadent creamy pasta sauce.

Aromatic & Flavor Enhancers:

  • Garlic: Lots of it! Freshly chopped garlic is vital for the savory, aromatic base.
  • Vegetable Broth: Used to rehydrate the soy curls and enhance the overall savoriness of the dish. A vegan “chicken-flavored” broth can deepen the umami profile even further.
  • Poultry Seasoning: Despite its name, most poultry seasoning blends are entirely plant-based and consist of herbs like sage, thyme, rosemary, and marjoram, which add a wonderfully savory and aromatic quality. If you don’t have it, a blend of sage, onion powder, garlic powder, and thyme works perfectly.
  • Smoked Paprika: Adds a beautiful smoky depth and a touch of warmth to the sauce.
  • Italian Herbs: Oregano and thyme (or a ready-made Italian blend) are essential for that classic Mediterranean flavor profile.
  • Salt & Black Pepper: To taste, enhancing all the other flavors.
  • Olive Oil: For sautéing and adding a rich mouthfeel.

This Creamy Sun Dried Tomato Pasta features savory Garlic Soy Curls, offering 20g of protein per serving. It’s a delightful vegan take on Tuscan Garlic “Chicken” Pasta, ready in just 30 minutes. Options are available to make it soy-free (using mushrooms or seitan), gluten-free, and nut-free.

Ingredients

  • 7 to 8 oz farfalle or fettuccine (or other pasta), cooked according to package instructions
  • 3 oz soy curls, or other vegan “chicken” substitutes, or mushrooms for soy-free
  • 1/2 cup veggie broth or vegan chicken-flavored broth
  • 3/4 tsp poultry seasoning, or 1/4 tsp each of dried sage, onion powder, garlic powder, thyme
  • 2 tsp oil
  • 4 cloves of garlic, finely chopped
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp poultry seasoning, optional, for extra flavor
  • 1.5 cup cashew milk, (made from 1/3 cup raw cashews blended with 1.25 cups water). Use 2 cups cashew milk (1/2 cup cashews + 1.5 cups water) for a saucier result.
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp each of dried oregano and thyme, or 1 tsp Italian blend
  • 1 tbsp extra virgin olive oil
  • 1/4 cup or more chopped sun-dried tomatoes
  • 3 to 5 oz baby spinach, or chopped fresh spinach
  • 2 tbsp nutritional yeast or 2-3 tbsp vegan parmesan
  • fresh thyme or basil for garnish

Instructions

  • Begin by preparing your soy curls (or chosen substitute). Heat water or veggie broth until it’s just about boiling. In a bowl, combine the dried soy curls with this hot broth, garlic powder, and the initial measure of poultry seasoning. Stir well to ensure all curls are submerged and let them sit for 10 minutes. Stir once or twice during this time to help them rehydrate evenly. If using other vegan “chicken” substitutes like seitan, you can skip this rehydration step. For mushrooms or pressed tofu, simply proceed to the next cooking step.
  • While the soy curls are rehydrating, cook your pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat 2 teaspoons of oil over medium heat. Once the soy curls are rehydrated, gently squeeze them to remove any excess water. Add the squeezed soy curls to the hot skillet and cook for 3 to 5 minutes, stirring occasionally, until some edges are golden brown and slightly crispy. If you’re using mushrooms, cook them until their moisture has evaporated and they’ve browned nicely (this might take a bit longer).
  • To the skillet with the cooked soy curls, add the finely chopped fresh garlic and black pepper. Stir well for about 30 seconds until the garlic becomes fragrant, being careful not to burn it. Then, add the smoked paprika and the optional extra poultry seasoning. If you’d like to add more vegetables such as finely diced red bell pepper or zucchini, now is the time to add them and cook for another 2 minutes until slightly tender-crisp.
  • Pour in the cashew milk (or your chosen nut-free cream), then add the salt, garlic powder, onion powder, oregano, and thyme. Mix all ingredients thoroughly to combine. Bring the sauce to a gentle boil, then reduce the heat to a simmer. Allow it to cook for a few minutes, stirring occasionally, for the flavors to meld and the sauce to thicken slightly.
  • Add the chopped sun-dried tomatoes, fresh baby spinach, and nutritional yeast (or vegan parmesan) to the simmering sauce. Stir until the spinach wilts down and the nutritional yeast is fully incorporated. Bring it back to a gentle boil briefly. Taste the sauce and adjust seasonings as needed – you might want more salt, a pinch more garlic or onion powder, or extra Italian herbs. For a bright finish, consider adding a hint of lemon zest. Finally, fold in the cooked pasta, tossing gently to ensure every piece is coated in the creamy, flavorful sauce. Remove the skillet from the heat, cover it, and let it rest for a minute to allow the flavors to deepen and the pasta to absorb some of the sauce. Garnish generously with fresh herbs like thyme or basil before serving. This pasta pairs beautifully with a side of crusty garlic bread.

Notes

Gluten-Free: Ensure you use certified gluten-free pasta and any other ingredients that might contain hidden gluten.

Soy-Free: Substitute soy curls with sautéed mushrooms, seitan, or well-pressed, pan-fried tofu. Always check ingredients if buying pre-made substitutes.

Nut-Free: Opt for a nut-free non-dairy cooking cream (like oat or coconut cream) or create a homemade cream by blending 1/4 cup pumpkin seeds, 1.5 tbsp flour, and 1.25 cups of water until perfectly smooth.

Sauce Consistency: If you prefer an even thinner sauce, add a splash more vegetable broth or non-dairy milk at the end. For a thicker sauce, let it simmer a little longer.

Spice Level: For a touch of heat, add a pinch of red pepper flakes along with the garlic and black pepper.

Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop with a splash of water or broth to restore creaminess.
