Ingredients

  • 1 cup sprouted or cooked chickpeas, I used sprouted over 1.5 days
  • 1/2 cup sprouted or cooked Quinoa, I used Alter Eco rainbow Quinoa, sprouted over 1 day
  • 1 cup chopped Chard , or Kale
  • 2 Tablespoons organic oil of choice, I used 1 Tbsp virgin coconut and 1 Tbsp extra virgin olive oil
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon salt or to taste
  • 2 cloves of garlic
  • 1/2 teaspoon Chana masala spice blend, also called chole masala in Indian stores or Garam masala or curry powder
  • 1 dried red chili , or to taste or skip

Toppings

  • 1/2 to 2/3 cup small cauliflower florets, 1 inch or smaller
  • 1/3 cup Grape tomatoes
  • Chopped cilantro, optional, I can’t imagine anything chickpea without some cilantro 🙂

Sauce

  • 1 medium tomato
  • 1 garlic clove
  • spices and herbs of choice, I added cumin, ginger powder, chopped cilantro, lemon juice, salt, pepper
  • 1 teaspoon olive oil
  • Or use other sauces like marinara or pesto

Instructions

Method

  1. Pulse all ingredients for the crust in a food processor until a thick, doughy batter is formed. Ensure the mixture is well combined but not overly smooth, leaving some texture from the chickpeas and quinoa.
  2. Spread the thick batter evenly on a parchment-lined baking sheet. Use a circular motion to achieve a uniform thickness of about 1/4 inch. For a sturdier and less wet crust, you can mix in 1-2 tablespoons of flaxmeal or another dry seed meal into the batter before spreading.
  3. Preheat your oven to 375 degrees F (190°C). Bake the crust for 15 minutes to allow it to firm up slightly.
  4. While the crust bakes, prepare your sauce. Pulse one medium tomato, one garlic clove, and your preferred spices and herbs (such as cumin, ginger powder, fresh cilantro, lemon juice, salt, and pepper) in a food processor until you get a coarse mixture. Stir in 1 teaspoon of olive oil. Alternatively, use a pre-made marinara or pesto sauce for convenience.
  5. Prepare the cauliflower topping. Toss the small cauliflower florets with salt, pepper, and a small amount of the prepared tomato sauce. Marinate briefly while the crust pre-bakes. (If using a store-bought sauce for the base, simply coat cauliflower in olive oil, salt, and pepper.)
