Ingredients

  • 1/2 cup lentils, wash and soak for 10 mins
  • 2 cups water
  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1/2 medium red onion, chopped
  • 3 cloves of garlic chopped
  • 1 hot green chile like Serrano, chopped
  • 1/2 tsp coriander powder or seeds
  • 1/2 tsp black peppercorns, or use 1/2 tsp freshly ground black pepper
  • 1/3 tsp fenugreek seeds, or powder
  • 1/4 or more tsp cayenne
  • 1/4 tsp cinnamon
  • 1/2 to 1 tsp turmeric
  • 1/2 green bell pepper, chopped small
  • 1 large tomato, chopped
  • 1/2 tsp or more salt
  • 3/4 cup small florets of broccoli
  • cilantro and lemon for garnish

Instructions

  1. Prepare Lentils: Begin by thoroughly draining the soaked lentils. Transfer them to a pressure cooker, Instant Pot, or a sturdy saucepan with the specified amount of fresh water.
  2. Pressure Cooker Method: Secure the lid and cook on high pressure for 11 to 12 minutes. Alternatively, if using a traditional pressure cooker, cook until two whistles are heard over high heat, then reduce heat to low and simmer for an additional 8 minutes. Allow the pressure to release naturally for optimal texture.
  3. Saucepan Method: If using a saucepan, partially cover and cook over medium heat for approximately 20 minutes. Subsequently, reduce the heat to medium-low and continue to simmer for about 10 minutes, or until the lentils are beautifully tender.
  4. Temper Spices (Tadka): Meanwhile, heat the oil in a separate skillet over medium heat. Once the oil is hot, add the mustard seeds and allow them to start sputtering, indicating they are releasing their flavor (this usually takes a few seconds if the oil is adequately heated).
  5. Sauté Aromatics: Add the chopped onion, minced garlic, and green chile to the skillet. Sauté until the onions become translucent and softened, which typically takes about 5 minutes. Stir occasionally to ensure even cooking.
  6. Grind and Add Spices: In a small blender, spice grinder, or using a mortar and pestle, grind together all the remaining dry spices (coriander, black peppercorns, fenugreek, cayenne, cinnamon, and turmeric) until finely blended. Add this aromatic spice mixture to the skillet with the sautéed aromatics. Mix well and cook for just one minute to toast the spices and deepen their flavors.
  7. Incorporate Vegetables: Stir in the chopped tomatoes and bell pepper. Add a small splash of water to prevent sticking and help the vegetables cook down. Continue to cook for 4 to 5 minutes, or until the tomatoes are tender and have broken down slightly.
  8. Combine with Lentils: Carefully transfer the flavorful sautéed mixture from the skillet into the simmering lentils. Add a little water to the skillet, swirl it around to pick up any remaining spices, and add this to the lentils to capture every bit of flavor. (Alternatively, if you are adding pre-cooked lentils, simply add them to the skillet with the spice mixture and adjust consistency with water as needed).
  9. Finish and Serve: Add salt to taste and the broccoli florets to the lentil mixture. Bring the soup to a gentle boil over medium heat, then continue to cook for another 2-3 minutes, allowing the broccoli to become tender-crisp. Taste and adjust the seasoning, adding more salt or a pinch of cayenne if desired. For your preferred consistency, add more water if you like a thinner soup, or simmer longer for a thicker dal. Cover the pot and let it rest for another 2 minutes before serving. Garnish generously with fresh cilantro and a squeeze of lemon juice. Coconut shreds and extra cayenne/pepper flakes also make wonderful garnishes. Serve this nourishing dal soup as a standalone meal or over a bed of warm rice or quinoa.
