Instructions

  • Add the bay leaves, chili powder, cumin, smoked paprika, cocoa powder, onion powder, and the remaining salt. Cook the spices 1–2 minutes to toast and deepen their flavor.
  • Add the soaked, drained kidney beans, lentils, and 2 cups water or stock. Stir well to ensure nothing is stuck to the bottom. Turn off sauté, close the lid, and pressure cook on bean mode for 1 hour.
  • Allow a natural pressure release, open the lid, and check the beans. If they need more time, pressure cook another 15–20 minutes. Taste and adjust salt (adding too much salt early can slow bean cooking). Thin with extra water if too thick and add more chili powder or smoked paprika if you want more heat or smokiness. Finish with a squeeze of lime.
