Discovering the Irresistible Charm of Breaded Brussels Sprouts

There’s a common misconception that Brussels sprouts are a challenging vegetable to love, often relegated to simple roasted side dishes. However, this recipe unveils a truly remarkable transformation, turning these miniature cabbages into crispy, golden-brown delights that will make even the most skeptical eaters ask for more. The inspiration for this unique preparation came from seeing similar breaded zucchini and eggplant dishes, prompting the idea to apply the same irresistible technique to Brussels sprouts.

Instead of the usual suspects, we’re giving Brussels sprouts a starring role, proving just how versatile and flavorful they can be. If you’ve previously explored other exciting Brussels sprout recipes, like the rich and aromatic Brussels Sprouts in a Simple Tomato Curry, you already know the potential these greens hold. What makes these breaded Brussels sprouts truly exceptional is their simple, yet ingenious, coating. Using finely ground rice flakes and chickpea flour creates a naturally gluten-free breading that bakes up beautifully crisp in the oven. This method ensures a light, satisfying crunch without the need for deep-frying, keeping the dish healthy and relatively low in fat. The subtle blend of spices infused into the breading complements the inherent earthy flavor of the sprouts, creating a harmonious and addictive topping.

These crispy, breaded Brussels sprouts are the ultimate topping for this delightful and easy pasta dish, bringing an unexpected crunch and depth of flavor.

Ingredients

For the Breaded Brussels Sprouts:

  • 1/2 cup thin rice flakes, ground coarsely
  • 2 tbsp chickpea flour
  • 1 teaspoon flaxmeal
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon dried basil or spice mix of choice
  • 1/4 teaspoon cayenne or black pepper, or to taste
  • 3-5 Tablespoons warm-hot water
  • 1/2 teaspoon oil
  • 8 Brussels sprouts, stems cut, halved, and outer leaves removed

For the Pasta:

  • 2 cups of any pasta of choice (use gluten-free pasta for a GF dish)

For My Simple Tomato Basil Sauce:

  • 1 teaspoon olive oil
  • 3 cloves garlic, finely chopped
  • 1/2 teaspoon chili flakes
  • 3 medium tomatoes, finely chopped
  • 3-4 Tablespoons of chopped fresh basil leaves
  • Salt to taste (approximately 1/2 teaspoon)

Instructions

Breaded Brussels Sprouts:

  1. In a bowl, combine all ingredients for the breaded Brussels sprouts, except the Brussels sprouts themselves, to form a thick, pasty mixture. Let it sit for a minute to allow the flaxmeal to absorb moisture.
  2. Carefully coat each halved Brussels sprout with the mixture. The batter might not be overly sticky, so gently press on both sides to ensure thorough coverage. Adjust the water or chickpea flour slightly if needed to achieve a workable consistency.
  3. Arrange the coated Brussels sprouts on a parchment-lined baking sheet, with the halved side facing up.
  4. Bake in a preheated oven at 365°F (185°C) for 20-25 minutes, or until the breading is dry, golden, and some of the outer leaves begin to crisp and brown.

Pasta:

  1. Cook 2 cups of your chosen pasta according to package directions. Drain and set aside.
  2. Once cooked, toss the pasta with the freshly made tomato basil sauce. For a different flavor profile, you can also use a pesto sauce instead.
  3. Serve the pasta topped generously with the crispy breaded Brussels sprouts, a sprinkle of nutritional yeast (optional for a cheesy flavor), and additional chopped fresh basil for garnish.

My Simple Tomato Basil Sauce:

  1. Heat 1 teaspoon of olive oil in a pan over medium heat. Add the 3 cloves of finely chopped garlic.
  2. Sauté the garlic for about 1 minute until fragrant but not browned.
  3. Stir in 1/2 teaspoon of chili flakes and the 3 finely chopped medium tomatoes.
  4. Cover the pan and cook for 5 minutes, allowing the tomatoes to soften.
  5. Remove the lid and add 3-4 Tablespoons of chopped fresh basil leaves (or 1 teaspoon of dried basil) and salt to taste (starting with about 1/2 teaspoon).
  6. Mix everything well and continue to cook for another 5 minutes, or until the tomatoes have broken down into a mushy, delicious sauce.

More Tips for a Perfect Plant-Based Pasta

Choosing Your Pasta Wisely

The beauty of this recipe lies in its adaptability. While any pasta shape works wonderfully, consider varieties like penne, fusilli, or rotini, as their ridges and curves are excellent for catching the rich tomato basil sauce and tiny crispy bits of Brussels sprouts. If you’re opting for a gluten-free meal, the market now offers an impressive array of high-quality gluten-free pasta made from corn, rice, lentils, or chickpeas. Ensure you cook your chosen pasta al dente – tender but with a slight bite – as it will continue to absorb flavors from the sauce. A perfectly cooked pasta base is crucial for the overall success of this satisfying meal.

Enhancing Your Tomato Basil Sauce

Our simple tomato basil sauce provides a fresh and robust foundation, but feel free to customize it to your preference. For an extra layer of depth, you might add a splash of red wine during the cooking process, allowing it to reduce and intensify the flavors. A pinch of dried oregano or Italian seasoning can complement the basil beautifully. If you enjoy a touch of sweetness, a teaspoon of sugar or a finely grated carrot can balance the acidity of the tomatoes. For a creamier texture, stir in a spoonful of vegan cream cheese or a dash of plant-based milk towards the end of cooking. Always taste and adjust seasonings, as the quality and ripeness of tomatoes can vary.

The Art of the Breading

The rice flake and chickpea flour breading is a fantastic gluten-free alternative to traditional breadcrumbs. The key is achieving a coarse grind for the rice flakes, which provides that desirable crunch. If you don’t have rice flakes, you can experiment with finely crushed cornflakes (ensure they are gluten-free if needed) or even a mix of gluten-free breadcrumbs and nutritional yeast for a cheesy undertone. The flaxmeal acts as a binder, helping the coating adhere to the Brussels sprouts. Don’t be afraid to add your favorite dried herbs to the breading mix – a pinch of thyme or rosemary could introduce new aromatic dimensions to your crispy sprouts.

Serving Suggestions and Pairings

This Breaded Brussels Sprouts Pasta is a complete meal on its own, offering a balance of carbohydrates, protein, and vegetables. However, it pairs wonderfully with a light side salad dressed with a simple vinaigrette to add freshness. For a more substantial meal, consider serving it alongside some crusty garlic bread (vegan, of course!) or a side of steamed greens like spinach or kale. A sprinkle of vegan Parmesan cheese over the finished dish can also add an extra layer of umami and richness that complements the tomato basil sauce beautifully.

Meal Prep and Storage

As mentioned earlier, the breaded Brussels sprouts are excellent for meal prep. You can bake them in advance and store them in an airtight container in the refrigerator for up to 3 days. To reheat and regain crispness, pop them back into a hot oven or an air fryer for a few minutes. The tomato basil sauce can also be made a day or two ahead and stored in the fridge. When you’re ready to serve, simply cook your pasta, gently reheat the sauce, and warm the Brussels sprouts for a quick and satisfying dinner.
