For many years, the quest for a truly satisfying vegan cheese has been a culinary challenge. While many wonderful recipes exist, they often depend heavily on nuts like cashews for creaminess and thickening, or agar-agar for setting. This can be problematic for those with nut allergies or who prefer to avoid certain thickeners. After successfully experimenting with my almond milk pepper jack, I was inspired to rethink the entire thickening process. My attention was drawn to an unexpected hero: chickpea flour. During a week of making chickpea tofu, the remarkable texture and setting capabilities of chickpea flour became undeniably apparent.
The Secret Ingredient: Chickpea Flour
And so, chickpea flour steps in to save the day once again! This humble, gluten-free legume flour possesses exceptional thickening and setting properties, making it an ideal base for a firm, sliceable vegan cheese. When combined with a thoughtfully curated blend of nacho cheese flavors, the result is nothing short of spectacular. The unique texture and binding power of chickpea flour create a smooth, custard-like consistency when cooked, which then sets beautifully as it cools.
This versatility means you’re not limited to just nacho cheese. Chickpea flour can be adapted to create other flavorful vegan cheeses, particularly those with bold, complex taste profiles that complement its inherent “custard-y” undertones. The robust flavors found in nacho cheese help mask any subtle chickpea flour taste, making it disappear into a delicious cheesy experience. While it might not be the best fit for simpler, milder cheeses like mozzarella or ricotta, its strength shines in recipes where strong seasonings are desired.
A Cheese That Holds Its Shape: Perfect Slices and Shreds
One of the most impressive qualities of this vegan nacho cheese is its structural integrity. Unlike some dairy-free alternatives that melt into an oily puddle, this cheese maintains its form. When exposed to high heat, it softens to a custard-like consistency but quickly re-sets as it cools. This characteristic makes it incredibly versatile: you can easily make neat slices for sandwiches or blocks that can be beautifully shredded for topping your favorite dishes. What’s more, this recipe contains no added oil, offering a lighter, healthier option. However, if you prefer a greasier texture, a touch of oil can certainly be incorporated to achieve that classic cheesy mouthfeel.
Flavorful and Customizable: Beyond the Basic Nacho
At first glance, the ingredient list might appear extensive, but a closer look reveals it’s predominantly a vibrant array of spices and seasonings. These are crucial for building that authentic, irresistible nacho cheese flavor. For those seeking a simpler approach, you could experiment with a less complex “cheddar” flavor profile using ingredients like nutritional yeast (nooch), sun-dried tomatoes, garlic, miso, and prepared mustard. As with any culinary endeavor, if a particular ingredient isn’t to your liking, don’t hesitate to adjust! And remember, if the cheese doesn’t turn out exactly as expected, don’t discard it. Shred it and fold it into my chickpea omelet for a delicious, savory boost.
These Nut-Free Vegan Nacho Cheese Slices are a true dietary marvel. They are completely free from nuts, oil, agar, traditional thickeners, seeds, gluten, and grains, making them an inclusive option for almost any diet. Imagine them in a grilled sandwich, paired with black beans, creating a truly satisfying and wholesome meal. A dedicated recipe for the sandwich will be shared shortly!

The Simplicity of Modern Vegan Living
On a related note, the ease of being vegan these days often surprises people. Just yesterday, my husband mentioned, “We have a BBQ team picnic tomorrow.” My immediate thought was, “You should definitely take something along to share.” His response, however, perfectly illustrated the changing landscape of dietary inclusivity: “The organizer already knows I’m vegan; there will be plenty of options. Last time I went and ate everything, she was actually quite upset that I didn’t bring anything to contribute!” I had to roll my eyes, but it’s a testament to how commonplace and well-understood veganism has become, especially in larger, progressive environments like the tech company where he works.
Step-by-Step Guide to Crafting Your Vegan Nacho Cheese
Creating this delicious nut-free vegan nacho cheese is surprisingly straightforward. The key lies in blending the ingredients thoroughly and then cooking the mixture to perfection until it achieves that desirable custard-like consistency.
Steps:
Combine all listed ingredients in a blender and process until completely smooth. Then, transfer the mixture to a pan and cook, stirring continuously, until it transforms into a thick, uniform custard.

Once cooked, transfer the warm mixture to a greased pan or a pan lined with parchment paper. Gently pat it down to your desired thickness using another piece of parchment or a rolling pin. Allow it to cool thoroughly before slicing.

Slice the chilled cheese into wedges, squares, or any shape you prefer, and enjoy immediately.

For shredded cheese, pour the cooked mixture into a greased deep small container and chill it for at least an hour in the refrigerator. The longer it chills, the firmer it will become, making it easier to shred. And yes, it truly shreds beautifully!

Nut Free Vegan Nacho Cheese Slices. Gluten-free Recipe

Ingredients
- 1/2 cup chickpea flour
- 1 garlic clove
- 1/2 tsp each of garlic powder, onion powder, mustard powder
- 1/4 tsp cumin powder
- 1/2 Whole pickled jalapeno, or 2 slices
- 2 Tbsp roasted red pepper , or roasted pimento pepper
- 2 Tbsp chopped tomato
- 1/3 tsp salt
- 1/2 tsp smoked paprika
- 1/2 to 1 chipotle pepper in adobo sauce, use 1/2 tsp chipotle powder if you cannot find gf canned peppers
- 2 Tbsp nutritional yeast
- 1 to 1.5 tsp lemon juice
- 1/2 tsp vinegar, apple cider or white
- 3/4 to 1 cup water
- chopped Jalapeno and pepper flakes
Instructions
-
Put everything in a blender and blend until fully combined. Use 3/4 cup water for a shreddable block, 1 cup water for slices.
-
Add to a thick-bottomed pan, and heat at medium-low heat. Stir frequently to prevent sticking.
-
The mixture will gradually start to thicken and might become slightly lumpy before smoothing out. Continue stirring until it becomes a thick, even custard. After it reaches this custard-like consistency, cook for another 2-3 minutes to ensure the chickpea flour is thoroughly cooked. It’s crucial to stir continuously during this stage. You can carefully taste the mixture at this point and adjust salt, spices, or tanginess if needed. Cook a bit longer if you are unsure, as properly cooked chickpea flour is essential to avoid a raw, bitter taste in the final slices.
-
If using, add the chopped jalapeno and pepper flakes and mix them in.
-
Transfer the hot mixture to a greased brownie pan or a pan lined with parchment paper.
-
Lightly spray oil on top (optional, for easier pressing). Place another piece of parchment on top and press the mixture down to form a thin square, or use a rolling pin for an even surface.
-
Chill for at least an hour in the refrigerator. Once firm, slice and use, or store refrigerated for up to 5 days.
-
Alternatively, transfer the mixture to a greased deep small container. Chill for an hour or more before shredding.
-

* If you plan to add more moisture to your cheese, such as a generous amount of salsa or very juicy tomatoes, it’s advisable to stick to 3/4 cup of water in the recipe to ensure the cheese sets firmly. This cheese continues to set and firm up as it cools, so storing it in the refrigerator for a few hours will result in a sturdier product.
* Feel free to experiment with the spices and other flavorings. Minor adjustments typically won’t significantly alter the cheese’s structure. For an added layer of umami depth, consider incorporating a tablespoon of white miso paste. You can also vary the type of peppers, opting for milder ones if you prefer less heat.
* The cooking time can vary depending on your stove’s heat distribution and the type of pan you use. Generally, cooking at medium heat is suitable, but it’s crucial to keep a watchful eye and stir continuously to prevent the mixture from sticking and burning at the bottom. The total cooking time usually ranges from 7 to 9 minutes, or until it reaches the desired thick, custard-like consistency.
