The Secret Behind the Unbeatable Flavor and Texture

What makes this vegan cheese sauce so incredibly good? It starts with a base of creamy vegetables: humble potatoes, along with cauliflower or zucchini, and bright carrots. These vegetables provide a natural creaminess and body, allowing us to create a rich texture without heavy oils or artificial ingredients. Potatoes, especially Yukon golds, contribute a starchy richness, while cauliflower (or zucchini) adds a subtle sweetness and helps achieve that silky-smooth consistency once blended. Carrots not only lend a beautiful golden hue but also a touch of natural sweetness that perfectly balances the savory notes.

To amplify the creaminess and richness, raw cashews are incorporated. When cooked and blended, cashews create an unparalleled luxurious mouthfeel, mimicking the fat content of traditional cheese sauces. For those with nut allergies or who prefer a nut-free option, don’t worry! We’ve provided simple substitutions, such as pumpkin seeds, to achieve a similar velvety texture and rich flavor profile.

Beyond the creamy base, a carefully selected blend of seasonings elevates this sauce to gourmet status. Ground mustard provides that characteristic tangy, sharp “cheesy” bite, while garlic powder and onion powder lay down a foundational savory aroma. But the true magic lies in two key umami-boosting ingredients: miso paste and nutritional yeast. These two additions are non-negotiable for achieving that deep, savory, and truly cheesy flavor.

Nutritional yeast, often affectionately called “nooch” in the vegan community, is a deactivated yeast that boasts a distinct nutty, cheesy flavor. It’s completely different from the active dry yeast used in baking and is a staple in most vegan pantries. You can easily find it online or in the natural foods aisle of most grocery stores. Its ability to impart a cheesy essence to dips, sauces, and even roasted vegetables is truly addictive. Miso paste, a fermented soybean paste, adds another layer of profound umami, deepening the savory notes and rounding out the flavor profile. If you’re soy-free, chickpea miso works wonderfully as an alternative. A splash of lemon juice and a touch of pickle juice or vinegar provide essential acidity, brightening the flavors and cutting through the richness, preventing the sauce from tasting flat. Finally, a small amount of all-purpose flour or tapioca starch (for gluten-free versions) is added post-cooking to ensure the perfect, thick consistency.

Effortless Preparation: Instant Pot & Stovetop Methods

One of the greatest advantages of this vegan cheese sauce is its incredible ease of preparation, especially when using an Instant Pot. The process is remarkably straightforward, making it perfect for busy weeknights or when you need a delicious sauce without much fuss.

Instant Pot Method: Dump, Cook, Blend, Done!

The Instant Pot streamlines the cooking process to a simple “dump, cook, and blend” method. You literally combine all the main ingredients – cashews, potatoes, carrots, cauliflower/zucchini, salt, lemon juice, garlic, mustard, miso, black pepper, pickle juice, nutritional yeast, and water – directly into the Instant Pot. A little tip: mix the miso paste with the water first to ensure it dissolves thoroughly and prevents clumping before adding the rest of the ingredients. Once everything is in, seal the lid, set it to high pressure, and cook for just 11 minutes. The Instant Pot handles all the work, perfectly softening the vegetables and cashews.

After the pressure cooking cycle completes, allow for a natural pressure release. This crucial step helps the ingredients continue to cook gently and ensures the best texture. Once the pressure has fully released, carefully open the lid. Let the mixture cool for a few minutes before transferring it to a high-speed blender. At this stage, you’ll add the oil, onion powder, and your chosen thickener (flour or tapioca starch). Blend everything until it transforms into an incredibly smooth, velvety, and irresistible cheese sauce. It’s truly that simple!

Stovetop Method: A Classic Approach

For those who prefer a more traditional cooking method or don’t own an Instant Pot, this vegan cheese sauce can also be made on the stovetop with excellent results. The principle remains similar: cook the ingredients until tender, then blend. You’ll add all the core ingredients (cashews, potatoes, carrots, cauliflower/zucchini, salt, lemon juice, garlic, mustard, miso, black pepper, pickle juice, nutritional yeast) to a saucepan with 2.5 cups of water (more than the Instant Pot method to account for evaporation). Partially cover the pot and simmer over medium heat until the potatoes and vegetables are fork-tender. Once cooked, let the mixture cool slightly, then transfer it to a blender with the oil, onion powder, and flour/starch, blending until perfectly smooth. Both methods deliver a fantastic sauce, so choose what works best for your kitchen!

Once blended, your vegan cheese sauce is ready for immediate use, or it can be stored for later. If you plan to serve it warm, for instance, over roasted vegetables, simply return it to the Instant Pot (on sauté mode) or a saucepan and gently simmer for a few minutes until it thickens to your desired consistency. Always taste and adjust seasonings like salt and lemon juice as needed. For the best flavor, allowing the sauce to chill for a bit can help the various notes meld beautifully, creating an even more complex and satisfying taste.

Instant Pot Vegan Cheese Sauce

Prep: 10 mins | Cook: 11 mins | Pressure release: 15 mins | Total: 36 mins

Servings: 6 | Course: Appetizer, Side | Cuisine: American

The best Vegan Cheese Sauce made with veggies and made in the Instant Pot! It’s perfect for making classic mac and cheese but also tastes amazing with veggies, rice, baked potato, or as a base for dairy-free cheese dips. Gluten-free & nut-free option. Stovetop option also included.

Ingredients

  • 1/2 cup raw cashews, (see note for Nut-Free option)
  • 1.5 cups peeled cubed Yukon gold potatoes
  • 1/4 cup peeled chopped carrots
  • 1/3 cup chopped cauliflower florets, (or peeled chopped zucchini)
  • 3/4 tsp salt
  • 1.5 tsp lemon juice
  • 3 cloves garlic
  • 1 tsp stone ground mustard
  • 1-2 tsp yellow or white miso, (use chickpea miso for Soy-Free)
  • 1/4 tsp black pepper
  • 2 tsp pickle juice or 1/2 tsp vinegar
  • 1/4 cup nutritional yeast
  • 1.5 cups water

To add later:

  • 1 tbsp oil
  • 1/4 tsp onion powder
  • 2 tsp all purpose flour or tapioca starch (for gluten-free)

Instructions

  • Add all the ingredients, except the oil and onion powder, to the Instant Pot with 1.5 cups of water. (Tip: Add miso, mustard, and water first and mix well so miso doesn’t clump up, then add the rest). Mix thoroughly, close the lid, and pressure cook for 11 minutes.

  • Let the pressure release naturally for 15 minutes, then open the lid. Allow the mixture to cool for a few minutes before transferring it to a blender. Add the oil, onion powder, and flour/starch. Blend until completely smooth and creamy.

  • You can store this mixture for later use in dishes like vegan mac & cheese. If serving immediately over roasted veggies or as a warm dip, simply add it back to the Instant Pot (on sauté mode) or a saucepan and simmer for a few minutes to thicken. Taste and adjust salt and flavor as desired. This sauce benefits from chilling briefly for the flavors to meld more intensely.

  • Refrigerate for up to 4 days. Freeze for up to a month. To reheat, gently bring to a boil to thicken (freezing may cause a bit of separation, which will smooth out again upon reheating).

  • Saucepan Method: To make the cheese sauce on the stovetop, add all the ingredients and 2.5 cups water (instead of 1.5 cups) to a saucepan. Partially cover and cook over medium heat until potatoes are tender. Then cool slightly and blend with oil, onion powder, and flour or starch until smooth.

Notes

Nut-Free Option: Use 1/3 cup of raw pumpkin seeds or a mix of pumpkin seeds and hemp seeds instead of cashews. You may also add an extra teaspoon of tapioca starch for thickening.

  • For a more intense, vibrant orange color, add a pinch of turmeric.
  • To introduce a delicious smoky note, stir in 1 tsp of smoked paprika or a few drops of liquid smoke after blending.
  • Nutritional Yeast Substitute: If you don’t have nutritional yeast, you can substitute with 1 additional teaspoon of miso paste, though the cheesy flavor may be less pronounced.

To Make Mac and Cheese:

  • 2 tsp vegan butter or oil (to grease the pot)
  • 8 ounces Elbow pasta
  • 2 1/4 cups of water
  • 1/4 teaspoon salt
  • 1/8 tsp garlic powder

Add pasta, water, salt, and garlic powder to the Instant Pot (greased with vegan butter/oil). Pressure cook for 4 minutes (or half the time indicated on the pasta package plus 1 minute). Carefully quick-release the pressure in short bursts. Check if the pasta is al dente. Add the prepared vegan cheese sauce and press ‘Sauté’. Cook, stirring continuously, until the sauce thickens and coats the pasta beautifully.

Ingredients Deep Dive: Crafting the Perfect Vegan Cheese Sauce

  • A Blend of Cooked Cauliflower and Yukon Gold Potatoes: These humble vegetables form the core of our sauce, providing natural bulk, creaminess, and a smooth base. Potatoes contribute a starchy richness, while cauliflower offers a delicate flavor and aids in achieving that silky texture.
  • Raw Cashews: The secret to an unparalleled creamy texture and rich mouthfeel. When softened and blended, they mimic the luxurious fat content found in traditional cheese sauces.
  • Cooked Chopped Carrots: Not just for a vibrant color! Carrots add a subtle natural sweetness that beautifully balances the savory and tangy elements of the sauce.
  • Salt: Essential for seasoning and enhancing all the other flavors. Adjust to your personal preference.
  • Lemon Juice: A crucial ingredient that provides necessary acidity, brightening the overall flavor and expertly neutralizing any potential “beany” taste from the cashews, mimicking the tang of real cheese.
  • Savory Seasonings (Garlic, Onion Powder, Ground Mustard): These spices build a robust savory foundation. Ground mustard is particularly important for delivering that characteristic sharp, pungent “cheesy” note.
  • Umami Boosters (Miso Paste and Nutritional Yeast): These two ingredients are non-negotiable for an authentic cheesy flavor. Nutritional yeast provides a nutty, cheesy taste, while miso paste adds a deep, savory umami that elevates the sauce’s complexity.
  • Pickle Juice and a Small Amount of Vinegar: Another layer of acidity that adds a complex tang, cutting through the richness and rounding out the flavor profile for a truly authentic taste.
  • All-Purpose Flour or Tapioca Starch: A small amount of either is added post-blending to achieve the perfect thickened consistency. Tapioca starch is an excellent gluten-free alternative.

Expert Tips for Your Best Vegan Cheese Sauce

  • Nut-Free Option: If cashews aren’t an option, substitute them with 1/3 cup of raw pumpkin seeds, or a blend of pumpkin and hemp seeds. These seeds provide a similar fat content and blend into a smooth, creamy consistency. You might also want to add an extra teaspoon of tapioca starch for optimal thickness.
  • Vegetable Variations: Feel free to experiment! Instead of cauliflower, peeled and chopped zucchini works beautifully and offers a lighter flavor.
  • Sweet Potato Alternative: You could use sweet potatoes instead of Yukon gold potatoes for a slightly different flavor profile and a richer orange, almost queso-like color. Just be aware the sweetness will be more pronounced.
  • Color Enhancement: For a more intense, visually appealing orange color, stir in a tiny pinch of turmeric powder while blending. A little goes a long way!
  • Smoky Flavor: To introduce a delicious smoky depth, add 1 teaspoon of smoked paprika or a few drops of liquid smoke to the sauce before the final blend.
  • Transform into Soup: This versatile sauce can easily become a creamy soup! Bring the prepared sauce to a boil, then thin it to your desired consistency by adding more water or vegetable broth. Simmer for about 5 minutes to allow the flavors to meld. Serve hot, topped with crunchy croutons or fresh herbs for a comforting meal.

Step-by-Step: Making Vegan Cheese Sauce in the Instant Pot

Various ingredients for vegan cheese sauce being mixed together in an Instant Pot before cooking.

Begin by adding all your core ingredients to the Instant Pot: the raw cashews, peeled and cubed Yukon gold potatoes, chopped carrots, and cauliflower florets (or zucchini). Follow with the salt, lemon juice, garlic cloves, stone ground mustard, miso paste, black pepper, pickle juice, and nutritional yeast. Pour in 1.5 cups of water. A helpful tip: first, whisk the miso paste into the water until fully dissolved before adding the other ingredients, this ensures it disperses evenly and prevents clumping. Mix everything really well with a spoon to combine. Secure the Instant Pot lid, ensure the venting knob is sealed, and pressure cook on High for 11 minutes.

Once the cooking cycle is complete, allow the Instant Pot to naturally release pressure for at least 15 minutes, then carefully quick-release any remaining pressure. Open the lid and let the cooked mixture cool down for a few minutes. This cooling step is important for safety and for achieving the best blend consistency. Transfer the entire cooked mixture to a high-speed blender. Now, add the oil, onion powder, and your chosen thickener – either all-purpose flour or tapioca starch (for a gluten-free option). Blend on high until the sauce is incredibly smooth, creamy, and completely free of lumps.

Storage and Reheating Guidelines

This vegan cheese sauce is fantastic for meal prepping! Store any leftover sauce in an airtight container in the refrigerator for up to 4 days. If you’ve made a larger batch, it also freezes beautifully. Transfer the cooled sauce to freezer-safe containers or bags and freeze for up to a month. When reheating from the refrigerator or freezer, you might notice a slight separation in consistency. Don’t worry, this is normal! Simply reheat it gently on the stovetop over medium-low heat, stirring frequently, or in the Instant Pot on sauté mode, until it comes to a boil. The heat and stirring will help it return to its wonderfully smooth and creamy texture. Add a splash of water or plant-based milk if needed to reach your desired consistency.
