Crafting a Compassionate & Delicious Vegan Thanksgiving Feast
Eight years ago, a pivotal moment reshaped my life’s trajectory. What began as a challenging personal journey slowly blossomed into a profound passion for plant-based cooking and recipe creation. The kitchen became my sanctuary, a place where I could channel resilience into creativity, transforming ingredients into dishes that bring joy and nourishment. This blog, a testament to that journey, wouldn’t be what it is today without the unwavering support of my incredible husband and family, and of course, you, my cherished readers. Your comments, your enthusiasm, and your shared experiences uplift me, especially on days when standing in the kitchen feels like a monumental task. Thank you for being an integral part of this incredible adventure.
This year, as always, my heart is full of gratitude. I am deeply thankful for the continued growth of this blog, which provides a creative outlet and a platform to connect with a vibrant community. The overwhelming love and positive reception for my cookbook truly humbled me. While anxiety sometimes whispers doubts, reminding me that good things can be fleeting, I find strength in knowing that together, we will always find a way forward. It’s a joy to share this passion, and your feedback fuels my spirit. What are you most grateful for this year?

Beyond the Plate: Supporting Animal Sanctuaries This Holiday Season
As we celebrate a season of gratitude and compassion through plant-based eating, it’s also a powerful reminder to extend our kindness to all living beings. This holiday season, I urge you to consider supporting animal sanctuaries – organizations tirelessly working to rescue, rehabilitate, and provide loving homes for animals in need. Their dedication embodies the true spirit of compassion that veganism champions. Below are two of my absolute favorite sanctuaries that inspire me daily with their unwavering commitment.
WildlifeSOS: A Beacon of Hope for India’s Wildlife
WildlifeSOS is an extraordinary organization that continues to impress with its consistent, impactful efforts to protect India’s wildlife. What sets them apart are their innovative and humane solutions, such as providing alternative training and livelihoods to the Kalandar community. This initiative empowers former “dancing bear” handlers to earn a living without resorting to hunting baby bears, ensuring a brighter future for both humans and animals when their rescued bears are brought to the sanctuary. Their work showcases a deep understanding of interconnected welfare.
More recently, WildlifeSOS has garnered significant attention for its heroic work in rescuing over-worked and illegally owned elephants. These magnificent creatures, many of whom have endured unimaginable torture, shackles, and beatings for 40 to 50 years since birth, were used as begging elephants, passed from owner to owner. Thanks to WildlifeSOS, many of these elephants are now living freely in sanctuaries, slowly learning to trust humans again and experience the joy of a life free from abuse. Their stories are a testament to the power of compassion and dedication.

VSPCA (Visakha Society for Protection and Care of Animals): A Haven for All Creatures
VSPCA (Visakha Society for Protection and Care of Animals) is another organization whose tireless dedication I truly cannot fathom. Day in and day out, their team takes in countless animals – from cows and calves discarded as “unusable” to rehabilitating domestic animals, wild birds like parrots and ducks, and even turtles. They provide shelter for neglected hens, pigs, and other farm animals, offering them a second chance at life. But their mission extends beyond animal rescue; VSPCA also serves vegan meals to the homeless, educates the public, and spreads awareness about animal welfare, embodying a holistic approach to compassion.
VSPCA’s commitment to sustainability is equally admirable. They continually invest in self-sustaining infrastructure to ensure their thousands of animals can live peaceful, secure lives. Their resilience was recently tested during a devastating cyclone, yet they rebuilt and continued caring for all their animals through the pounding storms, demonstrating unparalleled strength and devotion. The selfless work of all the volunteers and workers at VSPCA consistently amazes me, and they will always be an organization I wholeheartedly support. It was an honor to have Phil Wollen visit the sanctuary, a testament to their global recognition for their incredible work, particularly with the Kindness Farm initiative at the sanctuary.
