The Secret to Perfect Pretzel Bites: No Boiling Necessary!
The thought of making homemade pretzels often conjures images of complicated boiling processes involving large pots of baking soda solution. While this method yields a classic pretzel, it can be messy, time-consuming, and frankly, a bit of a deterrent for many home cooks. Our innovative recipe bypasses this step entirely, offering a revolutionary way to achieve that iconic pretzel crust without the fuss.
Instead of boiling, we utilize a simple yet effective brushing technique. First, the pretzel bites are generously brushed with a warm baking soda solution, which initiates the Maillard reaction responsible for that deep, rich brown color and distinct pretzel flavor. Following this, a vegan “egg wash”—a cornstarch-based mixture—is applied. This two-step wash is the secret to a perfectly golden, shiny, and chewy exterior, mirroring the results of traditional methods but with significantly less effort. This means no more standing over a stove, trying to fish out hundreds of small pretzels from a simmering pot. Simply brush, bake, and enjoy!
This streamlined approach makes homemade pretzels accessible to everyone, from novice bakers to seasoned chefs looking for a simpler way to enjoy a classic snack. The result is a batch of pretzel bites that are soft and fluffy on the inside, with that unmistakable crisp, savory crust on the outside.
Versatility in Shape and Size
While we call them “bites,” these pretzels are incredibly versatile. Feel free to shape them however you like! Roll the dough into classic pretzel twists, form them into elongated pretzel sticks, or keep them as convenient, pop-able bites. The beauty of this recipe is its adaptability. Regardless of the shape, the two-wash method ensures a consistent, gorgeous golden and shiny crust that is both delicious and visually appealing. Experiment with different shapes to find your favorite, or make a variety for an impressive snack platter.
And what’s a pretzel without a fantastic dip? We’ve paired these delightful bites with a simple yet incredibly flavorful cashew-based Spicy Mustard Dip. This creamy, tangy, and subtly spicy dip perfectly complements the savory pretzels. Made with raw cashews, it’s dairy-free, offering a rich, cheesy-like texture without any animal products. For an extra layer of flavor and a touch of adult sophistication, consider adding a splash of your favorite beer to the dip—it truly takes it to the next level!

Crafting Your Vegan Pretzel Bites: Step-by-Step Guide
Making these pretzel bites is a rewarding experience, and our simplified method ensures success. Here’s a visual walkthrough of the key steps:
Step 1: Preparing the Pretzel Dough
The foundation of any great pretzel is a well-made dough. Our recipe calls for a soft, pliable dough that’s easy to work with and rises beautifully, creating that signature soft interior.

Step 2: Allowing the Dough to Rise
Patience is a virtue, especially when working with yeast. After kneading, the dough needs time to rise, doubling in size to achieve that light and airy texture characteristic of perfect pretzels.

Step 3: Shaping Your Pretzel Bites
Once risen, the dough is gently patted down and transformed into uniform strips, then cut into individual bites. A pizza cutter makes this process quick and efficient, ensuring consistent sizing for even baking.

Step 4: The Two-Wash Method & Baking
This is where the magic happens! The shaped bites are placed on a parchment-lined baking sheet, ready for their double wash. First, the warm baking soda wash, then the cornstarch wash. A sprinkle of coarse salt, and they’re off to the oven to bake until golden perfection.

Step 5: Serve with Spicy Mustard Dip
The final, glorious step: serving your hot, fresh vegan pretzel bites with the creamy, spicy mustard dip. Get ready for an explosion of flavor and texture that will have everyone reaching for more!

Ingredients
For The Pretzels
- 1 cup warm water
- 1 Tbsp active dry yeast
- 1 Tbsp coconut sugar, or other sugar
- 3 cups unbleached white flour, or all purpose flour + more for dusting
- 1/2-3/4 tsp salt
- 3 Tbsp oil, or melted vegan butter
- 2 tsp coarse sea salt, or kosher salt, for sprinkling
For The Baking Soda Wash
- 1 tbsp baking soda
- 1/2 cup boiling water
For The Cornstarch Vegan Egg Wash
- 1 tbsp cornstarch
- 1/2 cup water
For The Spicy Mustard Dip
- 1/2 cup raw cashews, soaked overnight
- 1/4 cup almond milk, plus more, if needed
- 1-2 Tbsp Dijon mustard
- 2-4 tsp hot sauce
- 1 Tbsp nutritional yeast
- salt and pepper, if needed
Instructions
- In a bowl, combine the warm water, yeast, and sugar. Mix and let sit until frothy, about 5 minutes.
- In another bowl, combine flour and 3/4 tsp salt. Mix well. Add the flour mixture, oil, and yeast mixture to a stand mixer fitted with the hook attachment and knead into a soft, smooth dough. Alternatively, add the yeast mixture to the flour, add the oil, and knead by hand for 4-6 minutes to make a smooth dough.
- Spray the dough with water, cover with a towel, and let it rise for 1 hour, or until doubled in size.
- Flatten the dough into a 1/2-inch thick rectangle. Use a pizza cutter to cut strips (thinner, about 1/2 inch wide, for smaller pretzels). Roll the strips between your hands if they are uneven. Cut the strips into 1-inch bites. Place the bites on a parchment-lined baking sheet, at least 1/2 inch away from each other.
- Preheat the oven to 450 degrees F (220ºC). Make the baking soda wash: Add baking soda to 1/2 cup of boiling water, mix, and set aside.
- Liberally brush the pretzels with the warm baking soda wash. Let them sit for 2 minutes. Then, slice the tops using a knife or kitchen scissors (optional, but adds a nice touch). Meanwhile, make the cornstarch wash: Mix the cornstarch in 1/2 cup of water and heat over medium heat until it thickens into a sludge. Brush the pretzels with the warm cornstarch wash. Sprinkle granulated salt generously on the pretzels.
- Bake for 13 to 14 minutes, or until a beautiful golden brown color. Serve immediately with the Spicy Mustard Dip.
Spicy Mustard Dip
- Blend the cashews with almond milk until completely smooth. Add more almond milk, if needed, to reach your desired consistency. Add the Dijon mustard, hot sauce, and nutritional yeast. Blend again, taste, and adjust seasonings as desired. Serve chilled or at room temperature.
Variations for the Dip
- Add 1-2 Tbsp fresh dill to the Spicy Mustard Dip for a herbaceous twist.
- Incorporate 1 Tbsp Ranch seasoning mix into the Spicy Mustard Dip for a classic American flavor profile.
