The Unexpected Joy of Whole Roasted Squash

Every week, our farm delivery brings a delightful surprise, often in the form of squash. Sometimes it’s a familiar butternut, other times an enigmatic, bumpy, dirty green gourd shaped somewhat like a small pumpkin, leaving me to wonder, “What on earth is this one called?” While the variety is exciting, the task of wrestling with a raw, humongous squash can be daunting, especially when my designated “squash cutter” (my husband) isn’t around. The slippery, hard exterior and the sheer force required to break it open often make me fear for my fingers.

But I’ve discovered a brilliant workaround that makes squash prep not just easy, but incredibly safe and rewarding: roasting it whole! The other day, after a particularly challenging attempt to slice into a rock-hard butternut, I gave up the struggle. Instead, I simply took the entire butternut squash, made a few small knife perforations to allow steam to escape, lightly coated it with olive oil, placed it on a baking sheet, and popped it into the oven at 335°F (168°C). I baked it until a knife could effortlessly slide through its skin, which took at least an hour for a large squash, sometimes more, depending on its size. The result? Perfectly tender squash, ready for anything!

Once cooled, cutting it open was a breeze. The cooked flesh was soft and pliable, making it easy to scoop out the seeds and remove the stem. The peel practically separated itself from the squash, requiring minimal effort to pull off. I then chopped the roasted squash into cubes and refrigerated it, ready to be transformed into various delicious meals throughout the week. This method has truly revolutionized my approach to squash, eliminating the need for brute strength and making cooking with this versatile vegetable a joy.

From Squash Surplus to Scrumptious Sliders

Having a stash of perfectly roasted butternut squash in the fridge is a culinary blessing, but even with its versatility, one can sometimes run out of inspiration. After incorporating it into vibrant salads, hearty curries, and serving it as a simple side dish, I still had a good amount left. That’s when inspiration struck: why not feature this delightful vegetable in an easy, satisfying sandwich? And not just any sandwich, but a slider—perfect for sharing and ideal for game day!

To elevate the humble squash, I decided to load the sliders with layers of flavor and texture. The star players, alongside the roasted butternut, would be sweet, savory caramelized onions and a creamy, spicy Sriracha mayo. The idea for the Sriracha mayo, I must admit, was a brilliant twist borrowed from Erin’s incredible Reuben recipe, proving that great ideas can inspire even greater dishes. The goal was simple: create a messy, flavor-packed vegan sandwich that’s impossible to resist. This combination of roasted squash, rich onions, and zesty mayo creates a symphony of flavors that will have everyone reaching for another slider.

Crafting the Ultimate Butternut Squash Slider: A Step-by-Step Guide

Assembling these sliders is straightforward and quick, especially if your squash and caramelized onions are prepped ahead of time. The beauty of this recipe lies in its simplicity and the incredible flavor payoff from a few well-chosen ingredients. Here’s how to build your perfect vegan slider:

  1. Prepare the Buns: Start by preparing your dinner rolls or slider buns. You can lightly toast them for extra texture and warmth, which helps them stand up to the fillings. If you’re feeling adventurous, homemade multigrain buns, like those made with spelt, rye, sorghum, kamut, and barley, add an exceptional depth of flavor.
  2. Layer the Greens: On the bottom half of each roll, place a crisp layer of fresh lettuce or a handful of tender baby greens. Sliced tomatoes can be added for a burst of juicy freshness, though they are entirely optional.
  3. Season and Warm the Squash: Take your pre-cubed roasted butternut squash. In a pan, heat a teaspoon of extra virgin olive oil over medium heat. Toss the squash cubes with a generous pinch of salt, freshly ground black pepper, and your choice of herbs. I highly recommend fresh parsley for its bright, complementary flavor. Sauté for just a minute or two, until the squash is warmed through. Alternatively, for a refreshing contrast, you can serve the squash cold, simply tossed in the seasonings and herbs. Whether you use cubed or thinly sliced roasted squash, the texture will be delightful.
  1. Add Caramelized Onions: Next, generously spoon the sweet and savory balsamic caramelized onions over the seasoned butternut squash. These onions add a layer of complex flavor and a wonderfully soft texture that perfectly complements the squash.
  1. Drench with Sriracha Mayo: Now for the grand finale: drench the entire tower of ingredients with as much or as little of the spicy Sriracha mayo as your heart desires. This creamy, fiery sauce binds all the elements together and provides that irresistible kick.
  1. Complete the Slider: Finally, place the other half of the roll on top.
  2. Enjoy! Brace yourself for a deliciously messy experience. Take a big bite, don’t worry about spilling a little on the sides, and savor the incredible fusion of flavors and textures.

This roasted Butternut squash slider has balsamic caramelized onions and sriracha mayo (vegan). Serve over warmed slider buns for an unforgettable experience.

Ingredients

  • Dinner rolls or slider buns

For the Roasted Squash:

  • 2 cups cubed roasted butternut squash, or other squash
  • 1 tsp extra virgin olive oil
  • salt, pepper, Italian herbs to taste

For the Sriracha Mayo:

  • 1 Tbsp Sriracha or garlic chile sauce
  • 4 Tbsp vegan mayo

For the Balsamic Caramelized Onions:

  • 2 tsp oil
  • 1 cup sliced onion
  • 1/4 tsp sugar
  • a generous pinch of salt
  • 1 tsp balsamic vinegar

Instructions

  • Prep the buns or rolls. Lightly toast them if desired. My personal preference is for Spelt Rye Sorghum Kamut Barley Multigrain rolls for added flavor and texture.
  • Top the bottom half of each roll with fresh lettuce or baby greens, and optional tomato slices for a burst of color and juiciness.
  • In a pan, heat a teaspoon of extra virgin olive oil. Add the cubed roasted butternut squash and toss with salt, pepper, and your chosen herbs (parsley works wonderfully) for about a minute to warm through. Alternatively, for a refreshing twist, you can serve the squash cold, simply tossed in the seasonings and herbs. Feel free to use either cubed or sliced roasted squash.
  • (Tip: If you don’t have roasted squash on hand, you can quickly prepare it: Slice raw squash thinly and place it in a large greased pan over medium heat. Flip the slices after 6-8 minutes, sprinkle with salt, pepper, and herbs, and continue cooking until tender.)
  • Top the seasoned squash with a generous helping of either balsamic or plain caramelized onions.
  • Generously drizzle the entire stack of ingredients with your prepared Sriracha vegenaise or hot sauce mayo. Adjust the amount to your preferred level of spice.
  • Place the top half of the roll to complete your slider.
  • Serve immediately and enjoy! Don’t worry about it being a little messy—that’s part of the fun!

Sriracha Mayo:

  • Combine 1 tablespoon (or more, to taste, depending on your spice preference) of Sriracha or your favorite hot sauce with 4-5 tablespoons of vegan mayonnaise (Vegenaise is a great option). You can also use a homemade mayo like this tofu-cashew version, or even Sriracha mixed into a creamy cashew cream. Mix thoroughly until well combined and smooth.

Caramelized Onions:

  • Add enough extra virgin olive oil (or other preferred oil) to coat the bottom of a pan. Heat on medium and add the sliced onion. Cook for approximately 10 minutes, stirring occasionally. Sprinkle in a pinch of salt and about 1/4 teaspoon of sugar (for every 1/2 cup of sliced onion), along with a few drops of water. Continue cooking on low-medium heat, partially covered, stirring every 6-8 minutes, until the onions turn a rich golden brown and become beautifully tender. If the onions start to stick or burn, add a tablespoon or two of water to deglaze the pan. For balsamic caramelized onions, add 1/2 teaspoon (or more, to taste, for every 1/2 cup of onion) of balsamic vinegar during the last few minutes of cooking and cook for another 2-3 minutes until absorbed.

Notes

Nutritional values are provided based on one serving and are approximate.

Butternut Squash Perfection: When roasting squash whole, ensure it’s pierced sufficiently to prevent bursting. The internal temperature should be soft enough for a fork to easily pass through the thickest part. This method not only saves effort but also concentrates the natural sugars, intensifying the squash’s flavor.

The Art of Caramelized Onions: Patience is key to achieving truly delicious caramelized onions. Cooking them slowly over low to medium heat allows their natural sugars to develop and deepen, creating that signature sweet and savory complexity. Don’t rush the process; it’s worth every minute for the depth of flavor they bring to these sliders.

Customizing Your Sriracha Mayo: While Sriracha offers a fantastic kick, feel free to experiment with other hot sauces like Cholula, Frank’s RedHot, or even a smoky chipotle hot sauce for different flavor profiles. You can also add a squeeze of lime juice for brightness or a pinch of garlic powder for extra savory notes.

Make Ahead Tips: Both the roasted butternut squash and the caramelized onions can be prepared a day or two in advance and stored in airtight containers in the refrigerator. The Sriracha mayo can also be made ahead. This makes assembling the sliders on game day quick and stress-free.

Serving Suggestions: These sliders are fantastic on their own, but they also pair wonderfully with a fresh green salad, a side of crispy sweet potato fries, or even a simple coleslaw. They are ideal for potlucks, parties, or any casual meal where you want a satisfying and flavorful plant-based option.
