It’s incredible how some of the best recipes emerge from simple ingredients and a moment of inspiration. These vegan almond butter oatmeal breakfast cookies, for instance, had been patiently waiting in my drafts for a while, a hidden gem ready to be shared. Upon rediscovering them, I was instantly reminded of their delightful qualities, prompting me to finally edit the photos and bring this recipe to life on the blog.
What makes these cookies truly special? They are profoundly satisfying – chewy, yet tender, with just the right amount of sweetness. Each bite is packed with the hearty goodness of oats, offering a substantial texture that makes them feel truly nourishing. The absence of refined oil is a huge plus, contributing to their healthier profile without sacrificing any of the rich, comforting taste.
The versatility of this recipe is another standout feature. While almond butter lends a wonderfully subtle, nutty flavor, feel free to experiment with other nut butters like creamy peanut butter, rich cashew butter, or even decadent hazelnut butter. For those with nut allergies, seed butters such as sunflower seed butter (tahini) or pumpkin seed butter make excellent alternatives, ensuring everyone can enjoy these delightful treats. Customization doesn’t stop there; topping these cookies with crunchy almond slivers, nutrient-dense seeds, or a light sprinkle of coarse sugar adds an extra layer of texture and visual appeal. Keep a batch handy in your pantry for quick breakfasts or a guilt-free snack throughout the day. And if you haven’t guessed by now, I confess a slight preference for almond butter over peanut butter – it just brings a unique depth to these cookies!
Life often throws delightful curveballs, sometimes in the form of scorching Seattle summers that make baking feel like an Olympic sport, or a beloved pet’s birthday that calls for celebration over kitchen endeavors. Today, for example, Seattle is basking in intense heat, making the thought of turning on the oven for recipe testing, whether for my book or other cookbook reviews, less than appealing. But some things are more important. Today marks a truly special occasion: my beloved Chewie is celebrating his 9th birthday! He’s our fluffy, mischievous Pomeranian, and on a day like this, he deserves all the pampering, cuddles, and perhaps a new trick to learn (though he’ll probably just want to sleep through it, as is his preference).
For those unfamiliar with Chewie’s story, it’s a testament to the unexpected joys and profound connections that pets bring into our lives. Years ago, when I was navigating a period of significant health challenges, barely able to walk a block, read, or engage in many daily activities, the idea of adopting a dog surfaced. The hope was that a companion animal could provide comfort and motivation during a difficult time. My applications went out to various rescues and the local Seattle shelter, specifically seeking a small, long-haired dog, perhaps a Pomeranian or a mix. My balance was so compromised back then that even a small, 10-pound dog pulling on a leash felt like a significant challenge.
One day, while browsing petfinder.com, a site that lists rescue and shelter dogs, I stumbled upon Chewie. His photos radiated an undeniable alert and playful expression – a spark of personality that immediately captured my heart. I wish I had saved those original pictures! My husband, initially hesitant about adopting a dog due to a past fear, suggested we wait and meet Chewie at an upcoming adoption event that weekend. However, by the end of the week, Chewie’s profile was removed from Petfinder, suggesting he had found his forever home.
Three weeks later, much to my surprise and delight, Chewie was back on Petfinder. This time, I was resolute. I insisted we go meet him. And so, we embarked on a journey to meet this “cuddle puff,” who at the time was underweight, visibly anxious, severely matted, and carried a slight odor. Despite his condition, his spirit shone through; he was incredibly friendly and loving. My husband, previously apprehensive, took him for a walk, held him in his arms, and within two minutes, all his fears melted away. “Yes,” he declared, “let’s take this dude home.” It was a moment of pure magic, witnessing such an instant, profound connection.
Chewie was around three years old when he was left at the shelter. His previous family, regrettably, couldn’t provide him with the time and attention he deserved, leaving him alone for up to 16 hours a day. Thankfully, they recognized that placing him in a shelter would give him a better chance at a loving home. A rescue organization then took him from the shelter, placing him in a foster home where he began his journey to recovery.
After meticulous grooming, regular baths, and years of unwavering love and care, Chewie has transformed. He is now, without a doubt, the prettiest Pommie in our neighborhood, radiating health, happiness, and an abundance of fluffy charm. His story is a powerful reminder of the resilience of animals and the transformative power of love. Now, I must go wake him up from his preferred daytime slumber, shower him with cuddles, take him for a celebratory walk, and perhaps attempt to teach him a new trick – though I know his true passion lies in napping. Please send him an abundance of love and healthy, happy wishes for the many wonderful years still ahead of him!

Conscious Choices: Shop Sustainably and Ethically

Beyond the kitchen, my passion extends to supporting brands and initiatives that make a positive impact on the world. As I settle into the day with a good book and a warm drink, I often take time to explore and support businesses committed to social responsibility. These are not just purchases; they are investments in a better future for communities and animals alike.
One such inspiring brand is Della, which champions socially responsible fashion. Della provides vital jobs, education, and essential skills training to women in Ghana, empowering them to build brighter futures for themselves and their families. Their commitment to ethical production and community development is truly commendable.
Another incredible organization worth supporting is Animal Aid Unlimited in Udaipur, India. By purchasing their beautiful Handmade Jewellery, you directly contribute to their tireless and wonderful work in animal rescue, rehabilitation, and advocacy. Every piece tells a story of hope and compassion, directly funding their life-saving efforts.
Making conscious choices in our shopping habits allows us to extend our positive impact beyond our personal lives, creating a ripple effect of good in the world. It’s a simple yet powerful way to align our values with our actions.

Simple Steps to Baking Perfection: Quick and Easy!

Creating these wholesome breakfast cookies is surprisingly straightforward, perfect for bakers of all skill levels. The key to their delightful texture lies in a few simple steps.
First, you’ll prepare the delightfully sticky cookie dough. This involves combining all your wet ingredients thoroughly, then gently folding in the dry components until just combined. The dough will have a slightly tacky consistency, which is perfectly normal and contributes to the chewy final product.
Once your dough is ready, use slightly wet or lightly oiled hands to shape it. This trick prevents the dough from sticking too much as you form individual cookies. Aim for flat, disc-like shapes, as the cookies will rise slightly during baking. A gentle flatten ensures a uniform bake and that satisfying chewy texture. Don’t forget to sprinkle your chosen toppings – almond slivers or seeds – before baking for an extra crunch and visual appeal.
Finally, it’s into the oven they go! Bake until the edges turn a beautiful golden brown and the centers are set. A crucial tip: resist the urge to overbake. These cookies are best when slightly soft in the middle, achieving that perfect balance of chewiness. Let them cool completely after baking, as they will continue to firm up and develop their full flavor and texture as they rest. Store them in an airtight container to keep them fresh, ready for your next healthy breakfast or snack craving!

These Vegan Gluten-free Almond Butter Oatmeal breakfast cookies are oil-free, easy and come together quickly for a snack or breakfast. Gluten-free, oil-free, and utterly delicious!

Ingredients

Wet Ingredients:

  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 2 Tbsp almond milk
  • 1/3 cup ground raw sugar
  • 1.5 tsp vanilla extract
  • 1 Tbsp flax seed meal
  • 1/4 tsp salt

Dry Ingredients:

  • 1/2 cup oat flour, (ground oats)
  • 1/2 cup almond flour, (ground almonds)
  • 1 Tbsp cornstarch, (or other starch)
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup or more Oats

Instructions

  1. Prepare Wet Ingredients: In a medium-sized bowl, combine all the “wet” ingredients: almond butter, maple syrup, almond milk, ground raw sugar, vanilla extract, flax seed meal, and salt. Whisk briskly until the mixture is thoroughly combined and smooth.
  2. Combine Dry Ingredients: In a separate bowl, whisk together or sift the dry ingredients: oat flour, almond flour, cornstarch, baking powder, and baking soda. Once well combined, fold in the oats.
  3. Form the Dough: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix. The dough will be sticky. If it feels excessively wet, add a little more oats until it’s manageable but still moist. Chill the mixture for at least 15 minutes in the refrigerator (or longer if preferred) to help it firm up.
  4. Shape the Cookies: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Using slightly wet or greased hands, scoop out about 3 to 4 tablespoons of dough per cookie. Roll into a ball, then flatten each ball into a disc on the prepared baking sheet. Wetting your hands intermittently will help prevent sticking. Flatten them well, as these cookies tend to rise during baking and can become quite thick. I recommend making medium-large cookies for a substantial breakfast treat.
  5. Add Toppings & Bake: Gently press almond slivers, seeds, or a sprinkle of granulated sugar onto the top of each flattened cookie for added texture and flavor. Bake for 13-15 minutes, or until the edges are golden brown and the center appears dry. Baking time may vary depending on the size of your cookies and your oven. It’s crucial not to overbake, as this will result in overly crunchy cookies; we’re aiming for that delightful chewy texture.
  6. Cool & Store: Once baked, remove the cookies from the oven and let them cool completely on the baking sheet. They will continue to cook and firm up for a few minutes after being removed. Store the cooled cookies in an airtight container at room temperature. A quick note: you can taste the dough before baking and adjust the sugar to your preference. The cookies often become sweeter as they sit, so a warm cookie straight from the oven might taste more nutty and less sweet initially.
