Ingredients:

  • 1/2 cup organic whole wheat pastry flour
  • 1/2 cup organic all-purpose flour
  • 1/4 cup plus 1 tablespoon Dutch-process cocoa powder
  • 1/4 cup organic sugar, ground fine in a blender
  • 1/2 teaspoon salt
  • 1 teaspoon aluminum-free baking powder
  • 1 teaspoon baking soda
  • 1/4 cup mild tasting extra virgin olive oil, or any neutral vegetable oil, plus more for the pan
  • 1/2 cup pure maple syrup, Grade B or dark amber
  • 3/4 cup plus 2 tablespoons any nondairy milk
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon chocolate extract (optional, but enhances chocolate depth)
  • 1 teaspoon apple cider vinegar

Instructions:

  1. Position a rack in the middle of your oven and preheat it to 350°F (175°C). Lightly oil the sides and bottom of a 9×3 inch round cake pan. Line the bottom with a parchment paper circle cut to fit; do not oil the paper itself.
  2. Place a wire mesh strainer over a medium-sized bowl. Add the whole wheat pastry flour, all-purpose flour, cocoa powder, ground sugar, baking powder, baking soda, and salt to the strainer. Whisk gently to sift these dry ingredients into the bowl. Continue whisking briefly to thoroughly aerate and distribute them.
  3. In a separate medium bowl, whisk together the olive oil (or neutral vegetable oil), maple syrup, nondairy milk, vanilla extract, chocolate extract (if using), and apple cider vinegar until completely blended and emulsified.
  4. Pour the wet mixture into the dry ingredients and whisk until the batter is smooth and uniform. Note that the batter will be fairly thin. Carefully pour the prepared batter into your cake pan.
  5. Gently tap the pan lightly on the counter a few times to release any trapped air bubbles.
  6. Bake on the center rack for 25 to 30 minutes, or until the top appears set, the cake’s sides have just begun to pull away from the pan, and a cake tester inserted into the center comes out clean or with only a few moist crumbs clinging to it.
  7. Cool the cake in its pan on a wire rack for 5 minutes. Carefully run a thin knife around the edge between the cake and the inside of the pan. Invert the cake onto the wire rack. Gently remove the pan and carefully peel off the parchment paper. Invert the cake once more, top-side up, on the rack to allow it to cool completely.
  8. To prevent cracking, slide a cardboard circle or another flat surface underneath the cooled cake layer. Wrap it securely in plastic wrap and refrigerate for about 30 minutes until thoroughly chilled before applying the glaze.

Bittersweet Chocolate Ganache Glaze

While this recipe might take longer to read than to actually make, its exquisite success hinges entirely on two critical factors: the quality and taste of your chosen chocolate, and meticulous adherence to the recipe’s details. The good news is that within the specified percentages, any premium quality bittersweet chocolate that you genuinely enjoy eating will yield fantastic results. Key steps include finely chopping the chocolate and ensuring the hot milk is strained. Allowing the chocolate to melt undisturbed into the milk for the full 4 minutes is non-negotiable for a smooth texture. And crucially, stir only until the chocolate and milk are beautifully emulsified – a glossy, smooth consistency. Over-mixing can surprisingly turn your silken ganache gritty. If, after mixing, the chocolate hasn’t completely melted, gently reheat. Bring water in a saucepan to a simmer, turn off the heat, place the ganache bowl over it for a few minutes, then stir very gently until smooth. Precision and patience are your allies here.

Yields: Approximately 2 cups

Ingredients:

  • 8 ounces vegan bittersweet chocolate (70 to 72% cocoa), finely chopped
  • 1 1/2 cups almond milk or soymilk
  • 2 tablespoons organic granulated sugar (18g)
  • Pinch of fine sea salt
  • 1 1/4 teaspoons pure vanilla extract
  • 2 teaspoons mild tasting extra-virgin olive oil (optional, but highly recommended for a beautiful sheen)

Instructions:

  1. Add the finely chopped chocolate to a heatproof bowl and set it aside while you prepare the milk.
  2. Pour the nondairy milk into a small saucepan. Add the sugar and salt. Cook over medium heat, whisking a few times, until the mixture reaches a low boil.
  3. Immediately remove the saucepan from the heat. Pour the hot milk mixture over the chopped chocolate all at once. Gently rotate the bowl to ensure the chocolate is completely submerged in the hot liquid. Cover the bowl with a plate and let it stand undisturbed for precisely 4 minutes.
  4. After 4 minutes, add the vanilla extract and the olive oil (if using). Whisk from the center outwards only until the ganache is smooth, glossy, and beautifully emulsified.
  5. Keep the bowl of ganache at room temperature while you perform a consistency test. Dip a teaspoon into the ganache, place the coated spoon on a small plate, and refrigerate for 10 to 15 minutes. Once chilled, the ganache on the spoon should be smooth and retain its creamy taste.
  6. In the unlikely event that the glaze is too firm, add a tablespoon of room temperature nondairy milk and repeat the chilling test. Add a second tablespoon if necessary.
  7. Pass the ganache through a fine-mesh strainer into a clean bowl. Whisking slowly will help expedite this process. Allow the ganache to thicken at room temperature for 15 to 25 minutes, or until it coats a spoon thickly with minimal dripping, yet remains pourable. Stir a few times from the outside into the center before using it for glazing.

Storage and Reheating:

This versatile glaze can be refrigerated in a tightly sealed container for up to five days or frozen for up to one month. When cold, the glaze will harden and will need to be reheated. To reheat, spoon the glaze into a heatproof bowl that fits snugly over a saucepan of barely simmering water (creating a double boiler effect). When approximately two-thirds of the glaze has melted, stir gently until it is completely smooth. Adjust the consistency as needed by stirring in warm nondairy milk, a little at a time, until it reaches your desired pourable state.
