Beet Cream:

  • 1/2 medium beet, or 1 small beet (peeled and grated)
  • 1 Tablespoon coconut flakes
  • 1 Tablespoon ground raw cashew
  • 2 Tablespoons raw sugar/coconut sugar/sweetener of choice
  • 3-4 Tablespoons water
  • Spices: pinch of cinnamon, ginger, cloves, allspice (optional)

Instructions

Crust:

  1. In a food processor, pulse the soft dates, ground raw almonds, 2 tablespoons of coconut flakes, and a pinch of sea salt until the dates are well combined and the mixture sticks together when pressed. The mixture should form a cohesive dough.
  2. Add the crisp rice cereal to the mixture. Pulse once or twice briefly to coarsely break up some of the cereal, ensuring some texture remains. Avoid over-processing to keep the crunch.
  3. Knead the mixture by hand for a few seconds. This helps to release some of the natural coconut oil and brings all the ingredients together more firmly.
  4. If the mixture still feels too dry or crumbly, add a few drops of water, non-dairy milk, or agave syrup, one drop at a time, until the mixture holds together well.

  1. In a blender, combine the 1/2 ripe mango, 1 tablespoon of ground raw cashew, and 2-3 tablespoons of water. Blend until completely smooth and a mousse-like consistency is achieved. Taste the cream; if the mango is not very ripe or sweet, add a touch of raw sugar or your preferred sweetener until it reaches your desired sweetness level. Set aside.

Strawberry Cream (Optional Layer for Variation):
