Discovering Palak Tempeh: A Vegan Twist on a Classic Indian Curry
For many, traditional Indian dishes like Palak Paneer or Saag Paneer (Indian cottage cheese in a spinach or other greens curry) have long been cherished as comforting and quick weekend meals. However, with the growing interest in plant-based eating, it’s exciting to explore equally delicious and satisfying vegan alternatives. This Palak Tempeh recipe steps up as a fantastic successor, offering all the creaminess and depth of flavor you’d expect from a spinach curry, but with the added nutritional benefits and earthy texture of tempeh.
The Versatility of Saag: More Than Just Spinach
At its heart, this dish is a variation of ‘Saag’, a broad term in Indian cuisine referring to any greens-based curry. While spinach (palak) is commonly used, saag can also incorporate mustard greens, collard greens, fenugreek leaves, or a combination thereof, creating a dynamic flavor profile that can be tailored to your preference. The base recipe for saag remains remarkably consistent, allowing for endless customization. Beyond tempeh, you can introduce a variety of ingredients such as firm tofu, tender potatoes (Aloo Saag), hearty chickpeas (Chana Saag), or even vegetable fritters (Kofta) to create diverse and equally delicious meals. This adaptability makes saag a staple in many kitchens, perfect for utilizing seasonal greens and whatever protein source you have on hand.
The pictures accompanying this recipe might show a slightly less vibrant green hue than you might anticipate. This was due to an unfortunate refrigerator malfunction that necessitated discarding all my frozen spinach at the time of photography. Consequently, I had to make do with a smaller quantity (about 1.5 cups) of fresh spinach, which, while still flavorful, wasn’t enough to achieve the deep, rich green color typically associated with this curry. Rest assured, with the recommended 2-3 cups of spinach, your Palak Tempeh will boast that characteristic lush green. This curry is a regular in our household for quick dinners, often leaving little time for elaborate photo shoots!

Why Tempeh is the Perfect Choice for Palak Curry
Tempeh, a traditional Indonesian soy product, is made from fermented soybeans, forming a dense, nutrient-rich cake. Its firm texture and slightly nutty flavor make it an excellent plant-based protein, especially when compared to its unfermented cousin, tofu. In this Palak curry, tempeh stands out for several reasons:
- Protein Powerhouse: Tempeh is packed with protein, making this curry incredibly satisfying and a complete meal for vegans.
- Nutrient-Dense: Beyond protein, tempeh offers a good source of fiber, iron, calcium, and probiotics due to its fermentation process, contributing to gut health.
- Absorbs Flavors Beautifully: Its porous nature allows tempeh to soak up the rich, aromatic spices and creamy spinach-tomato sauce, infusing every bite with deliciousness. Unlike paneer, which can be mild, tempeh adds its own subtle character that complements the curry perfectly.
- Firm Texture: Tempeh holds its shape well during cooking, providing a pleasant chewiness that adds substance to the curry, mirroring the hearty feel of paneer.
Using tempeh not only makes this dish suitable for vegan diets but also introduces a unique flavor and texture profile that distinguishes it from other palak variations. It’s an ingredient that brings both health and exceptional taste to the forefront of your plant-based cooking.

Palak Tempeh (Tempeh in Spinach Tomato Curry). A creamy and delicious curry that’s quick and great for weeknights. Vegan and Gluten Free Recipe.
Ingredients
- 2-3 cups spinach chopped, (fresh or frozen thawed)
- 2 tomatoes, chopped
- 5 cloves garlic
- 1 inch ginger
- 1 Serrano green chili
- salt, to taste
- 1/2 teaspoon raw sugar or sweetner
- 1 teaspoon kashmiri garam masala or regular garam massala, (or 1/4 teaspoon each of cinnamon, clove, nutmeg and cardamom powder and 1 bay leaf)
- 4 oz organic tempeh, (about 3/4 cup chopped)
- 2 tablespoons cashews soaked for an hour, (more or less depending on how creamy you want the curry)
- 1/4 teaspoon asofetida, (hing)
- 1 cup water or more for desired consistency
- 2 teaspoons oil
Instructions
Creating this flavorful Palak Tempeh curry is a straightforward process. Follow these steps for a delicious and satisfying meal:
- Prepare the Spinach Puree: In a blender, combine the chopped spinach, garlic cloves, fresh ginger, Serrano green chili, and chopped tomatoes. Add a small amount of water to aid blending. Process until you achieve a smooth, vibrant puree. Set this aside.
- Make Cashew Cream: For a rich and creamy texture, blend the pre-soaked cashews with a little water until completely smooth. The amount of water will depend on how thick you want the cream. This step is crucial for achieving the desired creaminess without dairy.
- Heat the Pan: Place a large pan or Dutch oven over medium heat. Add the oil and allow it to warm up.
- Bloom the Spices: Once the oil is hot, add the garam masala (or individual spices like cinnamon, clove, nutmeg, cardamom, and bay leaf if using) and asafoetida (hing). Sauté for approximately 1 minute, allowing the spices to become fragrant. This step awakens their flavors and creates a deeply aromatic base for your curry.
- Add Spinach Puree: Pour the prepared spinach puree into the pan with the bloomed spices. Stir well to combine. Add salt to taste and the raw sugar or sweetener, mixing thoroughly. The sugar helps balance the flavors and cuts through any bitterness from the spinach.
- Simmer with Tempeh: Gently stir in the chopped tempeh pieces. Reduce the heat to low and let the curry simmer for 20-25 minutes. During this time, the spinach curry will thicken, and the tempeh will absorb the wonderful flavors. Stir occasionally to prevent sticking and ensure even cooking. The curry is ready when it starts to separate from the edges of the pan.
- Incorporate Cashew Cream and Adjust Consistency: Add the cashew cream to the curry. If the curry is too thick, gradually add water until it reaches your desired consistency. Taste and adjust the salt and any other spices as needed. This is your chance to fine-tune the flavor profile to your preference.
- Final Simmer: Continue to cook for another 6-7 minutes on medium-low heat, bringing the curry to a gentle boil. This allows the cashew cream to fully integrate and the flavors to meld beautifully.
- Serve: Serve your hot Palak Tempeh with warm Indian flatbreads like Rotis or Naans, fluffy basmati rice, or quinoa. A side of sliced tomato salad and pickles would complement the meal perfectly. For a slight variation, try using 1 cup of spinach and 1 cup of mustard or collard greens for an even more complex flavor.

Tips for the Perfect Palak Tempeh
Achieving a truly outstanding Palak Tempeh relies on a few key techniques and considerations:
- Spinach Quality: Whether using fresh or frozen spinach, ensure it’s of good quality. If using fresh, wash it thoroughly to remove any grit. Frozen spinach should be thawed and squeezed to remove excess water before blending, concentrating its flavor. Remember, enough spinach is key for that rich green color and authentic taste.
- Spice Balance: Don’t shy away from adjusting the spices. Garam masala varies in potency, so start with the recommended amount and add more to taste. The Serrano chili provides heat; if you prefer a milder curry, use half a chili or omit it. For more heat, a pinch of cayenne pepper can be added.
- Cashew Cream: Soaking cashews beforehand is vital for a smooth cream. If you don’t have time to soak for an hour, boiling them for 10-15 minutes can also soften them sufficiently. The cashew cream is what imparts the luxurious, creamy texture, so don’t skip this step!
- Tempeh Preparation: While the recipe calls for chopped tempeh, you can also lightly pan-fry or bake the tempeh pieces separately until golden brown before adding them to the curry. This can enhance their texture and add a slightly crisp exterior.
- Consistency Control: The amount of water added to the curry determines its final consistency. If you prefer a thicker, more gravy-like curry, use less water. For a thinner, soupier consistency, add more. Always add gradually to avoid over-thinning.
Serving Suggestions to Elevate Your Meal
Palak Tempeh is a versatile dish that pairs wonderfully with a variety of accompaniments, transforming a simple meal into a feast. Here are some suggestions:
- Indian Flatbreads: Classic choices like warm, fluffy Naan bread (vegan options are available) or whole wheat Rotis are perfect for scooping up the rich curry.
- Rice: A staple pairing, plain steamed Basmati rice, jeera rice (cumin rice), or brown rice beautifully complements the flavors of the curry.
- Grains: For a healthier alternative, consider serving it with quinoa or millet.
- Side Salad: A simple, fresh salad with sliced cucumbers, tomatoes, and onions dressed with a squeeze of lemon juice adds a refreshing contrast.
- Pickles and Chutneys: A spoonful of your favorite Indian pickle (achar) or a sweet mango chutney can add an extra layer of flavor and zest.
- Vegan Raita: A cooling side dish made from plant-based yogurt (like coconut or almond yogurt) mixed with grated cucumber and a sprinkle of roasted cumin powder can balance the curry’s richness.
No matter how you choose to serve it, Palak Tempeh promises a satisfying and flavorful experience. Its robust taste and comforting texture make it a delightful addition to any meal rotation, whether you’re a seasoned vegan chef or just exploring plant-based cuisine.
