A Vegan Twist on a Classic Keralan Delight

Today, we’re diving into a truly special tempeh curry that stands out with its unique spice blend. This dry curry, typically prepared with meat in traditional Keralan households, is reimagined here with robust tempeh. The foundation of its irresistible flavor lies in perfectly caramelized onions, complemented by the warm, earthy notes of fennel and coriander. While tempeh (fermented soybean patty) is our star ingredient, feel free to experiment with other sturdy plant-based proteins like firm tofu, seitan, or soy curls, ensuring a dish that’s both versatile and adaptable to your pantry.

The beauty of this Keralan Tempeh Chili Roast lies in its versatility. Serve it traditionally as a side dish alongside your favorite Indian flatbreads such as fluffy Roti, flaky Paratha, layered Laccha Parotta, or even homemade Naan. It also pairs wonderfully with a comforting bowl of steamed rice or flavorful biryani. Beyond the main course, this chili roast transforms into a fantastic snack. Spoon it onto crackers for a quick bite, serve it over elegant canapés with a refreshing dill cashew dip, or use it as a hearty filling for tacos, complete with crisp lettuce and vibrant salsa. The possibilities are endless!

The Essence of Keralan Cuisine

Kerala, often dubbed “God’s Own Country,” is a picturesque state nestled on the southwest coast of India, renowned for its serene backwaters, pristine beaches, rejuvenating Ayurvedic tourism, and lush tropical greenery. This natural abundance profoundly influences its cuisine, which boasts a rich tapestry of flavors shaped by centuries of cultural exchange with Arab, Portuguese, Dutch, and British traders. Unlike many other Indian culinary traditions, Keralan cuisine is distinctively known for its generous use of coconut in various forms – grated, milk, and oil – along with an emphasis on rice, an array of tropical vegetables, and a bold, fiery spice palette. Key ingredients like curry leaves, mustard seeds, ginger, garlic, and green chilies are staples, contributing to the region’s unique and unforgettable taste profile.

The concept of a “Chili Roast” in Kerala refers to a dish where the main ingredient, traditionally meat, is cooked down in a rich, dry spice paste until it’s deeply browned and intensely flavored. The slow roasting process allows the spices to meld perfectly with the protein, creating a complex and aromatic experience. Our vegan version meticulously recreates this authentic experience, ensuring that every spoonful delivers the true essence of a Keralan chili roast.

Why Tempeh is the Perfect Choice

Tempeh, a traditional Indonesian food made from fermented soybeans, is an exceptional plant-based protein for this Keralan Chili Roast. Its firm, chewy texture holds up beautifully to the intense cooking process and rich spices, much like meat would. Unlike tofu, tempeh has a distinctive nutty, earthy flavor that adds another layer of complexity to the dish. The fermentation process also makes tempeh incredibly digestible and boosts its nutritional profile, providing a wealth of protein, fiber, and prebiotics that are beneficial for gut health. Furthermore, tempeh readily absorbs marinades and spices, making it an ideal canvas for the vibrant Keralan flavors we’re developing. For those looking for a wholesome, satisfying, and flavor-absorbing meat alternative, tempeh is an unparalleled choice.

Crafting the Perfect Keralan Tempeh Chili Roast

This recipe is an adaptation inspired by numerous traditional meat-based chili roasts, carefully fine-tuned to achieve a perfectly balanced vegan flavor profile. The secret to its incredible taste lies in a few key steps: dry roasting the whole spices, marinating the tempeh, and patiently caramelizing the onions and shallots.

Dry roasting fennel and coriander seeds, along with black peppercorns, awakens their aromatic oils, intensifying their fragrance and flavor before they are ground into a fine powder. This initial step is crucial for building the foundational taste of our chili roast. The tempeh is then marinated in a vibrant mixture of water, turmeric, red chili powder, cardamom, vinegar (or lemon juice), and salt. Allowing the tempeh to soak in these flavors, even for a short hour, ensures that every piece is deeply infused with spice and tang, preventing blandness and making it incredibly tender.

The caramelized onions and shallots form the rich, sweet base of the curry. Cooking them slowly until they turn a deep golden brown is essential, as this process develops profound umami and sweetness, which are critical to the roast’s authentic taste. Fresh ginger, garlic, and fragrant curry leaves are then added, blooming in the oil and filling your kitchen with an intoxicating aroma. Finally, the marinated tempeh is introduced, simmering gently until all the liquids are absorbed, and the tempeh is beautifully coated in the thick, dry spice mixture. The result is a robust, savory, and perfectly spiced Keralan Tempeh Chili Roast that will tantalize your taste buds.

For variations, you can puree the onions and shallots before roasting them for an even smoother, more integrated masala paste. If you prefer a saucier curry, simply add ½ cup of coconut milk or a few tablespoons of coconut milk yogurt along with some water as needed, bringing the mixture to a gentle boil after the tempeh has cooked down. This adjustment offers a creamy, luscious texture while retaining the signature Keralan spice.

Ingredients

Dry roast:

  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon coriander seeds
  • 3-4 black peppercorns, or to taste

Marinade:

  • 4 oz Tempeh chopped into small cubes.
  • 1/2 cup water
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon red chili powder or to taste
  • a generous pinch of cardamom powder
  • 1 teaspoon vinegar or lemon juice
  • 1/2 teaspoon salt or to taste

Curry:

  • 1 teaspoon virgin coconut oil or organic canola oil
  • 1/3 cup chopped white or red onion
  • 2-3 shallots chopped
  • 2 green chilies slit lengthwise or to taste
  • 1 teaspoon ginger finely chopped or paste
  • 1 teaspoon garlic finely chopped or paste
  • 5-6 curry leaves
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon red chili powder or to taste
  • 1-2 teaspoons soy sauce
  • scallions/green onion for garnish

Instructions

  1. Prepare the Dry Roast Spices: In a dry pan, lightly dry roast the fennel seeds, coriander seeds, and black peppercorns over low-medium heat for 2-3 minutes until fragrant. Be careful not to burn them. Remove from heat, grind the spices into a fine powder, and set aside.
  2. Marinate the Tempeh: In a medium pan, combine the chopped tempeh, water, 1/4 teaspoon turmeric, 1/2 teaspoon red chili powder, a generous pinch of cardamom powder, vinegar (or lemon juice), and 1/2 teaspoon salt. Stir in the freshly ground dry roast spice mix. For enhanced flavor, you can let the tempeh marinate in this mixture for at least an hour before cooking.
  3. Cook the Tempeh: Cover the pan and cook the marinated tempeh over low heat until all the liquid is absorbed and the mixture is mostly dry (approximately 20+ minutes). Stir 2-3 times during cooking to prevent sticking and ensure even cooking.
  4. Start the Curry Base: Meanwhile, in a separate medium pan, heat 1 teaspoon of virgin coconut oil (or organic canola oil) over medium heat.
  5. Caramelize Onions and Shallots: Add the chopped white or red onion and shallots to the hot oil. Cook, stirring occasionally, until they turn a rich golden brown and are beautifully caramelized (this usually takes 12-15 minutes). This step is crucial for flavor development.
  6. Add Aromatics: Stir in the chopped ginger, garlic, curry leaves, and green chilies. Sauté for another 2 minutes until fragrant.
  7. Introduce More Spices: Add 1/2 teaspoon turmeric, 1/2 teaspoon red chili powder (adjust to your preferred spice level), and 1-2 teaspoons of soy sauce to the onion mixture. Mix well.
  8. Combine and Roast: Add the pre-cooked, spice-coated tempeh to the pan with the onion and spice mixture.
  9. Finish the Roast: Mix everything thoroughly, ensuring the tempeh is well coated. Continue to cook, stirring frequently, for another 4-6 minutes until the mixture is dry and the tempeh pieces are lightly roasted and infused with all the flavors.
  10. Adjust Seasoning: Taste and adjust salt and spice levels as needed. Add a pinch of cayenne pepper if you desire more heat.
  11. Serve: Serve this sizzling hot Keralan Tempeh Chili Roast garnished with fresh chopped scallions (green onions). It’s fantastic with a side of Daal and rice, or get creative by making a delicious wrap with warm Naan, crisp lettuce, and fresh salsa. Enjoy the authentic flavors of Kerala in this delightful vegan dish!

Notes

Saucy Version: For a more gravy-like curry, after step 8, add ½ cup of coconut milk or 2 tablespoons of coconut milk yogurt along with a little water (as needed for desired consistency) and a pinch of salt. Bring to a gentle boil and simmer for a few minutes until slightly thickened.
