These Coconut Macaroons are super easy, feature bright Orange Zest, sweet cranberries, and crunchy pistachios. This is a delightful Vegan Gluten-free Recipe, perfect for any holiday celebration!

  • 2 Tablespoons orange marmalade, or orange zest and 2 Tablespoons agave/maple syrup
  • 2 Tablespoons ground raw sugar, or sweetener of choice
  • 2 Tablespoons coconut milk
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon ginger powder, optional

Dry Ingredients

  • 1 cup dried coconut flakes
  • 1/4 cup brown rice flour, or other flour of choice (spelt can be used if not making gluten-free)
  • 3/4 teaspoon baking powder, optional
  • 1/4 cup each or more of dried cranberries and chopped pistachios

Instructions

  • In a large bowl, combine all the wet ingredients (agave syrup, orange marmalade/zest, ground raw sugar, coconut milk, sea salt, and optional ginger powder). Mix thoroughly until well combined.
  • Add in the dry ingredients (coconut flakes, brown rice flour, optional baking powder, cranberries, and pistachios) to the wet mixture. Mix well until everything is evenly incorporated and forms a cohesive dough.
  • Chill the dough in the refrigerator for at least 15 minutes. This step helps the dough firm up, making it easier to handle and scoop.
