A Little Update on Our Furry Friend, Chewie
For those curious about Chewie, our beloved fluffster lives with a collapsed trachea, making him particularly vulnerable to infections and inflammation. This often leads to severe cough flare-ups that can be quite challenging to manage. Collapsing trachea is a common ailment in many smaller breeds, unfortunately, often a consequence of specific breeding practices and the demand for certain physical traits. While there isn’t a definitive cure, we rely on medications to control the coughing and inflammation, though they don’t always offer a complete solution. We’re actively exploring a few new approaches and fervently hope he can finally enjoy uninterrupted sleep at night.
One interesting observation I’ve made is the exceptional care Chewie receives from his veterinary team. The vets, nurses, and specialists all check on him regularly, which is incredibly sweet and somewhat amusing, as my own doctors rarely do! I suspect this might be partly because he doesn’t have a large immediate family to constantly look after him. I can tell you, he’s definitely treated like royalty, especially when Dad shakes his head playfully every time we try to coax him into eating his food, taking his meds, or enduring his nasal spray. He truly is the king of our household!

Ingredients

- 1/3 cup pumpkin puree (ensure it’s pure pumpkin puree, not pumpkin pie filling; use a well-filled 1/3 cup)
- 1/4 cup neutral oil
- 1 tbsp flax seed meal
- 1/2 tsp vanilla extract
- 2 tbsp molasses
- 1/2 cup sugar (a mix of coconut and raw sugar works wonderfully)
- 1.5 to 2 tsp gingerbread spice blend (or 1/2 tsp ground cinnamon, 1/2 tsp ground ginger, and 1/4 tsp ground cloves. Alternatively, use a pumpkin pie spice blend)
Dry Ingredients:
- 1 cup flour (I recommend a mix of whole wheat and unbleached white; see notes for gluten-free options)
- 1/2 cup almond flour (see notes for nut-free alternatives)
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
Instructions

In a medium-sized bowl, combine all the wet ingredients – pumpkin puree, neutral oil, flax seed meal, vanilla, molasses, and sugar. Whisk thoroughly until the mixture is well combined and the sugar has largely dissolved, creating a smooth base.

In a separate bowl, add 3/4 cup of your chosen flour along with the baking soda, baking powder, and salt. Whisk these dry ingredients together to ensure they are evenly distributed. Alternatively, for ease and a smoother dough, you can sift all the dry ingredients directly into the bowl with the wet ingredients. Gradually add the remaining flour, one tablespoon at a time, until a somewhat sticky, yet manageable dough forms. Refer to the notes section for guidance on dough consistency and crackly tops.

Allow the dough to rest. If your kitchen is cool, 10 to 15 minutes on the counter should suffice. In warmer conditions, or if you prefer an easier-to-handle dough, chill it in the refrigerator for about 15-30 minutes. This resting period allows the flours to hydrate and the dough to become less sticky, improving its workability.

Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Lightly flour or oil your hands to prevent sticking. Scoop out portions of dough, about 1 inch in diameter, and roll them into smooth balls. Place them on the prepared baking sheet, then gently press each ball down to flatten it slightly. This helps achieve that classic ginger snap shape and crackled top.

Bake for 11 to 13 minutes at 350 degrees F (175 degrees C). For a slightly crispier edge, extend baking by 1 to 2 minutes. The cookies will appear soft when freshly baked – this is normal for a fudgy cookie. For enhanced crackling and texture, gently “cookie slam” the baking sheet (lift and drop it lightly on the counter) once or twice immediately after removing it from the oven. Let the cookies cool on the baking sheet for 5 minutes before carefully transferring them to a wire rack or plate to cool completely. Store them covered on the counter for up to a day, or refrigerate in an airtight container for up to 5 days.

To make these cookies gluten-free: Create a balanced gluten-free flour blend by mixing equal amounts (approximately 1/3 cup each) of oat flour, almond flour, and rice flour, then adding 2 tablespoons of cornstarch or another preferred starch. Use 3/4 cup of this homemade blend initially, and add more as needed to achieve the desired dough consistency.
* The hydration level of your dough greatly influences the final cookie appearance. A slightly dryer dough tends to result in fewer crackles, while a wetter dough will yield more pronounced, beautiful crackly tops. Adjust the flour quantity incrementally to your preferred consistency and crackle aesthetic. I often find using a tablespoon less than 1 cup of the specified flour mix works perfectly for a good balance.
Nut-flour alternatives: Feel free to use any nut flour you have on hand in place of almond flour. To make your own nut flour, blend your chosen nuts in a blender or food processor with 1-2 tablespoons of cornstarch or a regular flour until you achieve a fine, but not overly coarse, meal.
For a nut-free version: You can increase the total amount of flour in the recipe. Start by adding an additional 1/4 cup of your primary flour. Please note that I haven’t personally tested this recipe without almond flour, so the cookies may have a slightly lighter, less dense texture compared to the original version.
Molasses substitution: If you don’t have molasses, or prefer an alternative, you can substitute it with 1 tablespoon of maple syrup. In this case, ensure you use all brown sugar for the sugar component to maintain a similar depth of flavor.
