Instructions

  • Heat a large skillet over medium heat. Add oil and wait until it’s hot (it needs to be quite hot for the seeds to pop). Add the mustard seeds and wait for them to pop.
  • Add the Urad dal lentils and cook until they turn golden. Then, carefully add the curry leaves and mix well.
  • Add the minced garlic and quickly mix again, cooking just until fragrant.
  • Add the cauliflower florets to the pan and toss to ensure they are well coated with the spices. Let the cauliflower cook uncovered for 4-5 minutes until it begins to partially brown.
  • Stir in the chopped tomatoes and 1/2 cup of water. Mix well, then cover the pan and cook for 6-8 minutes.
  • Now, add the spinach, chickpeas, sambhar masala, salt, and the remaining 1/2 cup of water.
  • Mix everything well and let it cook for another 6-8 minutes, stirring occasionally, until the cauliflower is cooked to your preferred tenderness and the spinach has wilted.
