1 Bowl Coconut Oatmeal Pecan Chocolate Chip Cookies. Vegan Cowboy Cookies Mix in a Jar. Makes great Jar gift for the Holiday Season. Layer oats, flour, coconut, chocolate sugar and pecans. Ingredients

For the Jar:

  • 1 cup flour, (I use unbleached white flour, See notes for gluten-free option)
  • 3/4 tsp cinnamon or pumpkin pie spice
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup powdered sugar
  • 3/4 cup oats
  • 2/3 cup shredded coconut, (use 1/2 cup for less coconutty flavor)
  • 3/4 cup vegan chocolate chips, (I use a mix of regular and mini size)
  • 1/2 cup light brown sugar
  • 3 tbsp chopped pecans

To Make the Cookies (Wet Ingredients):

  • 1/4 cup + 1 tbsp applesauce
  • 1/3 cup + 1 to 2 tbsp oil
  • 1/2 tsp vanilla extract, optional

Instructions

Preparing the Jar Mix:

  • In a separate bowl, thoroughly mix the flour, cinnamon, baking powder, baking soda, salt, and 1/4 cup of powdered sugar. Whisk well until combined, then set this mixture aside.
  • In a 4-cup (32 oz) mason jar, carefully layer the ingredients in the following order: first, add the oats. Next, add the shredded coconut, tapping the jar gently to settle the layer. Then, add the vegan chocolate chips, followed by the 1/2 cup of light brown sugar, tapping to settle each layer. Carefully pour in the flour mixture you prepared earlier, tapping a couple of times to create space. Finally, add the chopped pecans on top, filling the jar as much as possible.
  • Close the lid tightly. Don’t forget to attach a label with the baking instructions for the recipient, and then store the jar in a cool, dry place.

To Bake the Cookies (Instructions for the Recipient):

  • Empty the entire contents of the jar into a large mixing bowl. Mix well with a spoon or whisk to ensure all the dry ingredients are fully combined. Make a well in the center of the mixture.
  • Add the applesauce, 1/3 cup of oil, and the optional 1/2 tsp vanilla extract into the well. Whisk these wet ingredients together lightly in the center before slowly incorporating them into the dry mixture.
  • Mix the wet into the dry ingredients. Press down and mix for a few seconds. The dough will start to come together, even if it feels a bit crumbly initially. To make these gluten-free: Substitute the regular flour with your preferred gluten-free all-purpose flour blend. Alternatively, you can use a homemade blend of 1/4 cup rice flour, 1/2 cup almond flour, and 1/4 cup starch (like tapioca or potato starch). Ensure all other ingredients, especially oats, are certified gluten-free.

To make these nut-free: Simply omit the chopped pecans from the recipe. You can replace them with an equal amount of seeds (like sunflower or pumpkin seeds) or additional oats for texture, if desired.

Oil-free option: I have not personally tested an oil-free version of these cookies.
