  • 2/3 cup self-rising flour , Or all-purpose flour with an additional 1 tsp baking powder and 1/2 tsp salt
  • 1/2 teaspoon baking powder
  • 1/3-1/2 cup candied papaya, adjust amount based on your desired level of sweetness
  • 1/4 cup raw sugar, the cake itself is designed to be mildly sweet to complement the highly sweet candied fruit
  • 1/2 cup warm water
  • 1 Tablespoon flax meal
  • 1 teaspoon apple cider vinegar
  • 2 Tablespoons virgin coconut oil
  • 2 Tablespoons organic canola oil
  • 1/8 teaspoon ground cinnamon, plus cardamom, nutmeg, and cloves powder for a warming spice blend
  • 1/2 teaspoon ginger powder

  • In a medium-sized mixing bowl, combine 1/2 cup warm water, flax meal, virgin coconut oil, organic canola oil, apple cider vinegar, the warming spices (cinnamon, cardamom, nutmeg, cloves, and ginger powder), and raw sugar.   • In a separate, larger bowl, whisk together all the dry ingredients: ground almonds, ground oats, whole wheat pastry flour, self-rising flour (or all-purpose flour plus additional baking powder and salt if using), and the baking powder.
