  • 2 tbsp tahini
  • 2.5 tbsp or more maple syrup
  • 1/2 cup white sesame seeds, or a combination of different seeds like sesame, coarsely ground pumpkin seeds, etc.
  • 1/2 to 1 tsp turmeric powder
  • 1/4 to 1/2 tsp ground cinnamon
  • 1/4 tsp or more freshly crushed cardamom seeds , or cardamom powder
  • 1 tbsp coconut flour, or vegan protein powder of choice

Instructions

  • In a medium bowl, combine the tahini and maple syrup. Stir until thoroughly mixed and smooth. If your tahini is very thick, you can gently warm it in the microwave for a few seconds to make it easier to mix, or simply allow the mixture to sit at room temperature to soften.
  • In a dry skillet, toast the sesame seeds over medium heat for 6 to 8 minutes, or until they turn a light golden color and become fragrant. Stir frequently to prevent burning. Once toasted, remove the skillet from the heat and immediately stir in the turmeric powder while the sesame seeds are still warm. This helps the turmeric’s flavor bloom and evenly coat the seeds.
  • Add the warm turmeric-sesame seeds to the tahini and maple syrup mixture. Incorporate the cinnamon and freshly crushed cardamom seeds (or cardamom powder).
