  • 5 tablespoons gram/chickpea/garbanzo bean flour, (besan)
  • 1 teaspoon semolina flour, (fine sooji, omit this for gluten free version)
  • 2 teaspoons quinoa flour, (optional, can be substituted with semolina flour)
  • 2 tablespoons vegan butter, (earth balance, soy free)
  • 1 tablespoon coconut oil
  • 3 tablespoons raw sugar, (more for sweeter balls, I like mine mildly sweet)
  • 1 tablespoon agave syrup, (optional)
  • 1/4 teaspoons coarsely ground cardamom seeds, (elaichi)
  • 2 tablespoons of chopped cashews, (small pieces. large pieces will make it difficult to form balls)
  • 2 tablespoons raisins
  • a tablespoon or 2 of water

Instructions

  • Melt the vegan butter in a large pan on low heat.
  • Cook the cashews and raisins in it for 2 minutes until golden and remove them, leaving as much butter as possible in the pan. Alternatively, cook the cashews and raisins in about a teaspoon of butter separately.
  • Add coconut oil to the pan and heat with the remaining butter.
  • Add the besan (chickpea flour), semolina flour (if using, otherwise skip for gluten-free), and quinoa flour to the pan and mix thoroughly.
  • Cook on medium heat, continuously stirring the mixture with a spatula to prevent burning. Roast until it becomes light golden brown in color and gives out a sweet, nutty aroma. This should take approximately 7-10 minutes. The mixture should also start to form small clumps.
  • Ensure the flour is cooked thoroughly; otherwise, the Laddoos will have a raw, unpleasant taste.
  • Remove the pan from the heat and allow the mixture to cool to a warm-hot temperature (about a minute).
  • Meanwhile, blend or grind the raw sugar into a fine powder. You can also use powdered jaggery as an alternative sweetener.
  • Add the ground cardamom seeds and powdered sugar to the warm flour mixture and mix very well until thoroughly combined.
  • Stir in the cooked cashews and raisins. Mix well with a spoon or your hand to ensure they are evenly distributed and help the mixture become more cohesive and clumpy (about 1 minute).
  • To form the balls, take approximately 1.5-2 tablespoons of the warm flour mixture into your palm. Gently press and roll the mixture between your palms to form smooth, round balls. If you’re in a hurry, you can always enjoy the flour mix as a dense sweet dough dessert, similar to halwa!
  • If the mixture doesn’t form balls easily (which can happen as this recipe uses less fat), add half a tablespoon of agave syrup and a few drops of warm water, then mix. Continue adding drops of water and agave syrup until the mixture comes together into a cohesive clump that can be shaped.
  • All shaping should be done while the mixture is still warm. If the mixture cools down completely and becomes difficult to handle, you can gently reheat it in the pan to bring it back to a warm-hot temperature.
