Welcome to a culinary adventure where East meets West in the most delicious way possible: our Spicy Garlicky Korean Mac and Cheese with Gochujang. This isn’t just another mac and cheese recipe; it’s a vibrant, flavorful, and incredibly satisfying fusion dish that promises to tantalize your taste buds. Imagine the ultimate comfort food elevated with the bold, savory, and subtly sweet heat of Gochujang, a cornerstone of Korean cuisine, infused with aromatic garlic. Even better, this recipe is entirely vegan and can be made gluten-free with the right pasta, making it accessible to a wide range of dietary needs without sacrificing an ounce of flavor.

Mac and cheese holds a special place in the hearts of many, a nostalgic dish that evokes warmth and satisfaction. But who says comfort food can’t be exciting and innovative? This Korean-inspired rendition transforms the classic into an unforgettable experience. The creamy, cheesy sauce, made without dairy, achieves its luxurious texture and rich flavor through clever plant-based ingredients. And the star of the show, Gochujang, introduces a depth of flavor that is truly unique – a spicy, fermented chili paste that provides a complex umami kick, unlike any other.

For those who love heat but might not have Gochujang on hand, or simply prefer a different profile, sriracha or another Asian chili sauce can be used as a variation. This flexibility ensures that you can enjoy this sensational dish regardless of your pantry staples. Whether you’re a long-time vegan, exploring gluten-free options, or simply a food enthusiast looking for your next favorite meal, this Garlicky Korean Mac and Cheese is designed to impress and delight.

We believe there can never be too many mac and cheese recipes, especially when they bring something new and exciting to the table. This particular version draws its distinctive character from Gochujang, a traditional Korean fermented chili paste renowned for its unique blend of sweet, savory, and spicy notes. Gochujang is incredibly versatile, often used to create an amazing glaze for ingredients like tofu, adding a vibrant, glossy finish and an explosion of flavor.

Incorporating Gochujang into a creamy, sharp-flavored mac and cheese creates an extraordinary taste sensation. The fermented chili paste lends a depth of flavor that perfectly complements the rich, savory “cheese” sauce, adding a layer of complexity that is both comforting and exhilarating. You can customize the spice level by adding as much Gochujang as your palate desires. If you’re looking for alternatives, an Asian Chile Sauce or classic Sriracha can also deliver a fantastic spicy punch. This mac and cheese is wonderfully versatile in how it can be served. Pair it with roasted vegetables glazed in a mixture of Gochujang, soy sauce, and a touch of sugar for a complementary side. It’s also delicious alongside simple steamed broccoli or as a hearty accompaniment to a lentil loaf featuring a sriracha maple glaze. For an extra layer of indulgence, I love to finish this dish with a generous sprinkle of vegan parmesan and freshly ground black pepper. A golden, toasty breadcrumb topping, made with toasted bread crumbs, minced garlic, and your herbs of choice, also adds an incredible textural contrast and aromatic flourish.

Why Choose Vegan and Gluten-Free?

In today’s diverse culinary landscape, dietary choices are as varied as the flavors we seek. This Spicy Garlicky Korean Mac and Cheese proudly stands as a beacon for both vegan and gluten-free eaters, proving that indulgent comfort food can be both inclusive and incredibly delicious. Opting for a vegan recipe means enjoying a dish free from animal products, making it a compassionate choice that often comes with notable health benefits, such as reduced saturated fat and increased fiber. Our “cheese” sauce relies on cashews and nutritional yeast, creating a rich, creamy, and umami-packed experience that rivals traditional dairy-based sauces.

The gluten-free aspect is equally important, catering to individuals with celiac disease or gluten sensitivities. By simply using certified gluten-free macaroni pasta, everyone can savor this dish without worry. The beauty of modern gluten-free pastas is their ability to mimic the texture and mouthfeel of traditional wheat pasta, ensuring that the experience remains authentic and satisfying. This recipe embraces these dietary considerations, transforming a classic into a universally loved meal without compromise.

Understanding Gochujang: The Heart of Korean Flavor

Gochujang is much more than just a chili paste; it’s a foundational ingredient in Korean cooking, revered for its complex flavor profile. This savory, sweet, and spicy fermented condiment is made from gochugaru (chili powder), glutinous rice, meju (fermented soybean powder), yeotgireum (barley malt powder), and salt. The fermentation process is key, developing its distinctive deep red color and a robust, umami-rich flavor that is impossible to replicate with other ingredients. It adds a wonderful depth to stir-fries, marinades, soups, and, as you’ll discover, mac and cheese.

When incorporating Gochujang into your cooking, remember that a little goes a long way. Its pungent nature can be an acquired taste, similar to other fermented foods. For first-time users, we recommend starting with a smaller amount, perhaps in combination with a milder Asian chili paste, and gradually increasing it to suit your spice preference. If you find the aroma or initial flavor too intense, don’t despair! The sharp, rich flavor of vegan cheddar, if added to the sauce, can beautifully mellow and mask the pungency, harmonizing the flavors into a delectable ensemble.

Sourcing Gochujang: A Quick Guide

You can readily find Gochujang in most Asian grocery stores, specialty food markets, or conveniently online via retailers like Amazon. When purchasing, especially for those with gluten sensitivities, it’s crucial to check the ingredients list carefully. Traditional Gochujang can sometimes contain barley water, barley, or barley malt, which might not always be explicitly listed as a primary allergen. To ensure your dish remains truly gluten-free, look for brands that are specifically certified gluten-free. This extra step guarantees that everyone can enjoy the authentic flavors of this Korean-inspired delight without any concerns.

Ingredients

  • 8 oz macaroni pasta
  • 1 cup chopped broccoli
  • 1 tsp olive oil
  • 1/2 medium onion chopped
  • 4 cloves of garlic minced
  • 1 tbsp gochujang or use sambal oelek, asian chile paste, or sriracha
  • 4 cloves of roasted garlic
  • 1/4 cup cashews
  • 1 tbsp cornstarch , or arrowroot starch
  • 1 3/4 cup water
  • 1/2 tsp paprika
  • 3/4 tsp or more salt
  • 1/4 tsp black pepper
  • 1/4 tsp prepared mustard or ground
  • 2 tsp soy sauce
  • 1 tbsp ketchup or tomato paste
  • 1 to 2 tsp lemon juice or apple cider vinegar
  • 2 tsp extra virgin olive oil
  • 3 tbsp nutritional yeast
  • 1/2 tsp thyme
  • black pepper to taste

Instructions

  1. Begin by preparing your macaroni pasta according to the package instructions. Bring a large saucepan of water to a rolling boil, add the pasta, and cook until al dente. During the last 3 minutes of cooking, add the chopped broccoli florets to the boiling water with the pasta. This ensures both are perfectly cooked.
  2. While the pasta is cooking, heat 1 teaspoon of olive oil in a skillet over medium heat. Add the chopped onion and minced fresh garlic. Sauté, stirring occasionally, until the onions are translucent and the garlic is fragrant and lightly golden. This step builds a foundational layer of aromatic flavor.
  3. In a high-speed blender, combine all the sauce ingredients starting from the roasted garlic: cashews, cornstarch (or arrowroot starch), water, paprika, salt, black pepper, prepared mustard, soy sauce, ketchup (or tomato paste), lemon juice (or apple cider vinegar), extra virgin olive oil, and nutritional yeast. Blend until the mixture is completely smooth and creamy. For optimal smoothness, you may need to blend in 1-minute cycles, pausing to scrape down the sides, for a total of 2-3 minutes.
  4. Once the onions and garlic in the skillet are ready, add the Gochujang (or your chosen Asian chili sauce) to the skillet. Mix it thoroughly with the sautéed aromatics and cook for about one minute, allowing the flavors to meld and deepen.
  5. Pour the smooth, blended cashew mixture into the skillet with the Gochujang and cooked aromatics. Bring the sauce to a gentle boil, stirring continuously to prevent sticking and ensure it thickens evenly. Once simmering, taste the sauce and adjust the salt and heat levels as needed. This is the perfect moment to stir in some vegan cheddar shreds if you desire an extra cheesy kick.
  6. Drain the cooked macaroni and broccoli, then add them directly into the skillet with the creamy Gochujang sauce. Sprinkle in the thyme. Toss everything together thoroughly until the pasta and broccoli are fully coated in the rich, spicy sauce. Cover the skillet and let it cook for just 1 minute to allow the flavors to truly infuse. Then, switch off the heat and let the dish rest for 2-3 minutes; this short resting period helps the sauce thicken slightly and cling beautifully to the pasta.
  7. Serve your Garlicky Korean Mac and Cheese immediately. Garnish generously with freshly ground black pepper and/or a sprinkle of vegan parmesan (optional) or extra vegan cheddar for a delightful finish. Enjoy this unique fusion of comfort and spice!
