This nut loaf, therefore, has become a cherished staple, perfectly suiting my current digestive needs. But you certainly don’t need to be bean-free to appreciate its exceptional qualities!

This is a truly hearty and delicious loaf, offering an amazing texture and rich flavor that appeals to everyone. It’s a wonderful option for those looking for something different, or simply to expand their plant-based repertoire. If you wish for more volume, you can easily incorporate some cooked lentils for a “lentil nut loaf” variation. The versatility of this loaf mixture is boundless: it can be formed into savory burger patties, pan-fried to perfection, baked into a rustic loaf, or even elegantly stuffed into puff pastry for gourmet hand pies. This Vegan Meatloaf is flavorful, decadent, nutty and great for anyone wanting a no bean/lentil loaf. Use nuts of choice in this Nut Roast. Vegan Recipe. Can be Gluten-free Soy-free.

Ingredients

  • 1 1/4 cups nuts, (e.g., raw or roasted cashews, raw walnuts, raw pecans)
  • 1/4 cup sunflower seeds
  • 2 tsp oil, (or use 1/4 cup broth for oil-free)
  • 1 cup chopped onion
  • 4 cloves of garlic, chopped
  • 1 cup chopped mushrooms, (cremini or white or a mix)
  • 1 cup cubed butternut squash, (heaping cup)
  • 2 tsp Italian herbs, (1/2 tsp each thyme, ground sage, rosemary, oregano)
  • 1 tsp smoked paprika
  • 3/4 tsp poultry seasoning, (poultry seasoning is a blend of herbs; use more sage and thyme if preferred)
  • 1/2 tsp black pepper
  • 1/4 tsp each cinnamon and nutmeg
  • 1/2 tsp onion powder
  • 1/2 to 3/4 tsp salt, (adjust based on breadcrumbs or soy sauce sodium content)
  • 2 tbsp soy sauce, (or tamari for gluten-free; for soy-free, use balsamic vinegar and coconut aminos)
  • 2 flax eggs, (mix 2 tbsp flaxseed meal with 5 tbsp water, let sit for 5 minutes)
  • 2/3 cup breadcrumbs, (use gluten-free breadcrumbs or coarsely ground oats for GF)

Glaze:

  • 1/4 cup ketchup
  • 1.5 tbsp soy sauce/tamari, (or use 1/4 tsp salt + 1 tbsp broth for soy-free)
  • 1 tbsp maple syrup
  • 2 tsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1 tsp sriracha, (optional, for a hint of spice)

Instructions

  • Toast the raw cashews and sunflower seeds: in the oven at 325°F (160°C) for about 5 minutes, or on a skillet over medium heat until lightly golden. This step enhances their flavor significantly. If using pre-roasted nuts, you can skip this. Preheat your oven to 350°F (175°C) for baking the loaf.
  • In a food processor, combine the toasted cashews and sunflower seeds with the rest of your chosen nuts. Pulse until you achieve a coarse meal, ensuring some chopped pieces remain visible for texture. Avoid over-processing into a fine paste.
  • Heat a skillet over medium heat. Add oil (or broth for an oil-free option). Sauté the chopped onion and garlic with a pinch of salt for about 2 minutes until fragrant. Then, add the chopped mushrooms and another pinch of salt, cooking for 3-4 minutes until they develop some golden edges and release their moisture.
  • Stir in the cubed butternut squash. Add a splash of water, cover the skillet, and cook until the squash is tender enough to mash easily. Once tender, mash the squash directly in the skillet or transfer it to a bowl. Add the Italian herbs, smoked paprika, poultry seasoning, black pepper, cinnamon, nutmeg, onion powder, and salt. Mix thoroughly to combine the spices.
  • Add the processed nuts and seeds, soy sauce (or tamari/alternatives), prepared flax egg mixture, and breadcrumbs to the bowl with the squash and spice mixture. Mix everything very well until thoroughly combined. Taste the mixture and adjust salt, herbs, or other seasonings as needed. Remember that the flavors will intensify during baking. If the mixture feels too wet, add a tablespoon or so of flour (gluten-free if needed). The ideal consistency should be slightly sticky and cohesive. If it’s too dry or crumbly, add a splash of vegetable broth. For a sweeter profile, consider adding a tablespoon of tomato paste or some finely chopped dried fruit like cranberries or apricots. This versatile mixture can also be shaped into burger patties, pan-fried or baked, or used as a delicious stuffing for puff pastry hand pies.
  • Transfer the mixture to a parchment-lined loaf pan. Gently press and shape it evenly; avoid packing it too densely. Bake for 25 to 30 minutes in the preheated oven.
  • While the loaf is baking, prepare the glaze. In a small bowl, mix together all the glaze ingredients: ketchup, soy sauce/tamari, maple syrup, apple cider vinegar, garlic powder, and optional sriracha. Taste and adjust the balance of sweet, tangy, and savory flavors as desired.
  • After the initial baking, remove the loaf from the oven. Evenly spread the prepared glaze over the top. Return the glazed loaf to the oven and bake for an additional 20 to 30 minutes, or until the glaze is beautifully caramelized and the loaf is firm. Once baked, let the loaf cool in the pan for at least 15 minutes before carefully removing it. For best slicing results, allow it to cool completely. Serve warm with your favorite vegan gravy or a vibrant cranberry sauce. Enjoy this hearty and flavorful main dish!
