  • 2-3 teaspoons Italian herbs , or use 1/2 teaspoon each of thyme, ground sage rosemary and oregano
  • 1 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 -3/4 tsp salt , depending on whether the breadcrumbs and lentils are already salted or not
  • 1 tbsp ketchup
  • 2 tsp soy sauce, or tamari
  • 2 tsp flax seed meal, mixed with 1.5 tbsp water
  • 1/3 – 1/2 cup breadcrumbs

Glaze

  • 1/4 cup ketchup
  • 2 tsp maple syrup
  • 2 tsp balsamic vinegar

For the stuffing

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped mushrooms
  • 2 cups cubed toasted bread, the cubes should be really small
  • 2 tbsp vegan butter melted, or oil
  • 1/2 tsp thyme
  • 1/2 tsp dried basil
  • 1/2 tsp dried sage
  • 1/2 tsp rosemary
  • 1/2 tsp salt + dash of black pepper
  • broth or water as needed

For the Sweet Potatoes

  • 2 cups peeled cubed sweet potato or use butternut squash or other winter squash, not larger than 3/4 inch, easily scaled up to 3 or 4 cups. Double the herbs and salt.
  • 2 tsp oil
  • 1/3 tsp salt
  • 1 tbsp maple syrup
  • 1/4 tsp cinnamon
  • 1/2 tsp rosemary
  • 1/8 tsp black pepper

For the green beans

  • 2 cups green beans chopped to about 2/3 inches
  • 1/2 cup chopped mushrooms
  • 1/4 cup chopped onions
  • 1/3 tsp salt
  • dash of pepper
  • 1/2 tsp thyme
  • 2 tsp Oil as needed

Instructions

  1. Preheat your oven to 400°F (204°C). Generously grease a large baking sheet (at least 12×17 inches) to prevent sticking.
  2. Prepare Sweet Potatoes: In a medium bowl, combine all listed sweet potato ingredients (cubed sweet potatoes, oil, salt, maple syrup, cinnamon, rosemary, black pepper). Toss until the sweet potatoes are evenly coated. Spread them in a single layer in the middle section of the prepared baking sheet.
  3. Prepare Stuffing Base: On one side of the baking sheet, mix the chopped onions, celery, and mushrooms (from the stuffing ingredients) with 1 tbsp of oil or vegan butter, a dash of salt, and black pepper. Spread this mixture out evenly in its designated section.
  4. Prepare Green Bean Base: On the other side of the baking sheet, combine the chopped onions and mushrooms (from the green beans ingredients) with a good dash of salt and 1 tsp of oil. Spread them out, leaving space for the green beans to be added later. Do not add the green beans yet.
  5. Prepare Lentil Loaf: In a bowl (you can reuse the sweet potato bowl), combine all lentil loaf ingredients EXCEPT the breadcrumbs (drained lentils, chopped onions, garlic, walnuts/pecans, Italian herbs, smoked paprika, black pepper, onion powder, salt, ketchup, soy sauce/tamari, flax seed meal mixed with water). Mix thoroughly. Mash at least one-third of the mixture really well to help bind it. Add 1/3 cup of breadcrumbs and mix. If the mixture still feels too wet, add more breadcrumbs, or a tablespoon of flour or oats, adjusting based on the moisture content of your lentils.
  6. Shape the lentil mixture into two small loaves and place them on the baking sheet alongside the other ingredients. Lightly brush the tops of the loaves with oil.
  7. First Bake: Place the sheet pan into the preheated oven and bake for 25 minutes. After 20 minutes, gently stir the mushroom and celery mixture (for the stuffing) to ensure even cooking, then continue baking for the remaining 5 minutes. Remove the sheet pan from the oven.
  8. Adjust & Continue: The sweet potatoes should be tender and lightly caramelized by now. Carefully transfer them off the sheet pan to a serving dish or another tray to keep warm.

    To the green bean base (onions and mushrooms), add the chopped green beans, more thyme, salt, pepper, and 1 tbsp of oil. Toss well to coat and arrange them in a corner of the sheet pan.

    Now, for the stuffing: Add the cubed toasted bread, all the herbs (thyme, basil, sage, rosemary), salt, melted vegan butter, and pepper to the pre-cooked onion-celery-mushroom mixture on the sheet pan. Mix thoroughly and spread it out evenly.

  10. Glaze Loaves & Final Bake: Prepare the lentil loaf glaze by mixing ketchup, maple syrup, and balsamic vinegar. Liberally brush this glaze over the tops of the lentil loaves. Return the sheet pan to the oven and bake for another 15 minutes.

Carefully remove the lentil loaves from the pan using a spatula and transfer them to a serving platter.
