  • 2 tsp active yeast
  • 3/4 cup sweet potato puree, (canned, boiled, or steamed sweet potato, mashed or pureed smoothly)
  • 2 tbsp oil, (optional, see tips section for oil-free variation)
  • 3 cups all-purpose flour, (divided; a mix of all-purpose and whole wheat flour (2:1 ratio) or all whole wheat flour also works. For gluten-free options, see notes section)
  • 3/4 to 1 tsp salt
  • 1 to 2 tbsp dried herbs, (such as thyme, rosemary, chives, or a combination; 2 tbsp fresh herbs can also be used)
  • Oil, (or melted vegan butter for brushing before and after baking)

Instructions 

  • In a large bowl, combine the active yeast with the warmed non-dairy milk. Ensure the milk is just warm to the touch, not hot, to activate the yeast without killing it. Let this mixture sit for 5 minutes until the yeast becomes foamy, indicating it’s active.
