Hello, wonderful readers! I’m absolutely delighted to be a guest here today and share a little piece of my culinary world with you. In my husband Dayv’s family, there’s a heartwarming tradition of giving food-related presents for birthdays and holidays. It’s a custom that always brings joy and, often, a little creative challenge to the kitchen! When Dayv and I first started dating over ten years ago, his gifts would typically include homemade cookies and, believe it or not, creamed corn. While those were certainly gestures of love, our diets – and our tastes – have beautifully evolved since then.

Fast forward to today, Dayv’s special occasion gifts perfectly reflect our current plant-based and gluten-free lifestyle. He now happily receives gourmet items such as delightful Dandies vegan marshmallows, convenient gluten-free cookie mixes, and even nutritious black bean spaghetti. These thoughtful presents not only align with our dietary choices but also consistently inspire new and exciting culinary adventures right in our kitchen.

Just about a month ago, for Dayv’s birthday, my wonderful in-laws and younger sisters-in-law came over for a festive celebration. True to tradition, my mother-in-law arrived bearing a generous food gift. This time, it was an enormous bag of vibrant, ripe kiwis! Dayv has always had a particular fondness for kiwis, so we both expressed our sincere gratitude for such a thoughtful and personal present. However, a playful challenge immediately popped into my mind: “How on earth are we going to enjoy all of these delicious kiwis before they spoil?”

After a little creative brainstorming and considering our cherished weekly tradition of making homemade ice cream, inspiration struck! I realized that the unique sweet-tart flavor profile of kiwi would make a truly fantastic and unexpected addition to our creamy frozen treats. To further enhance the experience, I decided to incorporate the warm, nutty notes of toasted almonds and the delicate sweetness and texture of shredded coconut. The outcome was absolutely divine: a lightly sweet, wonderfully comforting ice cream, brimming with layers of delightful flavor and texture. It truly is the perfect dessert to utilize an abundance of fresh kiwis, especially as we transition from the lingering chill of winter into the bright, refreshing embrace of spring!

  • ¾ cup vegan granulated sugar: This provides the perfect level of sweetness. Feel free to adjust the amount to your personal preference, or experiment with natural sweeteners like maple syrup or agave nectar, keeping in mind that texture may vary slightly.
  • 2 teaspoons pure vanilla extract: This essential ingredient imparts that classic, comforting vanilla flavor, forming a fragrant and balanced base for the other components.
  • 5 ripe kiwis, peeled and diced: It’s important to discard the tough white section in the middle of each kiwi. Using fresh, slightly firm kiwis will offer the best textural contrast and vibrant flavor.
  • ½ cup raw almonds, cut in half: Toasting these almonds enhances their natural nutty aroma and provides a satisfying, buttery crunch that complements the creamy ice cream beautifully.

Method:

  2. Remove the saucepan from the heat. Stir in the pure vanilla extract, ensuring it is thoroughly combined throughout the warm coconut mixture.   3. Allow the mixture to cool completely on the kitchen counter for about 30 minutes until it reaches room temperature. Afterward, transfer the container to the refrigerator and chill for at least 4 hours, or ideally, overnight. A well-chilled base is absolutely essential for achieving the best, creamiest ice cream consistency.
  4. While your ice cream base is chilling, preheat your oven to 300°F (150°C). Spread the halved raw almonds in a single, even layer on a parchment paper-lined baking sheet. Bake for approximately 20 minutes, allowing them to gently toast and develop a richer, deeper flavor.
  5. During the final five minutes of the almonds’ baking time, evenly scatter the shredded coconut onto the same baking sheet alongside the almonds.   7. During the very last five minutes of the churning cycle, carefully add the cooled toasted almonds and shredded coconut directly into the ice cream maker. This ensures they are evenly distributed throughout the mixture, adding a delightful crunch and texture without becoming overly soggy.
  8. Gently transfer the freshly churned ice cream to a freezer-safe container. At this stage, carefully fold in the diced kiwi pieces. The fresh kiwi adds a delightful burst of vibrant color, a refreshing tartness, and a soft texture that beautifully complements the creamy vanilla base.
