This combination provides a rich umami depth and a satisfying texture that makes it an ideal main course for Thanksgiving, Christmas, or any special family dinner. The garlic mashed potatoes add a familiar, creamy topping that crisps up beautifully in the oven, creating an irresistible contrast to the tender filling below.
Effortless Preparation and Smart Meal Prepping Tips
One of the best features of this Lentil Mushroom Shepherd’s Pie is how efficiently it comes together, especially when you master a few clever preparation techniques. Once your garlic mashed potatoes are prepared and your vegetables are chopped and ready, assembling this pie is a breeze. For those looking to save time, consider cooking the lentils and potatoes using the “Pot-in-Pot” (PIP) method in an Instant Pot. This brilliant technique allows you to cook both components simultaneously, drastically cutting down on overall cooking time. Alternatively, you can cook them in separate pots or even prepare them a day or two in advance, making holiday meal prep incredibly stress-free.
I personally enjoy my Shepherd’s Pie on the wetter side, with plenty of rich gravy infusing the lentil and mushroom filling. However, you can easily adjust the amount of gravy to suit your preference, making it as moist or firm as you like. This dish is also incredibly versatile when it comes to vegetables. Feel free to incorporate seasonal produce or other root vegetables like parsnips or rutabaga to add your personal touch and enhance its nutritional profile. For an extra layer of flavor and a delightful textural crunch, I highly recommend adding the garlic breadcrumb and herb topping from my Chickpea Sweet Potato Shepherd’s Pie. This simple addition elevates the pie to a whole new culinary level, adding a fragrant, golden-brown finish. Get ready to impress your guests with this truly remarkable Thanksgiving or holiday centerpiece!

The heart of this pie is its robust, flavorful base. Before baking, you’ll combine the perfectly cooked lentils with sautéed mushrooms and various vegetables, infused with aromatic herbs, spices, and a generous pour of vegan gravy. The image below shows the filling just before the creamy mashed potato layer is spread on top. It’s important to note that the sauce will thicken and dry up significantly during the baking process, concentrating all those wonderful flavors into a cohesive and satisfying filling.

Vegan Lentil Shepherd’s Pie – Mushroom Lentil Shepherdless Pie

Ingredients
- 1 Recipe Garlic Mashed Potatoes
Lentil Mushroom:
- 1 tsp oil
- 1/2 medium onion
- 5 cloves of garlic
- 8 oz mushrooms, cremini, white or a mix with portobello
- 3/4 cup chopped carrots
- 1/2 cup chopped celery
- 1 tsp fresh or 1/2 dried thyme
- 1/2 tsp dried sage
- 1.5 cups cooked brown lentils, 1.25 to 1.5 cups, drained well, see note to cook in Instant pot
- 1/3 cup peas
- 1/3 cup Vegan Gravy, and more for serving, or mix 1 tbsp veggie broth, 1 tsp cornstarch, 1 tsp vegan worchestershire sauce, a good dash of onion and garlic powder
- 1/2 tsp salt
- 1 tbsp bbq sauce or 2 tsp tomato paste, (optional)
- black pepper to taste
- extra virgin olive oil and thyme for topping
Instructions
-
Prepare your mashed potatoes and vegan gravy and set aside. Preheat the oven to 400 degrees F. Pulse the onion, garlic, mushrooms in a food processor, or chop all by hand.
-
Add the onion and mushroom mixture to a skillet with a good pinch of salt and 1 tsp oil over medium heat. Cook for 8 minutes, or until the moisture from the mushrooms begins to evaporate. Then, add the carrots, celery, any other chopped vegetables (up to 1 cup), herbs, and 1/4 tsp salt. Continue to cook for another 5 to 6 minutes.
-
Alternatively, for a baked approach, brush oil on a baking dish. Add the chopped onion and mushroom mixture and bake for 12 to 14 minutes. Afterward, add the carrots, celery, and any other chopped root vegetables, mix them in, and continue to bake for another 8 minutes.
-
Fold in the cooked lentils, peas, BBQ sauce (if using), gravy, and black pepper. Mix thoroughly, either directly in the baking dish or in the skillet before transferring to the baking dish. Taste and adjust the salt and flavor as needed. Add less or more gravy according to your preference for consistency.
-
Carefully layer the mashed potatoes on top of the lentil and mushroom filling. Use a spatula to spread and even out the potato layer, ensuring a smooth and appealing surface.
-
Finish the topping with a drizzle of olive oil and a dash of thyme and pepper, or for an extra special touch, consider using these garlic breadcrumbs for a crispy, aromatic crust.
-
Bake the pie for 20 minutes in the preheated oven. For a beautifully golden-brown top, broil for an additional minute, watching carefully to prevent burning. Allow the pie to cool for a few minutes before serving; it will continue to thicken as it cools. Serve warm with extra gravy or any other desired toppings. Leftovers can be stored in the refrigerator for up to 4 days, making it perfect for meal prepping.
