Vegan Pumpkin Sage Cream Sauce Pasta | A perfect fall dinner

Embracing the Flavors of Autumn: A Culinary Ode to Pumpkin and Herbs

There’s a special magic that arrives with autumn, transforming our plates with warm, earthy flavors. This Vegan Pumpkin Sage Thyme Cream Pasta captures that magic perfectly, blending the natural sweetness of pumpkin with the distinct, savory notes of fresh sage and thyme. Imagine a cozy evening, the scent of these fragrant herbs filling your kitchen as you prepare a wholesome meal that’s both deeply satisfying and incredibly easy to make. This recipe is a testament to the power of simple, high-quality ingredients creating a truly memorable dish.

The Heart of the Dish: Creamy Pumpkin Perfection

Our backyard herb garden this year has been a wonderful source of inspiration, particularly the vibrant sage and thyme. These fresh herbs are not just garnishes; they are integral to infusing the rich pumpkin cream sauce with an unparalleled depth of flavor. The sauce itself is a marvel of plant-based cooking – velvety smooth, subtly sweet from the pumpkin, and beautifully balanced by the savory herbs. It clings perfectly to every strand of pasta, ensuring a burst of flavor in each mouthful. For those looking for versatility, this sauce base can also be made with roasted butternut squash or other winter squash purees, offering a delightful variation while maintaining that comforting fall essence.

The Art of the Topping: Crispy Sage and Golden Breadcrumbs

What truly elevates this pasta from delicious to extraordinary is its unique topping. We take fresh sage leaves and toast them gently in a touch of olive oil until they become wonderfully crispy, releasing their aromatic oils. These are then combined with golden-brown toasted breadcrumbs, creating a textural contrast that is simply irresistible. The subtle crunch and intensified sage flavor add a sophisticated touch that complements the creamy pasta below. For our gluten-free friends, a simple swap of coarsely ground pumpkin seeds or cashews for breadcrumbs works beautifully, offering a nutty texture and keeping the dish entirely compliant with dietary needs. This topping is not just an afterthought; it’s a crucial component that brings the entire dish together, adding a layer of culinary artistry.

Pumpkin Sage Thyme Cream Pasta with Crispy Sage and toasted breadcrumbs. Easy and perfect fall dinner.

Ingredients

For the Pasta

  • 6 to 8 oz Rotini or Fusilli pasta
  • 1 tsp extra virgin oil
  • 8 sage leaves, chopped
  • 1 to 1.5 tsp fresh thyme leaves , or 1/2 tsp dried thyme
  • 2 cloves of garlic, minced
  • 1 to 2 Tbsp tomato paste
  • 3/4 cup pumpkin puree or use sweet potato puree
  • 3/4 to 1 cup non-dairy milk like coconut or almond
  • 1/2 tsp salt
  • black pepper to taste

For the Topping

  • 1 tsp extra virgin olive oil
  • 6 fresh sage leaves, julienned
  • 2 to 3 Tbsp breadcrumbs, or coarsely ground cashews or pumpkin seeds
  • a generous pinch of salt and pepper

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat 1 tsp extra virgin oil over medium-low heat. Add the chopped sage, thyme, and minced garlic. Cook until the garlic and herbs slightly change color, stirring frequently to prevent burning. At this stage, you can optionally add in chopped vegetables like spinach or sliced mushrooms and cook until golden and tender.
  3. Stir in the tomato paste and pumpkin puree, mixing well to combine. Pour in the non-dairy milk, season with salt and black pepper, and bring the mixture to a gentle boil. Taste the sauce and adjust the salt as needed to your preference.
  4. Add the cooked pasta to the skillet with the sauce. Toss everything together thoroughly until the pasta is evenly coated. Cover the skillet and remove it from the heat, allowing it to sit for a few minutes to let the flavors meld.

Make the Topping

  1. In a small skillet, heat 1 tsp extra virgin olive oil over medium heat. Add the julienned sage leaves and cook for about half a minute until they become slightly crisp. Add the breadcrumbs (or coarsely chopped nuts/pumpkin seeds) and continue to cook, stirring occasionally, until they are golden brown and toasted. Season with a generous pinch of salt and pepper, mixing well. Use this crunchy topping to garnish the pasta generously before serving. For an extra cheesy touch, you can also sprinkle some pepita parm or other nut-based Parmesan.

Notes

Gluten-free: To make this recipe gluten-free, ensure you use gluten-free pasta. For the topping, substitute breadcrumbs with coarsely ground nuts or seeds such as cashews or pumpkin seeds.

For an even richer, cheesier sauce, consider adding 1 to 2 tablespoons of nutritional yeast.

Variation: Instead of pumpkin puree, you can use puree of cooked or roasted butternut squash for a slightly different, yet equally delicious, flavor profile.
