- 1/2 recipe tofu thyme ricotta, adjust thyme to taste. Use chickpea tofu or Kite Hill brand almond ricotta for a soy-free option.
- 1 cup sliced mushrooms, tossed in 1 tbsp extra virgin olive oil, salt, black pepper, 1/2 tsp garlic powder, and 2+ tsp Italian herb blend
- Chopped, frozen thawed, or sautéed greens like baby spinach, chard, or kale
- Chao coconut herb cheese slices, or any preferred shredded vegan cheese
- Italian herb blend to taste
- 1 juicy tomato, sliced
- 1/4 cup water
Instructions

Prepare the tofu thyme ricotta by crumbling 7 oz firm tofu into a bowl. Add 1/2 tsp garlic powder, 1 tsp dried thyme, 1/2 tsp Italian herb blend, 2 tsp extra virgin olive oil, 1 tsp apple cider vinegar, and 1/4 tsp salt (or to taste). Mix well and let it sit for 5 minutes, then mix again, taste, and adjust seasonings as needed. Set aside. Separately, slice the mushrooms and toss them with 1 tbsp extra virgin olive oil, salt, black pepper, 1/2 tsp garlic powder, and 2+ tsp Italian herb blend. Set aside.

Prepare any other desired greens or vegetables (chop, thaw, or sauté as needed). Preheat your oven to 400 degrees F (200°C).

To layer the lasagna: First, spread a ladleful of pasta sauce at the bottom of a 9×5 inch loaf pan. Place 2 lasagna noodles over the sauce. Add another ladleful of sauce, spreading it evenly. Then, distribute the marinated mushrooms. Add another layer of sauce, followed by some vegan cheese slices. Place another layer of noodles, then more sauce, followed by the greens/spinach and evenly distributed tofu ricotta. Add a final layer of noodles, sauce, the remaining cheese slices, and the sliced tomato. Sprinkle with salt, pepper, and additional Italian herb blend to taste. Carefully pour 1/4 cup of water along the edges of the pan. Cover the pan lightly with foil or parchment paper and bake for 50 to 60 minutes. Uncover for the last 10-15 minutes if you prefer a golden-brown top. Let the lasagna rest for at least 10-15 minutes before slicing and serving to allow the layers to set beautifully.
