Ingredients

  • 1 tbsp fresh ginger, (chopped)
  • 5 cloves of garlic
  • 2 tsp coriander powder
  • 1/2 tsp ground cumin
  • 1 hot green chili, divided
  • 1 tsp paprika
  • 1 tsp oil
  • 1 cinnamon stick
  • 1 bay leaf
  • 2 tomatoes, chopped (approximately 1.5 cups)
  • 15 oz can of chickpeas, drained, or 1.5 cups cooked chickpeas
  • 1 small potato, (cubed)
  • 1/2 tsp salt
  • 1/2 green bell pepper, (thinly sliced)
  • 1/2 tsp minced ginger
  • 1/4 tsp smoked paprika, (or more, to taste)
  • 1/2 tsp ground coriander
  • 1/2 tsp garam masala
  • 1 tsp lemon juice
  • sliced onion, tomato, cayenne, cilantro, lemon juice for garnish

Instructions

  • In a blender, combine the fresh ginger, garlic cloves, half of the green chili, coriander powder, ground cumin, and paprika. Add 2-3 tablespoons of water and blend until a smooth paste forms. This paste is the aromatic base for your curry.
  • Heat 1 teaspoon of oil in a regular skillet or a Kadai over medium-high heat. Add the whole cinnamon stick and bay leaf, allowing them to sizzle and release their fragrance for a few seconds. Then, carefully add the blended ginger-garlic-spice mixture to the skillet and cook for 3 to 4 minutes, stirring frequently, until the raw aroma dissipates and the oil begins to separate from the paste.
  • While the spice paste cooks, blend the chopped tomatoes into a smooth puree. Add this tomato puree to the skillet with the cooked spice paste. Continue to cook for another 4 minutes, stirring occasionally, until the garlic smell is no longer raw and the tomato paste has deepened in color.
  • Now, add the drained chickpeas, cubed potatoes, 1 cup of water, and 1/2 teaspoon of salt to the skillet. Stir everything well to combine. Cover the skillet, reduce the heat to medium, and let it simmer for 10 minutes, allowing the potatoes to soften and the flavors to meld beautifully.
  • Uncover and add the thinly sliced green bell peppers, minced fresh ginger, smoked paprika, lemon juice, the remaining half of the green chili (chopped), and garam masala (if using). For a variation, you can also stir in 1/2 a teaspoon of amchur (dried mango powder) for tanginess and 1/2 a teaspoon of dried fenugreek leaves (or 1/8 tsp powder) for a distinctive aroma. Mix all the ingredients thoroughly. If the curry appears too dry, add a little more water to achieve your desired consistency.
  • Cover the skillet again and cook for an additional 2 minutes to allow the flavors to infuse and the bell peppers to slightly soften while retaining a bit of their crunch. Taste the curry and adjust the salt and heat level according to your preference. Serve hot, garnished generously with fresh sliced onion, chopped tomato, a sprinkle of smoked paprika or cayenne pepper, a dash of fresh lemon juice, and a handful of fresh cilantro.
