Tearing the tofu instead of cubing it also creates more uneven surfaces that get wonderfully crunchy. When pan-frying, ensure the oil is hot, and when baking, spread the tofu in a single layer on parchment paper. Cooking at a higher temperature (400°F/205°C) also helps.
