French toast batter

1/3cupwarm water, or almond milk or coconut milk
1-2teaspoonsorganic canola or coconut oil (for pan-frying)
Date Caramel:
4-5dates soaked in water for at least 15 minutes (pits removed).
1Tablespoonagave or maple syrup
1Tablespoonwater
Toasted Coconut:
1/4cup or as needed shredded dried coconut
Instructions
To prepare the French toast batter, combine 1.5 Tablespoons of finely ground oats, 1 Tablespoon of finely ground flax seed, 1 Tablespoon of raw sugar or maple syrup, 1/4 teaspoon of vanilla extract, and 1/3 cup (or a bit more) of warm water, almond milk, or coconut milk in a bowl. Mix thoroughly until well combined, then let the batter sit for 5 minutes to allow the oats and flax to thicken. Mix again. Dip each bread slice into the batter, ensuring both sides are fully coated. Pan-fry the dipped slices on medium-low heat in 1-2 teaspoons of organic canola or coconut oil for 3-4 minutes per side, until golden brown and cooked through.
Date Caramel:
To make the date caramel, blend the soaked dates, agave or maple syrup, and about 1 tablespoon of water until a smooth, flowy, and spreadable paste is achieved. Adjust water quantity as needed to reach desired consistency.
Toasted Coconut:
For the toasted coconut, add 1/4 cup (or more, to your preference) of shredded dried coconut to a dry pan over low-medium heat. Roast, stirring occasionally, for 2-3 minutes until the coconut flakes turn lightly golden and fragrant. Be careful not to burn them.
To Assemble Samoa French Toast:
Arrange the freshly cooked French toast on plates. Top each slice with a generous layer of date caramel, applying it as thick as you desire.
