Cranberry Chocolate Chip Oatmeal Cookies

Ingredients
Yields 8 cookies.
- 2 Tablespoons oil (I use 1 Tbsp virgin coconut and 1 organic canola oil, or use 1.5 Tbsp nut butter and 1 Tbsp canola oil)
- 1.5 Tablespoons warm water or non-dairy milk
- 2 teaspoons flaxmeal
- 1 Tablespoon agave syrup or maple syrup
- 3-4 Tablespoons raw sugar or equivalent sweetener (3 for moderate sweetness)
- 2/3 cup Oats (old-fashioned recommended)
- 1/3 cup whole wheat flour (Use oat flour for a gluten-free option)
- 2 Tablespoons all-purpose flour or spelt flour (Skip for gluten-free)
- 1/2 tsp baking powder
- 1/8 teaspoon salt
- 1/8 teaspoon spices of choice (I use cloves and cinnamon powder)
- 1/3-1/2 cup mix-ins (cranberries, almond slivers, raisins, chocolate chips. I added cranberries, chopped almond slivers, and some chocolate chips.)
Instructions

In a medium bowl, combine the flaxmeal, warm water, agave syrup (or maple syrup), oils, and sugar. Whisk thoroughly for about 2 minutes until well integrated and slightly frothy.

In a separate large bowl, meticulously whisk together the flours, salt, and baking powder. Ensure all dry ingredients are evenly distributed. If adding cocoa powder for a double chocolate version, add it here.

Gradually add about 1/4 cup of the flour mix, along with the oats and your chosen mix-ins (cranberries, chocolate chips, almond slivers, or a combination), to the wet mixture. Stir gently until just combined.

Continue to add the remaining flour mix (and additional oats if desired) a little at a time, mixing until a slightly stiff, cohesive dough forms. The dough should be manageable enough to scoop without being overly sticky. Adjust with a tiny bit more flour or liquid if necessary to achieve the right consistency.
