They strike a perfect balance, serving equally well as a delightful snack or a show-stopping dessert. The beauty of this recipe lies in its simplicity and the harmonious blend of textures and tastes. Their convenient bar format makes them ideal for potlucks, parties, or simply enjoying a cozy evening at home.

Crafting Your Sweet Potato Pie Bars: A Simple Process
One of the many appealing aspects of these decadent pie bars is the minimal cleanup involved. You can often use the same bowl for both layers! Start by mixing your crust ingredients in a single bowl, then transfer the mixture to your prepared pan. Once the crust is baking, you can reuse the same bowl to effortlessly whip up the sweet potato layer. This “one-bowl” approach makes the baking process quick and efficient, leaving you more time to savor the delicious results.
The journey to these delightful bars begins with preparing the cinnamon-infused crust mix. Line your chosen baking pan with parchment paper, allowing some overhang on the sides. This thoughtful step will make it incredibly easy to lift the entire creation out of the pan once it’s cooled, ensuring clean slices and a beautiful presentation. After preparing your crust mixture, gently drop it into the lined pan.

Using your hands, firmly press the mixture down until it cohesively sticks together, forming a uniform and well-packed crust. This creates the sturdy base for your creamy sweet potato filling. Once evenly pressed, bake this flavorful crust for approximately 8 minutes, just enough to set it and begin to release those enticing cinnamon aromas.

While the crust is undergoing its initial bake, take the opportunity to prepare the luscious sweet potato mixture. Combine all the ingredients for the sweet potato layer in a bowl, mixing thoroughly until everything is well combined and smooth. Once the crust is lightly baked, carefully remove it from the oven. Gently and evenly spread the prepared sweet potato mixture over the warm crust, creating a beautiful, vibrant top layer.

Return the pan to the oven and continue baking until the sweet potato layer is fully set and slightly firm to the touch. This typically takes around 35-45 minutes. Once baked, remove the bars from the oven and allow them to cool in the pan for about 15 minutes. This initial cooling period helps them firm up before handling. Then, using the parchment paper overhang, gently lift the entire slab of bars from the pan. For the best texture and flavor, transfer them to a wire rack and chill for at least an hour. Longer chilling (a few hours or even overnight) significantly improves the set of the top layer and allows the spices to meld even more deeply with the buttery crust, creating a richer, more complex flavor profile. Once thoroughly chilled, slice into bars and serve. They are fantastic as is, but a dollop of whipped coconut cream and a delicate sprinkle of pumpkin pie spice truly elevate them to a gourmet level.

Ingredients
Snickerdoodle Crust:
- 1/2 cup almond flour
- 1/2 cup flour, I use unbleached white. Use oat flour or gluten-free blend to make gluten-free
- 1/4 tsp salt
- 1/3 tsp cinnamon
- 3.5 tbsp coconut sugar, or use any fine grain sugar of choice
- 2.5 to 3 tbsp oil, organic safflower or other neutral
Sweet potato layer:
- 1 1/4 cup sweet potato puree, or use pure pumpkin puree
- 1/4 cup maple syrup
- 5 tsp starch, cornstarch or arrowroot starch
- 1 tsp pumpkin pie spice, or use 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/4 tsp nutmeg, a pinch of cloves
- 1/2 tsp vanilla extract
- 1/8 tsp salt
- 1 tbsp oil, organic safflower or other neutral
Instructions
-
Preheat your oven to 350 degrees F (175 C). Line a loaf pan (approximately 9×5 inches) with parchment paper, ensuring the paper hangs over the edges. This will create “handles” to easily remove the finished bars. For the crust: In a medium bowl, combine all dry ingredients (almond flour, all-purpose flour, salt, cinnamon, coconut sugar) and mix thoroughly. Add 2 tablespoons of oil and mix with a spoon or your hands until crumbly. Gradually add more oil, a teaspoon at a time, until the mixture starts to come together and forms fat, sticky crumbs.
-
Transfer the crust mixture to the prepared loaf pan. If using a stoneware or glass pan, it may help keep the crust more “shortbread-like” and prevent excessive browning. Press the mixture down firmly and evenly to form a compact crust. Bake for 8 to 10 minutes until lightly golden and set.
-
While the crust is baking, prepare the sweet potato layer. In the same bowl (if you transferred the crust mixture quickly, or a new one), combine the sweet potato puree, maple syrup, starch, pumpkin pie spice, vanilla extract, salt, and 1 tablespoon of oil. Whisk everything together until the mixture is completely smooth and well combined. Pour this vibrant sweet potato filling evenly over the partially baked crust. Bake for an additional 35 to 45 minutes, or until the sweet potato layer is firm to the touch and the edges are lightly golden.
-
Allow the bars to cool in the pan for at least 15 minutes. Then, using the parchment paper overhang, gently lift the entire slab of bars out of the pan and transfer to a wire rack. For the best consistency and flavor, chill the bars in the refrigerator for at least one hour before slicing. A longer chilling time (a few hours or even overnight) will result in a perfectly set sweet potato layer and a more pronounced, “buttery” spiced flavor profile. Serve these delightful bars as they are, or with a dollop of vegan vanilla ice cream or whipped coconut cream, finished with an optional dusting of pumpkin pie spice for extra flair.
Notes
Time-Saving Tip: Measure out a scant 1/4 cup of oil into a measuring cup. Use about 2.5-3 tablespoons for the crust and reserve the remaining oil for the sweet potato layer. This minimizes cleanup. You can also use the same 1/4 cup measure for the maple syrup, which reduces sticky mess.
To make a full Sweet Potato Pie: Double both the crust and the filling ingredients. Increase the starch in the filling to 3 tablespoons for added firmness. Add an additional 10 to 15 minutes to the bake time, adjusting as needed until the pie is set.
