Celebrating Indian Festivals with Delicious Plant-Based Sweets
As the vibrant season of Indian festivals approaches, particularly Dussehra, a sense of joyous anticipation fills the air. Indian festivals are rich tapestries woven with ancient stories, diverse traditions, intricate rituals, and, of course, an abundance of delectable sweets. Each region, family, and community celebrates these occasions with unique customs and culinary delights, making them truly special. You can read more about the significance of Vijayadashami (Dussehra) here.
For many of us, there’s a heartfelt desire to keep these cultural celebrations alive, passing down the nuances of every Pooja (prayer ritual), the captivating stories, the vibrant decorations, and the cherished customs to younger generations. However, as our lifestyles evolve and dietary choices change, maintaining these traditions can sometimes feel challenging. The discussions around food, especially traditional sweets, often become central to festive gatherings. This is precisely why, every year, I dedicate myself to recreating vegan versions of beloved Indian sweets. My goal is to ensure that everyone, regardless of their dietary preferences, can partake in the joy and flavors of the festival. There’s no need to miss out on those delicious, traditional treats; instead, we can embrace new, compassionate ways to enjoy them, fostering discussions about our rich heritage without dietary limitations.

The Magic Behind the Ingredients: Choosing for Perfect Ladoo
The beauty of this easy Coconut Ladoo recipe lies in its minimal ingredient list, making quality choices paramount. Each component plays a vital role in achieving that desirable fudgy texture and authentic flavor. Let’s delve into the core ingredients:
- Unsweetened Shredded Coconut: This is the star of our Coconut Ladoo. Opt for unsweetened dried shredded coconut to have full control over the sweetness level of your ladoos. While fresh coconut can be used, dried shredded coconut is more readily available and provides a consistent texture. Avoid using sweetened varieties, as they can make the ladoos overly sweet and harder to adjust. For best results, grind it slightly to a finer consistency in a blender, but be careful not to over-process and turn it into coconut butter.
- Cardamom Pods: The aromatic backbone of many Indian sweets. Using seeds from whole green cardamom pods, freshly pounded in a mortar and pestle, will yield the most potent and fragrant flavor. Pre-ground cardamom powder loses its potency quickly, so fresh is always best. If you’re not a fan of cardamom, subtle additions like a pinch of saffron strands or a dash of cinnamon powder can offer delightful variations.
- Full-Fat Coconut Milk: This creamy ingredient is essential for achieving the fudgy consistency of these Vegan Coconut Ladoos. The fat content contributes to the richness and binds the mixture together beautifully. Do not substitute with light coconut milk or other plant-based milks, as they lack the necessary fat for the right texture. Shake the can well before opening to ensure a uniform consistency.
- Ground Raw Sugar or Jaggery: For sweetness, raw sugar or jaggery provides a wonderfully rich, caramel-like flavor that complements the coconut perfectly. You can adjust the amount based on your preference; a tablespoon less will result in a less sweet ladoo, while a little more can cater to those with a sweeter tooth. Ensure your sugar is finely ground or powdered for smooth incorporation into the mixture.
- Coconut Oil: This small amount plays a crucial role in enhancing the fudgy texture and preventing stickiness. Coconut oil also contributes to a lovely subtle coconut aroma. Make sure it’s melted for easy mixing.
- Coconut Flour: This ingredient acts as an excellent binder, helping to absorb excess moisture and firm up the ladoo mixture. It also adds a slight coconutty flavor and a good source of fiber. If you don’t have coconut flour, you can use a bit more finely shredded coconut, but be mindful of the texture.
- A Pinch of Salt: Often overlooked in sweet recipes, a tiny pinch of salt is a game-changer. It balances the sweetness and enhances all the other flavors, making the ladoos taste even more vibrant and delicious.
By selecting these ingredients with care, you’re setting the stage for perfectly authentic and mouth-watering Vegan Coconut Ladoos.

Coconut Ladoo
Ingredients
- 2 cups unsweetened shredded coconut dried
- seeds from 4 to 5 cardamom pods
- 1/3 cup full-fat coconut milk
- 2 tsp coconut oil
- 2/3 cup ground raw sugar or jaggery, use a Tbsp less for less sweeter
- a pinch of salt
- 2 Tbsp coconut flour
Instructions
-
Grind or blend 2 cups of the unsweetened dried coconut flakes in a blender or food processor until they form small, powdery flakes. Use short, quick pulses and frequently move the coconut around to prevent it from turning into coconut butter. Next, pound the seeds from 4 to 5 cardamom pods in a mortar and pestle until they are broken into a coarse mixture. Mix these aromatic cardamom seeds thoroughly with the ground coconut.
-
In a small skillet, gently heat the full-fat coconut milk over medium heat. Add the coconut oil, ground raw sugar (or jaggery), and a pinch of salt to the skillet, mixing well to combine. Bring this mixture to a bubbling boil, which should take approximately 4 minutes. Continue to boil the mixture for another 4 minutes, or until it reaches a “half-thread” consistency (this is typically between 220 to 225 degrees F). To check, dip a spoon, cool it, and gently touch a drop between your thumb and forefinger; when pulled apart, it should form a short, half-thread before breaking. Immediately remove the skillet from the heat once this consistency is achieved.
-
Without delay, add 1.5 cups of the prepared shredded coconut and the cardamom mixture into the hot coconut milk base and mix vigorously to combine. Then, incorporate the 2 tablespoons of coconut flour, stirring until it’s fully integrated and the mixture starts to thicken. If the mixture appears too wet at this stage, allow it to cool for just a minute. You can then gradually add more shredded coconut, about 2 tablespoons at a time, until the desired consistency is reached. Be cautious not to add more than 4 tablespoons total, as excessive dry coconut can make the ladoos too crumbly. The mixture will naturally become firmer as it cools. Let the mixture cool for just 2 minutes – do not wait too long, as it hardens quickly. While still warm and pliable, pick up 1 to 2 tablespoons of the mixture, press it firmly, and shape it into smooth, round balls with one hand. For an extra flourish, roll each shaped ball in any remaining shredded coconut for a beautiful finish. Allow the Coconut Ladoos to cool completely before storing them in an airtight container. They can be kept at room temperature for up to 3 days or refrigerated for up to a week.
Notes
* Timely Shaping: Do not wait too long to shape your Ladoos, as the mixture hardens considerably as it cools, making it difficult to form perfect balls.
* Flavor Alternatives: If cardamom is not your preferred spice, feel free to experiment with other delightful flavors. A dash of cinnamon, a few strands of saffron infused in warm milk, or a hint of rose water can create unique and equally delicious Vegan Coconut Ladoos.
* Coconut Flour Substitute: If you do not have coconut flour on hand, you can use a bit more finely ground shredded coconut to help bind the mixture.

Beyond the Kitchen: A Day for Compassion
While we cherish the joy of festive foods, it’s also important to reflect on broader ethical considerations. October 2nd marks Fast Against Slaughter Day, an initiative dedicated to raising awareness about the suffering of farmed animals. This day encourages individuals to join in solidarity, remembering the countless animals who endure hunger and hardship during transportation to slaughter.
The sentiment behind this day is profound: to remember and stand in solidarity with the immense suffering of most farmed animals who are starved for hours, even days, as they are being transported to slaughter. By participating, even in a small way, we acknowledge the plight of over 65 billion animals in the food industry annually and advocate for more compassionate choices. Personally, I aim to fast as much as my health allows on this day, as balancing fasting with my energy levels can be a challenge. You can learn more about who is leading the fast against slaughter and the movement’s origins in this insightful article. This reflection serves as a reminder that our food choices can extend beyond taste and tradition, embracing a wider commitment to compassion.
