How to Make Lentil Potato Soup

Wash the lentils, drain them and set aside.

5. When lentils are tender, stir in the tomatoes, kale and lemon juice. Cook 2–4 minutes until the greens soften and change color slightly. Taste and adjust seasoning. Optionally stir in 1 tablespoon balsamic vinegar and/or 1 tablespoon nutritional yeast for extra depth. Turn off the heat.
